For your eggplant, after roasting, add a light bread crumb coating and pan fry for a few minutes before putting them in the casserole dish. Frying makes them crispy in the casserole for a different texture. I love it!

My neighbor complained my cat was pooping on his roof! My husband went up on his roof, retrieved some of the poo , and cut it in half in front of the neighbor. Low and behold it contained berries! So no cat scat, it was RACOON POO! Kitty was vindicated!

Al, just a tip to help keep your greenhouse warmer in winter.... You can place black painted 1 gallon water jugs throughout the greenhouse. The water will absorb the warmth from the sun's rays and slowly release it at night.

I like to cut the eggplant into coins, dip them in flour, milk/egg, seasoned panko and bake them in the oven for about 50 minutes.

My favorite morning wake up is watching your videos!!!! I’m sad about Maverick and Goose!! But on a homestead we have to protect our hearts about these don’t we? Just like Crazy White Chicken!!
You say the ducks added some noise to the homestead, have you ever thought of getting a goose or two, ( no males ) as guard geese and as pets for "homestead background music". I know they are messy and loud if you have a flock, but one or two I think would be fun, especially if you get them very young and they imprint on you and you are their humans! I know The Bronx Zoo has a goose that interacts with the staff and greets the visitors, and follows a staff member as she does her chores! Look it up. I forgot his name. Eggplant looks delicious, rollatini is also good ! Happy fall gardening and God Bless. (I think the ducks moved on to the next phase of their life, whatever that is!)
Wow don’t think I would like soaringtractors homestead to rigid. Homestead can have pets just like everyone else. And a goose is a guard animal.
@soaringtractor Many farmers use a goose as a guard animal for their chicken flock. They also lay eggs. Sometimes a golden one. LOL

My grandma would use her old egg layers in soup .. they’re small but if you soak them in buttermilk before cooking they get tender ...

Chicken and dumplings! One of the best ways to repurpose your egg layers.
Chicken and noodles with the old hens. Oh yum! My great uncle would use the eggs we found in the old hens for noodles. So good!
My grandma cooked them in the pressure cooker for bone broth. Yeah once you get the feathers off there isn't much left. Oh! And she always got the feet.

You’re a kind man Al. I appreciate that you treat your animals with respect even if in the end they are harvested.
Instead of of game cams you should install some security cameras with some motion sensor lights to let you know whats coming on your property. Maybe figaro needs another cat partner to help patrol the property.

I trapped a raccoon earlier this summer. I moved it to the state park four miles down the road on the other side of the lake. I'm not above killing wildlife if I have to but I don't want to have less wildlife either. So , I re-home them if I'm able to .

I too heard that with all the things in his mind I'm surprised he remembered Nora's name.
I have 2 kids, and they're lucky if they get called by the correct name 50% of the time!

We lightly flour with rice flour and potato starch then fry the eggplant most often. But we also like it roasted, we put it in our spaghetti sauce, we dehydrate then and use them as thinkener. Its a very versatile fruit. And since it has a buttery taste its works better in some soups as a thickener, rather than squash, for a gluten free option.

Your videos are so entertaining. It's well worth our time to help you out when requested. Time to solve the missing fowl mystery. Maybe some geese as a replacement. We get attached to the animals and miss them also. Their antics bring smiles. I've replaced my regular tv with YT. Funnier than regular tv by far and it's an honest humor. The animal's inborn traits offer an innocence I need more than the world can give me now. For me it's easy to be cynical if I don't watch a higher quality of entertainment. So what I'm saying is some humans have forgotten how we're suppose to behave. Thanks so much for your kindness and gentleness without getting wimpy. We love you. Blessings

Yes , two cats may be better. Not all cats are good predators. Some competition may improve things. I don't have a cat but I do have at least one smart mouse. Last night it sprang both traps ( safely ) and then ate the peanut butter bait ! lol

Eggplant is even better when breaded and fried!
At home we cut them in slices not too thick, sprinkle lightly with flour, then coat with egg garlic parsley salt pepper mixture and breaded. Put them in the oven, at mid time flip them and top with mozzarella and a slice of tomato. Delicious!
That’s how my mom made eggplant.
Fried eggplant is what we like. slice into rounds, then season and flour and fry. Eat immediately as they do not wait.

One of the most modest and laid back homesteading channels there is. Thoroughly enjoy seeing a family from my family’s hometown do this as well.
Long time ago, I found a site online that describes who got animals by how they kill. I think it said foxes are very " neat" killers. Also, they bury them until they cool off. Sorry for loss of Maverick and Goose.
I couldn't tell from the picture, but judging by the tail, fox would be my guess. My eggplant casserole is slightly different but it's my favorite way to use it. I wonder if one could make eggplant boats similar to zucchini boats? God Bless

Those spots in your eggplant are pretty normal - nothing to worry about. They brown pretty quickly. You cut away a lot of very edible eggplant. Also I use the onion tops back in the garden to disguise the scent of my vegetable plants. It does keep some insects away as well as the deer.

It really spoke to my soul, was going through a little rough time. The song reminded me that we can give God our burdens and he will always see us through. Do you think Maverick and Goose wandered off into the woods? In a previous video you showed one of the ducks coming out of the woods. Real shame if a predator got them 😭 it’s amazing to think about how much livestock you have on the homestead and how it can feed your family!

Watching you turn the compost piles reminded of something a friend built. He built a row 8 bins connected together, each had 3 sides with the front open for his compost |___|___|___|___|___| . The back wall made it easy when going in with his front loader to turn the pile. That would be a good project. I'm not getting the notices either from about 15 different channels.
I was thinking the very same thing, cubicle like things providing a tidy appearance and makes it easy to scoop with the kubota.
