It freezes, and FREEZE DRIES very well. works with canned, dehydrated, and freeze-dried mushrooms. I mostly use blue and pink oyster mushrooms, because it is abundant for me. Look up her creamy mushroom soup, which is amazing also.

Where do I begin ? This recipe was flawless in every way. I recently purchased a small fortune in dried mushrooms from a small US family business. I decided to be adventurous and instead of fresh - reconstitute the dried mushrooms - slice them - and follow the recipe to the letter. The flavors and textures were outstanding. It is hot, humid and approaching the 90's in Upstate NY - but I made a double batch and plan to eat the leftovers cold over the next couple of days as a cold pasta salad. After trying the recipe as written for dinner - I stirred in come baby kale and spinach to wilt and added some thawed baby peas to make it more 'salad like." I hope I can hold off until lunch tomorrow before savoring a huge bowl of 'stroganoff pasta salad.' Many thanks Brittany - you touch countless lives and bring a joy to eating WFPB - and cooking.

Recently I encountered a pasta that turned into a mush after correct cooking time. So if you don't know your pasta brand, I wouldn't risk it by putting it with mushrooms, and just cook it separately. But if you know the brand then I love the idea of cooking it all together. Less washing dishes😍
Made this tonight! Really, REALLY good!!! We LOVE mushrooms so I added extra! Lucky I doubled the recipe, as we both had seconds!! And there's even enough for tomorrow! I really loved that this is all done in one pot. Maybe next time I might try it in the instant pot!!😁❤
Mushroom Stroganoff is good. I've made something similar before. I think without the cream. That looks really good. I Love Mushrooms. I hate that the prices went up though on the fresh here at our store.
