Raw No Bake Gluten Free Buckwheat Crackers Recipe

  • The long awaited healthy Buckwheat cracker recipe! No high heat oven used, just a dehydrator. A great snack base. Enjoy!
    To Blender, in order add:
    1 to 1 1/4 cup (depending on how thick or thin you like cracker) chopped carrot, or onion or zucchini (Or a combo of all! Cara's loving on just the onion now, or a combo of onion AND apple!)
    1 teaspoon olive oil
    1/4th cup almond, cashew, walnut or other favorite nut butter
    3 cups soaked then rinsed, then drained buckwheat groats
    Add vegetables to blender first, followed by nut butters then olive oil followed by buckwheat.
    Using tamper, continuously press ingredients down till well blended and smooth. Add a couple more pieces of carrot, onion or zucchini if needed to turn over.
    Using a spatula, scrape blender ingredients out onto a dehydrator sheet and using an offset spatula spread cracker out to desired thickness. Top with your favorite toppings (or add nothing if using crust for sweet toppings like banana cream) and dehydrate till top is firm, about 4 hours. Flip onto a mesh sheet using instructions in video and dehydrate for another 12 hours or until desired crunchiness.

    Cara's Raw Gluten Free Buckwheat Crackers
    Ingredients
    3 cups buckwheat groats
    1/4 cup nut butter
    white veggies (onion, zucchini, carrot) 1/2 cup
    1 T. olive oil
    red onion thinly sliced
    sesame seeds (black, white or both)
    olive oil (for drizzling) (optional)
    grey celtic salt
    italian seasoning or blend you prefer
    Preparation
    Soak buckwheat groats in water - 2 to 8 hours
    Rinse until water runs clear and you see no more bubbles
    add veggies to blender followed by oil, nut butter then groats
    blend well and pour on dehydrator sheet
    spread with offset spatula
    drizzle with oil
    sprinkle with think onion, sesame seeds, salt, seasoning
    dehydrate at 122 degrees for 4-6 hours
    Flip onto screen and peel off sheet and dry another 2 hours
    Score crackers and put back in dehydrator until desired crispiness
    Serving Suggestion:
    sliced avocado with red onion, olive oil drizzle, salt and cayenne

    I've been making sprouted buckwheat crackers for over 10 years. I've even got a video on my channel on how to make these too. Instead of nut butter, I always use flax seeds, which really helps hold the crackers together. They're delicious!

      @@rawcamino7227 The only way you can have sprouted buckwheat is to soak it first, so yes, soaked.

    OH MY GOSH I FORGOT TO ADD ABOUT A TABLESPOON OF OLIVE OIL TO THE BLENDER INGREDIENTS BEFORE MIXING!!! IM NOT SURE HOW IT COMES OUT WITHOUT THE OLIVE OIL BUT IM PRETTY SURE IT ADDS A LOT TO THE FINAL PRODUCT!!!

      How about a flax-egg instead of oil? I'm allergic to oil.

      @@twelveofthem all oil? So you're allergic to nuts then right? So I'm sure the oil along with the nut butter is for the fat content not to mention taste and consistency . You could try adding an avocado if you can eat that and if you can try the avo oil. It may take longer to dehydrate. Flax egg along with say psyllium are binders and not needed here. I hope this helps

    Before making these crackers, I watched the video with my eight year old son. We giggled when she did the taste test, and he said she's faking! Well, we tried the crackers today and he said he loves them and now he believes that you weren't faking after all. So cute!     If you do not have a dehydrator........I am of the understanding that you can use your oven, however, do not set oven abover 115 Fahrenheit or 45 Centigrade.......otherwise you will destroy the nutrients and goodness ....according to what I have learnt in 'Healing 101," written by Markus.....:)

    I’m gonna try this!
    I just made a wrap in my dehydrator with soaked unsalted sunflower seeds from Trader Joe’s, then in the Vita-mix I put chopped fresh pineapple, onion, celery and orange bell pepper.
    I also added some flax meal to bind it all together. The result is amazing. So flavorful. I left the sunflower seeds whole for texture.

    I’ve been making these. It’s so delicious!! Thank you!! I put 1 garlic clove, turmeric, cumin, cardamom inside too. Turmeric gives the cracker a pretty golden color. I forgot to put the butter and it was crunchier. Used cucumbers before. I added thyme on top too! It always comes out different because I use what I have.

    Hey Cara, I have been making buckwheat crackers myself, one step I do is I sprout the buckwheat first just to gain the extra nutrients. I just have to say as you are in your kitchen that is your domain.
    Your do not give off being shy, scared or nervousness. You shine and look like a natural in front of the camera. So don't worry you are like a beast. Great job over coming your fear and still doing it even when you may feel uncomfortable. Overcoming and perceiver so lovely.

    Hey! That looks delish! I haven’t used my dehydrator for months. I am going to try this recipe. Thank you. I was making dehydrator buckwheat granola for about 8 months then I grew bored of it.     this demo is AAA +; i learned making a variation of this in Juliano's kitchen way back and because it was a commercial favourite his dehydrators were as big as a fridge; so i spent two days making buckwheat crackers along the same lines as this demo but just in a HUGE quantity; the blending was done a different way, and that was the backbreaking part; but they way this demo is produced, it's the perfect home kitchen presentation, done by someone who looks like she walks the talk; well done; inspiring; nice kitchen by the way; but you don't have to have a fancy kitchen to make healthy raw food; it starts in the heart, then the soul, and then the body; keep these crackers ready ahead of time so all you got to do is splash on an avo or pesto or whatever immediately; these go down in the most amazing way (as in this video) when you are really hungry and are ready for food eg after a workout. they are great to wash down with a green smoothie or something similar. it is ideal cost wise to buy in bulk and wholesale if you can (if you tell the wholesaler you are a chef or health consultant or in training they might give you the discount); then the cost of the ingredients drops dramatically and you have a never ending supply.

    I've been making these every Sunday for the week. They are so good! I used Everything But THe Bagel seasoning from Trader Joe's to top them off before I put them in the dehydrator and it's really good! I've been adding things to the mix, like red pepper, leftover celery pulp, kale, etc. These are soooo good, Cara!

      I just made them for the second time, but this time I put the Everything But the bagel seasoning from Trader Joe's too cause had no sesame seeds and put the italian seasoning on top with the oil and red onions on top like Cara. Cara, can't believe you posted this 3 years ago. Thanks for this recipe. I just started really really using my dehydrator.Right now the crackers are dehydrating and it smells divine!!!! I can't believe I am just sitting down for a minute and reading comments and Rachel, you used the everything bagel seasoning too! I put some colored bell pepper in the mix too and only a little carrot.

    Finally got around to making these, and while I spread the batter a little too thin, they still turned out delicious. Also, I didn't have almond butter so I subbed Tahini and it still turned out wonderful!!

    I love buckwheat,it has a wonderful nutty taste.your "avocado toast " looks delicious.except for my tastes there is 1 thing missing .. I love sliced tomatoes on my " avo toast" & cracked black pepper. thank you 🙏❤️🌱 for another great recipe & video. Cheers.🍵

    I’ve been watching raw vegan channels for a while to incorporate more raw vegan into my vegetarian diet… I’ve been vegetarian my whole life but I know I eat too much gluten, so getting a dehydrator is a MUST.
    I suppose you can do it in the oven at the lowest heat, but it takes up a lot of energy on your energy bill.
