I was just going to say, what is the average weight of the leaves and non edible stuff you are removing? I mean, over all? What % of strawberry typical contains all that stuff you want to take off? Ok, now I'm over thinking this. I never give this a second thought when I lop the top off. Ain't nobody got time for that.
I use a pairing knife in the same direction as method 2, so kind of a cross between the two methods, with the tip of the pairing knife pointed toward the center and down a little. Oh and I thought you were my favourite Friends character at first glance ;)
Yes, as it is its only accurate numbers if you assume all the removed weight is good stuff being wasted (and if thats the case then why are you cutting anything off). I think the accuracy of the scales probably is more significant than any actual difference too.

I stopped taking the green part off the strawberries when I eat these or make smoothies because there are actually vitamins in the leaves. Of course, that would be gross if you are making a dessert with strawberries.

One method you left out is to use a dedicated strawberry huller. I have a very inexpensive one that looks like fat flat tweezers. There also are other ones out there that look like nose-hair tweezers, including one or more sold by OXO. You can get them on Amazon.

Your paring knife technique is inefficient. It takes me 1-2 seconds to hull a strawberry, with the same waste as your peeler technique. Hold a very sharp paring knife by the blade, with the handle up and the blade facing away from you, as though you are going to write with the tip. Impale a strawberry upward onto the blade at a 45 degree angle with your other hand and make one full turn; with a single twist the hull will pop right out. Keeping the knife motionless is faster, safer, and greater control means better results.

I use a grapefruit spoon - don't even have to turn it - just get under it and it pops out. Faster than any method I've seen. I swear by it!
