How to Pressure Can - Stuffed Pepper Soup... please a solution to a problem

  • We are pressure canning the stuffed pepper soup that we made - the large batch. Well, then we had a problem. But, we have found that a solution. Enjoy and watch all the way through.

    I'm just trying to get my fresh pepper harvest in cool storage used up before they're rotten. If I can't get to the canning right now, should I just dice and freeze the peppers, or make them into the unstuffed soup then freeze that. Would I be able to can that soup after thawing it? Do you think I could pull the 10 gallons of tomato sauce that I made out of my freezer and pressure can that? It's been in the freezer for a year and is still good, but I'm just wondering if it would be ok for another 18 month on a shelf Thanks!!!

      Well, in a word YES to all of them. But, if you are like me and fighting with time constraints, I would dice the peppers and freeze them. Then, when you have time, make and can the stuffed pepper soup and use the tomato sauce in the recipe and can the extra. That's what I would do.
