Trinidad SALTFISH BULJOL & FRIED BAKE | CODFISH | BACALAO

- Learn how to make Trinidad Saltfish Buljol (Salted Codfish | Bacalao Salad). After most of the salt is removed from the salted fish, it is tossed with a few simple ingredients and then drizzled with the finest olive oil. Bulol is best accompanied with fried bakes, roti or coconut (pot) bakes. It is one of my absolute favorite meals!
Some of my favorite childhood memories in Trinidad are centered around Easter at my Nana's house (mother's father). Breakfast on Easter Sunday was always held at Nana's. My two younger sisters and I piled into the backseat of my mom's Datsun 120Y, all dressed in identical, pink lace-layered dresses, which were usually specially sewn by her seamstress friend for the occasion.
Once there, I headed straight to the kitchen to observe Nana in action and ask one too many questions. In his humble kitchen, he would be busy kneading flour for the bakes or creating his simple culinary masterpiece, the buljol. Once the ingredients were added (I recall he only used garlic and onion) to the flaked fish, he disappeared to some undisclosed location and reappeared minutes later with a small, thin bottle of "sweet oil" (olive oil), his secret, highly prized ingredient. Even in my adult years, I have often wondered why it was never stored in the kitchen. Apparently, I didn't ask enough questions. For the final step of the buljol, he removed the cork from the bottle and slowly and methodically drizzled the "sweet oil" in a thin stream around the bowl. This act, a cook's prayer, was hypnotizing, mesmerizing and appetizing to say the least.

Love Buljol and fried bakes with avocado 🥑 at the side 😋👍
I prefer this method best!!! My mom always prepared the bul(bol)jol in this way without heating the oil and other ingredients! The only difference was that about 1 tbsp. - depending on the amount of salt fish - lemon (lime) juice was also added. How could you put salt in salt fish please educate people properly when making things like that.
Neomi Hinds Because we are rinsing, boiling the salt fish and adding an equal ratio of fresh ingredients, salt may be required. If, according to your preference and taste test, you think it needs salt, add more, if not don’t add. We all have different tolerance levels and dietary requirements when it comes to salt so some common sense is also required. As I mentioned in the video, the saltfish I get here in NYC is not as salty or dry aged as the product found in Trinidad which is the reason my dish requires salt. Have a nice day.
