I've been vegan for more than 20 years and I'm always surprised by how creative people are able to get with plant-based meals. All these breakfasts look absolutely amazing. The use of aquafaba to make scrambles is just brilliant. Never tried it before but I sure will. Excellent work, Chef!

That Always Pan is def not the one when it comes to omelettes. The only surface I’ve had success with is a newer teflon non-stick pan, which is fine to use as long as you don’t let it get too hot or scrape it with metal utensils

Now I know what to do w oyster shrooms. I appreciate content + skills on YT, but especially love being in kitchen w/out 'perfection'--the ancestors: Indeed. TY.
With beans, you kind of have to get used to them gradually. Maybe start with 1/4 cup and work your way up. Chickpeas are my very favorite bean! I substitute them in place of diced chicken in lots of recipes. Lentils might also be worth trying. You just have to experiment. 👍🏼

Spray your pan with a butter flavored olive oil. That possibly could help keep your aquafaba from sticking to your pan.
