We also use peppers in Bulgaria instead of celery and sometimes i like to add chili flakes with the peppers and there is also a version with a little bit of coconut milk that also makes it really good at the end. Best heart warming dish for the winter for sure. One of my favorite!
In my culinary school during a practical exam a classmate made Greek salad as an accompaniment to his menu the examiner asked him what makes this a Greek salad all he said was "feta Cheese" the examiner walked away chuckling
Vincenzo's recipe is identical to the Greek version, only that it's missing tomato paste and passata. I've never heard of adding cumin to any Greek soup, our lentil (fakés) and bean (fasoláda) soups have no spices other than pepper and paprika. Bell peppers are normally added to bean soup alone.

hi vincenzo. i did this tonite. when i went to the supermarket to get the ingredients i was missing, i noticed they were selling chayote. i got one....and added it to the soup after it had been boiling for a while..... it was quite delicious. now i have a lot of soup left over.....it will not go to waste.

It is almost the same as we cook it in Germania. But we do not add Tomatos....we put in potato squares and sliced or whole Wiener Sausages or really good smokey bacon/porkbelly. And for the finish, fresh chopped parsely ....nom, nom, nom. The italian version looks interesting, i will try this soon. Cheers.
Actually in Italy you will likely find it more with parsley rather than thyme and oregano as Vincenzo did, so the most common recipe is even more similar to the German one. But I mean, this is a very typical tradional farmers dish, made by very poor people, and poverty is something that is quite international :D

Pretty much exactly like the German lentil soup my mother used to make except that she would throw in some Kassler (cured & lightly smoked pork) in there too and some other vegetables like cabbage, potatoes, turnip or leeks.

I Replaced the olive oil with Guanchale , I rendered the fat on the skillet and then added the sofrito . I left the crispy salty guanchale bits In the soup and topped the soup with lots of pecorino, Vincenzo you are a master chef ❤

I never had lentil soup this good and it's such an easy recipe too. The video is very well made with easy to follow instructions, thank you very much! I might not be a chef, but I cooked all my life and I'm 56. I can tell you for sure that the lentils (in a soup) are best when they are cooked until they start breaking. I'm sorry to tell you, Vicenzo, but that looks more like a stew than a soup. That's just my humble opinion. Love your work, man ...
The lentil soup is a staple food for indians we eat it everyday with rice.. no matter what .. trust me .. the old women of our country could win MasterChef with the variety of food they can make with lentil only..
lentil soups are very common in turkey, we make a very similar soup like you did wtih green lentils and we call it green lentil soup. what we call "lentil soup" is made from more orange coloured red lentils which break down once you cook it, then we use blender to make it homogeneous! you should definitely try that too

Lovely ....we in India eat lentils atleast 4-5 times a week along with Roti (Indian wheat tortilla), this was simpler ...do try the one Indian way too which has onion garlic tomato and ginger instead of the veggies u put and masalas (dried herb powders - turmeric, coriander, cumin, pepper and salt) if u can tolerate the sharpness and hotness of those 😬😅

My oregano, marjoram and thyme escaped from my herb garden and I now have huge patches of them growing in my back and front yards. The bees go mad on them when they flower. Now if I could only get basil and rosemary to do likewise (wrong climate, unfortunately).
That's a lovely herb garden surprise! 🌿🐝 Nature's gift to your cooking. Basil and rosemary might be a bit trickier, but you never know, they might surprise you too one day! 🌱😄🍽️
One thing i learned recently is if you put tomatoes in early in the cooking, then the lentils won't soften. This is the case for any acid you add like vinegar as well. Tomatoes could be added towards the end of the lentils cooking.
My favorite thing about learning from Vincenzo is that I learned the value of “keep it simple, use great ingredients.”

We have lentil soup in Scotland as well. It's usually made with a ham base, red lentils and salt to taste. Some people also add a little carrot too.

Do italians blend the lentils in other soup recipes? Because in the middle East we always blend the lentils to have a sort of creamy soup consistently
