Looks delicious, I and can't wait to try it including every other combo. Glad I got Cooking with Chaos, and this is the first time I ever bought any kind of cooking recipes. Congratulations to Paul for all your hard work, and hopefully this will only be the first pf many successes.
A tip I got from my mom about the wire rack in the baking tray is to put a couple of layers of paper towel under the wire rack so it soaks up the dripping oil. This way you don't get dripping oil on the "feet" of the wire rack and it won't slide around while in the tray.
My only thought to a 3 day curry is a double washed chicken demi. Day 1 is chicken stock and strain, refill pot and reduce the first stock..Day 2 strain the stock in the morning and add to reducing pot, refill with water again, end of day strain 1 more time, and clean pot after. Day 3 is just reducing first batch and starting your next chicken stock if needed. The demi we make at work takes a week to make. Low and slow in the kettle pot.

I think a good portion of that is just letting things settle and marinate and mingle over night. Like making the broth the day before, then making the currying and let the curry "settle" before reheating and serving. Kind of like day old curry tend to be more flavorful, or day old pizza.

Ate at this food truck in 2018 at comic con. spent like $80 on a single meal, drink, and dessert. It wasn't super memorable but maybe they've gotten better I don't know. I just remember it was insanely expensive for not a large amount of food
i do think an emersion blender is the next gadget i need. this looks so good. Thanksgiving question, does kewpi make any dish better than american mayo? I wanna try a waldorf with it.

i wonder if 1 of the days of the 3 days is just keeping the curry in the fridge overnight. Don't know about other countries, but i know in japan a relatively common thought is that curry tastes better as reheated leftovers the next day

I've never been in the position of using salted butter and then thinking "I wished this had less salt." Salted butter is easir to find and is more vestal.
