    Hi, a small tip from an Indian fan: please don't burn your spices! :) We add a little bit of hot water to the pan when we add our spices to our onions so that they don't burn under the direct heat of the pan. They should stay a beautiful smoky red colour, and not quite brown. You can add tomatoes/tomato paste right after and cook the spices until the oil (or whatever fat substitute) separates from the water portion. That means the spices are cooked well! :D

    Y’all I believe, this man done turned me out! I cooked this meal tonight and I’m sitting here thanking Yahweh for such a delicious meal😅 because I was praying I didn’t mess up this recipe. Now I’m thinking about how I’m about to break up with meat 😂.

    Oh Gwaad!! I made this for my 80 year old Trinidadian Granny. She has not been wanting to eat much lately. Especially since we became a vegan household. ( her choice for health reasons)I was trying everything. She had two servings of this yummy dish !!!This is an excellent, amazing recipe and so well presented. Thank you so much🌹

    1) You're not cheap! Remember... you just prefer something a bit more affordable / budget friendly. 2) More proof the simmering = magic and 3) THAT ROASTED RED PEPPER THO! I see you! I learned lots from my mom. Undercover enhancers was never one of them... PEEEEEEEEAAAAAACCCCCCCE!

    I was looking for a chicken tikka masala and your feed showed up as a suggestion; I used your recipe.
    Your recipe is by far the best tikka masala I have ever had in my life; better than in a high end Indian restaurant.
    For me cooking is an expression of love that can be seen and be taste. You allowed me to experience love; where my palate was dancing and my being was in mindfulness savoring the moment.

    I love how you explain the process of your cooking and the reasons for doing things in a certain way. I've never heard any other chef explain WHY they do things. I'm going to make this tomorrow after marinading the tofu overnight.

    So glad I found your site and especially LOVE the story telling in depth about what and why u use an ingredient and information about the little stuff. It gives us a deeper understanding about food in general and how u can inter change it with another meal. I have fibromyalgia and damages to parts of my body from a car wreck and a fall. It has caused inflammation that has cause me to be on pain meds since 2008. I I am on a journey to cure my body with a plant base diet. I love all the recipes and especially the ones for inflammation. My mother is like yours, she could make anything on a shoe string budget since she had to cook for 8 people. I thank you for taking your time to help others find good healthy food and elevate their health. America has the most wonderful food but we also have the least healthiest people. You have blessed my day.

    4:02 finally, someone realises that TOFU needs texture! So many chefs just cube and put the TOFU into the dish, not understanding how much adding texture to the tofu add to the dish; let alone the extra flavour of the tofu skin.

    Just solved my what am I bringing for supper with my father in law! This is the best vegan Tikka masala recipe I have seen. I love the use of coconut cream instead of plant based yogurt. The yogurt I buy is much too expensive to use in large quantities. And you are not cheap, you are frugal...a great quality to have! Thank you 😁

      It's a common way to marinade paneer tikka in India. He simply swapped out the paneer for tofu and the dairy yogurt (dahi) for coconut milk.

    You were pretty authentic with the ingredients and cooking. Indians are good at cooking vegetarian dishes and use sesame seeds, almonds, cashews, yogurt, milk and coconut milk or cream to add flavor to their dishes. Keep calm and carry on cooking!! ❤

    As a Brit, where Tikka Masala is our nation's favourite dish, I'm so happy to see this recipe to the point of salivating watching the video. And the baking on skewers? Inspired! It's as close to having the protein cooked inside a tandoor as you can get. Two spice mixes is brilliant for that layers of flavour needed. I'm intrigued that (a little) maple syrup can be substituted for the methi. Fenugreek to me has such a unique flavour and aroma, that's it the thing that's made my home-made Indian food seem closer to the home cooking I enjoy at friends' houses.
    A year, you say? Well, I'm Johnny-come-lately, so I'm still diving greedily into your back catalogue and loving every bit. Long may you run, brother, with your recipes and these videos, you're making it possible for us all to eat at the one same table as family.

    While there is no authentic Tikka masala, there are many variations and recipes. I find your take quite interesting, caramelized onions add sweetness as well as the coconut cream. Tomatoes for tartness, spices for the heat.
    I have tried Tikka masala using different variations, by replacing coconut cream with
    1. Pumpkin seed puree
    2. Cashew puree ( roast the nuts to bring out the flavor)
    3. Double cream
    I still haven't perfected my recipe yet. Will try with tips from yours.

    I love your command over the science of the flavors in this particular dish. Also, it's kush-meer-ree for the chili powder you were mentioning. Just so you know! 😉 or you can also pronounce similar to "cashmere" when speaking English, that works fine, too.

    Quite a good job pal! Make sure you add some water when you onion spice mix dries and starts sticking with the pan. This will prevent it from burning and bitter taste too. 3:28

    The amount of turmeric used is a win
    I have seen some foreigners saying it's bitter

    I would absolutely love it if you would make stuffed sopapillas and vegan crab rangoon. Not together obviously, that would be a little weird. LOL. Great video. I will definitely try this recipe in the future.
