One comment I will say about the difference between Shepherd Pie & Cottage Pie. Shepherd's Pie always involves sheep meat; old/young whatever, but ONLY meat from sheep. Hence the name Shepherd's Pie. Cottage Pie is a broader term, these days It usually means beef.But I have seen it done with seafood,chicken,beef,lamb;sometimes a combo of all of these. The minute you add other meat with any cut of sheep it's Cottage Pie.
Curtis’s recipe is pretty much what we call a shepherds pie in Australia though Lamb mince is often used but only seasonally available. Red wine is often added to the recipe. In my opinion lamb mince makes far nicer spagbol and shepherds pie than beef mince as the oils in the lamb meat give a really nice mouth feel and is less strong in flavour and not as tough as beef.

I think he added reduced salt stock but then thought to add a bit more salt coz he knew that the salt content wasn't enough to season the whole dish. But I'm no expert so I may be wrong.
Captain Cinema shepherd's pie uses lamb instead of beef. For something truly different you should try using shredded up corned beef. Dont know what it would be called but its good!
Me too ! I hate waste so I now cut my celery into the portions I will use at a time and wrap it in foil and pop it in the vegetable crisper. Fresh celery for when I want to use it for a recipe... Done
To make more British, add a couple of dashes of Worcester sauce to the mince and sprinkle some grated cheddar cheese on top of potatoes yummy 😀

cheers just made it but had to compromise on tomato puree and celery ie fine choped cherry tomatoes and a spoon of ketchup, left out the celery

to have more control over how salty the dish is.
Because normally stock is loaded with heaps of salt!
I think it gives you more control over how much salt goes into the pie.

U could do that-but best leave them on the side,with some additional Peas,Carrots&Corn+a little Salad and u wont go wrong!
