I've taken to boiling potatoes before cooking in the skillet, they have a nice softness inside and crispy outside. Can greenish potatoes still be eaten?
Parboiling is certainly an option and can lead to better browning, but it’s an extra step. As for those green potatoes, I’d advise not eating those, as that can indicate toxins have developed.
Haven't ever made these but been thinking of fried potatoes in the future. I use Yukon Gold as it makes management of diabetes easier. Wonder how it qould turn out using carbon steel.

It's hard to throw away potatoes
To speed up the cook, I put my potatoes in the microwave for 3 1/2 minutes. Just thought I would share.😊

Carbon steel should brown these nicely. Just use a good amount of oil and toss often. Enjoy!
