I’ve been close but unless you’re delusional to think that purchasing knives is a good investment, why the hell not? I buy knives that visually please me & are fun to use. Haven’t had many opportunities to make money on selling them so it’s all about the enjoyment & they market some excellent designs with good manufacturing execution.

The basics he needs for practice are an 8-inch and A 10-inch Chef’s knife, A 3-inch paring knife, and a fish filleting knife, A carving knife. I know that's quite a few knives for one question but do you have any recommendations on any of them? Thanks!

I read that many of the Italian made knives have bad heat treatment. Is that true? I was looking at some of the MKM knives but haven't pulled the trigger yet after hearing that.
Lionsteel's first batch of m390 was pretty bad until they found the right heat treatment. Still it's softer than other companies. Their Sleipner is excellent.
That's a very poor over generalisation. Let's break this down. First, Italian knife makers have an excellent history going back several hundred years thus have plenty of experience & skill. Second, Italian knife makers are known for running steels on the softer side. Usually 1 to maybe 3 less HRC than what might be expected in US or elsewhere. Does this make it 'bad' - as a general statement no - unless you're looking to get the best edge retention possible from the steel. Most users won't even notice. However, it does mean that they (and hence the user) might not be getting the absolute best out of the steel. Third, the bad heat treat rap mostly stems from when M390 came in and a few of the companies ran it way too soft and it was noticeable. This did some damage as M390 was very expensive at the time and users were rightly angered. It was fixed but the memory remained. Don't blanket avoid Italian knives as you will truly be missing out on some truly great blades. By all means do some research but make sure that you go on fact and not outdated misinformation. Have a great day.

Reviews on the MKM lil fixies are that the steel is so soft its almost impossible to sharpen. Thats sad to hear, I've been wanting to get one. Was hoping the Magnacut FreeReign would have come in blue, I would have snagged one.
@@davidgarrett5671 It was during sharpening, the burr would not break off which is an indicator of softer steel. The Italian companies are well known for running M390 soft, but honestly most people won't know the difference.

The kitchen knives with the 4 feet is such a good idea, and other companies should take note. Even the forks and spoons should be made the same way. So many times I want to use a spoon again and I can’t because when I put it down somewhere dirty, I didn’t think I was gonna need it again and then next thing I know I need it again to stir or something like that and then I just have to grab a whole new one. They should do that with everything from simple cereal, spoons to forks and everything else. I guess if they want money they can diversify a little bit.
That S90V Boker is only $150, I'm getting it. Will help fill out my collection of super steels. Still not as good as K390 except stainless. I bought a fillet knife of Magnacut from Warther Knives.

I'm gonna be honest that CJRB cord knife looks like the ideal knife shape in my preference Just need a hybrid knife shape with a katana tanto Or to the degree that you can't tell if it's a tanto or something else
My ideal knife shape is a straight blade with a bit of belly at the front katanna shaped tanto maybe a drop point or a clip point. And the reason why a katanna works well is because of its crecent shape over all (the tang the blade itself and looking from far away is curved)
I would love to see a collection of folder options that offer a "dimple" (or whatever it's called") in the blade for your finger which is common place on Spydercos vice a simple cut out of the sharpen edge which are further often just half the width of one's finger. Call me a coward but I have complete confidence to push hard on a knife with that "dimple" that extends beyond the sharpen edge because of the added safety. I find it disappointing so few folders have it across all price points thus why I'm a huge Spyderco fan. Can you host a show presenting folders with this option up to $400. Thank you.

Maybe a SAK. The Dr is far more likely to unscrew one of the roboty people than stab at them. I could see the Dr prying a panel open with a SAK can opener to remove the wiring of some brilliantly insidious machine the Master invented.
The Counter Critter is a cool design but 7Cr17Mov is wack. Seriously, it's 2023 and 9Cr18Mov is the minimum at that price. Heck, their own Z-Cut kitchen knives run BD1N and cost less!

Yeah, it's good but not that good. OMHO Benchmade prices have always been high but now they're ridiculous. $200 for a smallish knife with plastic handles and S30V (which was premium several years ago). Better value elsewhere.
I love the design of the Hoback but damn, thats a lot for a little fixed blade, especially next to the MKM in micarta for 50 USD less. Also James Brand, continue outdoing yourselves, its nothing if not entertaining.
I am once again begging any knife designers watching to create a pocket fixed blade that actually fits in your pocket. The sheath needs to be skinny and hug the blade. I’d much rather carry a small fixed blade, but the options are limited - and I don’t want to wear it around my neck or on my belt.
180$ for those bug-outs.. smh.. s30v with that size blade is $140 $150 steel. You would think as many knives they make and sell with those same scales they would be able to lower the price. I say it all the time Im trying to own a knife from every major manufacturer but I still don't own a Benchmade. Why? Everytime I go to drop $150+ on a pocket knife I always find a better deal and a more interesting knife for my money. The most basic simplest knife design out for $180 doesnt help either..Usually its the opposite , if you are the top dog in the business you are able to offer the best deals.. @davidgarrett5671 I'm nuts too. Price inflation is just as real for the producers as it is for the consumers. In the States, 8 dollars out of 10 were brought into existence since 2020. That kind of monetary inflation has a massive impact on price inflation. I don't necessarily think this excuses every company's pricing structure but it still impacts all of them.

I’ve not had an issue with my MKM. How many reviews? What instrumentation are they using to measure hardness?

Most knives today… ARE way way overpriced and not worth their price. The industry is super awesome yes… but ripping off people ain’t cool! The hobby and industry has become somewhat… PREDATORY! Anyone who says I’m wrong… is nuts.

Price inflation is just as real for the producers as it is for the consumers.
In the States, 8 dollars out of 10 were brought into existence since 2020. That kind of monetary inflation has a massive impact on price inflation.
I don't necessarily think this excuses every company's pricing structure but it still impacts all of them.
