Or you can skip the boiling all together and just pop the cut potatoes in the oven after tossing them in some actual seasoning and oil for 40 minutes at 425. Flip half way through, works every time.

I worked at a breakfast place for about 2 years. Part-time after absolutely loving breakfast. My entire life I could eat it for every meal every day for years. And I'll never get sick of it's a bit to add to that statemen. The breakfast place I worked at. It was only 6 hour shifts. It was just part-time. Just a little breakfast and lunch dinerand the 2 years I worked there. I had the exactsame Neil every day for the entire 2 years. I worked there a Western omelet with baconon the side ry toast and American fries with onions. With how much I love restaurant American fries. I have cooked thousands of pounds of breakfast potatoes in my own home kitchen and have never gotten them to taste as good as they do at the restaurant, You have to Cut them into halfs or quarters And boil them for 5/10 minutes, Same thing with bacon at breakfast places. They have a huge Pan and they dump about 20 pounds of bacon strips into it. And just partially cook all of them that way. They get a bunch of the excess grease out right away and if somebody orders bacon, they can just throw it on and cook it for 2 or 3 minutes. You really need something like a flat top skillet or a cast iron skillet. If you're cooking from home and you're going to use equal parts oil and butter to fry your potatoes. The butter is really important. Most most restaurants have a plastic squeezable bottle filled with melted butter. One with canola oil one with water to create steam when they want to do something like make a quick sunny side up egg

Crystal Smith if you boil the potatoes more than a minute , they'll get too soft , and it won't come out right

Everyone is upset that they only used salt. Here's some advice, ADD WHATEVER SPICES THAT YOU LIKE. you don't have to follow the exact ingredients! Thats what cooking is all about.

They would be pretty plain with just salt. also paprika helps brown. They might also be pretty starchy at the end with only boiling them for a short time. I believe russet potatoes have high starch compared to others.

  • @hiphopjewels

I watched this years ago, and I have been using this recipe ever since then. The only exceptions are omitting the olives, adding a little red onion along with the green onion, and less jalapeno pepper than they used. Also, I prefer to use regular farfalle/bow tie pasta.

  • @tinman3381

If it doesn't have onions it's not home fries. Real home fries are a little more work and a lot better tasting.

I think I'm going to make myself roast potatoes in my frying pan now. No wait, that would be home fries - so they actually made roast potatoes NOT home fries.
