i think somewhat investing in the land that you already have would be nice, throw some chickens there and what not, and u already have some plants, i guess u can make good section for the plants but the main problem still would be whom is going to water the plants or feed the animals/chickens if ur getting em, there should be alot of ideas but u goota search for em
So like many things in Thailand there are laws but they are usually ignored until you're confronted with an issue. With these properties that are going to get destroyed it's very possible they've always known they were building on an easement agreement and may need to demolish the house. Usually those people built very simple structures with low investment so it's not a huge loss compared to what they've gained by making an extra shop house etc....
Land is so expensive in Thailand because people are holding it idly and don't actually care if they sell so setting some ridiculous price and not selling for 15 years doesn't seem to bother anyone. Even so I constantly see land which is purchased for speculation with little banana trees on them which apparently exempts them from the law (in which case the law in pointless and won't work).

Can't you buy the land in your daughter's name, and you as guardian and it goes to her after her age 20 (as per thai law to own land)
I think she has to be a certain age to have the land in her name ..
