i am a Callebaut chocolatier, and i'm so excited! i've been eyeing a regular candy coater, but the price?! this is perfect! whatever you do, do NOT coat FD strawberries, though. you'll never be able to put any of those puppies into storage.
I am not a chocolatier, so I hope you will overlook my inexperience. But the beauty of this machine is that it puts coating into the hands of us normal folks. Strawberries are on the list LOL
That cement mixer looks real nice! Now ya just need a funnel like the cement trucks have to pour your concoction out. I envision mixing almonds in chocolate and then pouring it all out onto the freeze drying trays. I wonder if Aieve thought of that? I know they couldn’t call themselves ALeve without causing confusion with the ibuprofen product, but you pronounced it that way. I realize I made a scraggly beard comment on your earliest video(s), but it looks real nice here. Something to consider. Not looking at the camera, but showing your face as you describe what things taste like. You wouldn’t have to worry about making eye contact, and people would be satisfied seeing more of you. I actually can’t stand the people who have to talk to the camera like it’s your best friend. I believe just being in the picture is good enough. We can see the lips flapping, and gums moving, don’t need to look at me for me to know what you look like, and it’s not like you’d be talking to someone else. Just thoughts.
That thing looks really cool. I was just checking out their webpage & saw the Jordan Almonds. I love those things but they are soooo expensive. It never occurred to me that those could be made at home. I have a Kitchenaid that it won't fit because it's not a tilt-head (BOOO) and just bought another 8qt non-Kitchenaid mixer about a month ago, so I can't buy a 3rd one. Darn it! I'll have to live vicariously through your videos I guess, so please keep 'em coming. :)

How would this work if you didnt have a tilt head mixer? Mine is a lift bowl.
Rumor has it they are working on an adapter for the lift type mixer
I could see putting a heat gun under the bowl, blowing upwards, keeping the chocolate, or whatever coating, warm while coating.
I also have a red kitchenaid. Mine is 7 quarts, the largest non -commercial one they made (at least, back when I bought it). I may need that coater...

Keep an eye out on their facebook page. They say they are working on one that will fit the lift type kitchenaid (like my old one)
