I do mine on a lowish heat with just butter maybe some chives and add salt and pepper at the end but with the same dragging across the pan style it’s so good. I don’t add any milk or cream and that way it’s just a nice egg taste

Yes medium heat and cook slowly...........mmmmm, I put a pat of butter on top after they are cooked and let it melt, adds more buttery flavor.
Fully cooked, folded (American style) with NO CREAM, but with chicken stock... is the best. Try it. You won't be sorry.
