    Ingredients
4 cups unbleached all-purpose flour, plus more for dusting
2 tablespoons sugar, brown or white
    1 teaspoon salt
    1 tbs instant yeast (2 1/4 - 1 tbs will work)
    1 ½ cups water, lukewarm
4 tablespoons butter, melted, good quality
    Variation:
Whole Wheat - replace 1 cup all-purpose flour with 1 cup unbleached whole wheat flour
    Preparation
    1. Mix 4 tbsp melted butter with the lukewarm water and set aside. NOTE: If the water is too hot during the mixing/kneading process it will kill the yeast.
    2. In a large mixing bowl combine flour, sugar, salt, and yeast to evenly distribute all the ingredients. Gradually add the water and butter mixture, grab and squeeze to bring the dough together. It should be a slightly sticky dough. Turn dough out onto a lightly floured surface. Knead for about 8-10 minutes by pressing with your knuckles to smoothen and folding the dough over itself and pushing out (not down) with the heel of your hands. Rotate the dough and repeat. The dough is properly kneaded when it is smooth and you can stretch it without breaking. Alternatively, you can knead in an electric stand mixer for the same amount of time.
NOTE: Resist the temptation to add too much flour to the dough at this point because you risk dry loaves.
    3. Form a smooth, round ball, Coat lightly with oil and place the dough back into the bowl.
Cover with plastic wrap or kitchen towel and set in a warm place until the dough doubles, about 1-2 hours, depending on room temperature and type of yeast. The dough is adequately risen when an indentation remains after the dough is pressed with two fingers. To hasten the rising process, heat oven 200 degrees F, turn off heat and place dough in warm (but not hot) oven.
    4. Turn out on a lightly floured work surface. Press dough gently into a 12 x12 rectangle about ½ inch thick. Starting with the edge closest to you, roll up to form a log, pinch seams closed.
    5. Place the dough seam side down into the greased long bread pan, 13.5 x 5.5 x 3 inches. Cover with a damp paper towel or kitchen towel. Set pans in a warm place and let dough rise a second time until it’s risen past the top of the loaf pan, about 45 minutes to 1 hour or longer in cold climates.
    6. Bake loaves at 350° for 25 to 30 minutes or until the crust is golden and loaves sound hollow when tapped with your fingers. Remove the bread from the pans to racks; brush with butter for a softer, more flavorful crust. Slice and serve hot with butter.

Oh wow! I can smell that fresh bread. Just butter spread on it for me, thank you. I’ve always used a bread machine, and switched to spelt flour because of my husband’s wheat intolerance. When my machine packed up after ten years, I made some spelt bread by hand, and it was delicious. And although I do use my machine for every day bread, I can now make some by hand as well.

Can i use normal white sugar instead of brown sugar for the homemade bread. I am a trini/ indian born in ny but live in Turkey with me family so some things are hard or very expensive to get.

Ann Chatoor This is an almost new pot! That’s why. 😀 However any of the popular scouring powder brands works well.
