No longer do we have to content ourselves with those tasteless cylinder-shaped white blobs that come in a plastic bag. Oh, I know as kids we loved their spongy texture and sweet flavor. And who can deny how perfect they were for making rice crispy squares or S'mores. But for eating on their own, nothing compares to the sweet vanilla scented airiness of homemade marshmallows. You will find that once you start making your own there is no going back.

Thank you for the clean up suggestions & for the conversions as I live in Canada and we use metric. My Grandma used a small amount of oil (unflavoured) to brush the knife with to cut. That helped with slicing and I didn't notice any added flavour. Thanks again!

Hi Stephanie! I just started watching your videos and I enjoy them so much, I subscribed to your site!!! I have a few helpful tips I would like to share with you when making homemade marshmallows. Hope you find them useful!!
First, when I am ready to pour the marshmallow into my pan, I lightly spray my silicone spatula and recessed spatula with non-stick spray. This will help release the marshmallow from the bowl and the spatula.
Second, when I want to make colored and flavored marshmallows for an occasion like Valentine's Day, I use red food coloring and strawberry extract. Instead of using powdered sugar, I use the same food coloring and mix it with granulated sugar. Spray the inside of your pan with non-stick spray, and then dust with the colored sugar. Sprinkle colored sugar on top. Roll cut marshmallow squares in the same sugar after cutting them, or use cookie cutters to make shapes. It's like having homemade "Peeps". Delicious!!! Hope you get to try them.

My mother made these when I was a child. I have a very poor instructions for this recipe, so grateful I found your recipe. Turned out beautifully. As a girl my mother rolled the marshmellows in very finely chopped nuts and they were excellent this way. Also, I put a little bit of peppermint flavoring and red food coloring.

My marshmallows are "drying" as I'm typing! They were so easy to make! You could try using golden syrup for the corn syrup.
At the end I would pour a cup or two of Rice Krispies in the bowl to clean it! Hot water in a bowl or even boiling would be good to set the bowl in to keep the mixture workable until you are finished. I think a cup of boiling water to dip the knife in often would keep it workable also.

we tried a different recipe and just pulled them out of the mixer... didn't realize just how sticky they would be... but good gracious... they are the most amazing things ever!! We are making another batch as well that we are wanting to color red. :) Red and white marshmallows :D

It is a Casa induction burner. I bought it at Williams Sonoma when they had a sale a few years ago. I don't think they carry the same one anymore.

Are you saying they were still sticky after letting them sit for 12 hours? Did you cover the surface of the marshmallow with a layer of powdered sugar?

I've never tried it but you might try agar agar. How well it would work I couldn't say.
So good I'm on my 2nd batch this week...this time I tried the juice and zest of a lemon plus enough water to get 1/2 cup for the gelatin and 1/2 cup of water for the sugar...same amount of vanilla...can't wait for them to set...the bowl tasted like a Lemon Meringue Pie...might make a good white chocolate s'more...

I love this recipe. I tried it for the first time tonight, and it worked perfectly. Also, I used the water and it spread out perfectly. I did kitchen spray my silicone spatula when scraping my mixing bowl, then just water on my fingertips to spread it out. thank you for all of your tutorials. :o) Traci A. Ohren

The setting time will depend, but normally 8-12 hours. I like to use a saucepan with a heavy bottom so the sugar syrup doesn't burn. There isn't much you can do about the smell of gelatine.

I never actually tried using honey, but I have read that you can use it in making marshmallows.
It could be that the marshmallow needed to be mixed longer. Or if the humidity is high, that will also cause them to be sticky.

Love your recipes! I have one question. The recipe calls for "whisk" attachment but it seems that in your demonstration you are using a paddle. I used the whisk when making these and things turned out well. But I'm just wondering which one you think is ideal. Thanks

No, you can use sheet gelatine. I use powdered gelatine just because it's easy to find where I live.
Hi! I love your videos :) I was wondering if it was possible to add liquor to the marshmallows without losing the texture? Like for example using vodka instead of water for the gelatin, I don't really know what the results would be hehehe.

You can also try buttering ur spatula or spraying it with a non stick spray that will help more than the water! 😉👍🏻
They don't stand up quite like the store bought marshmallows. But I do use them for s'mores.
