Buckwheat’s earthy, mineral flavor shines in this easy crisp that is filled with bright, juicy cherries and studded with crispy buckwheat groats toasted in browned butter. Make this when you have a glut of sweet cherries in the summertime, or use frozen pitted cherries and make it whenever you want.
Cherry & Brown Butter Buckwheat Crisp
Ingredients:
6 tablespoons unsalted butter (3 oz / 85g)
1⁄4 cup raw buckwheat groats (1.6 oz / 45g), not kasha
2 1⁄2 pounds (1.1 kg) pitted fresh or frozen sweet cherries (about 7 1⁄2 cups), no need to thaw if frozen
1⁄2 cup granulated sugar (3.5 oz / 100g) 3 tablespoons cornstarch
2 teaspoons finely grated lemon zest 2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
A pinch plus 1⁄2 teaspoon Diamond Crystal kosher salt or 1⁄4 teaspoon Morton kosher salt
1 large egg white (1.2 oz / 35g)
1 cup all-purpose flour (4.8 oz / 135g)
1⁄4 cup buckwheat flour (1.1 oz / 30g)
6 tablespoons packed dark brown sugar (2.9 oz / 83g)
1⁄2 teaspoon ground cinnamon

With this book focusing on easy, relaxed dessert ideas, I would love if Claire some day developed like a "Dessert Champion" book with a bunch of the most challenging dessert mountains for more advanced home bakers. That would be exciting to try, probably with a perfect croissant on the cover, haha
Yes, I think this book is super needed (and I’ve suggested it to friends already!) but for myself, I found the recipes too easy. I think this demographic who watches her on YT probably are the outliers, but we have stand mixers and I was hoping for more of a challenge. That said, I can’t wait to bake my way through WFD!
What challenging desserts do you think would be there? 👀 Macarons? Opera cake? St. Honoré cake? Entremets? Bonbons with tempered chocolate? 🤪
It's not very practical though. I'd rather have more approachable recipes to actually encourage people to bake, not scare them away from the kitchen.
@@TheSwauzz that's why I said it would be for more advanced bakers, not everyone. Or maybe even a series on this channel would be good, if a book like that was not economically reasonable
maybe a youtube vid now and again of something a little more advanced.

Most of the time I forget Claire is baking in her home because everything is so professionally done. But I love how Felix steals the show for a few moments and how it makes her more relatable (plus who could be mad at such a cute cat!) Love the channel, can't wait til my signed copy comes in the mail!
Recipe looks delicious but I personally would NEVER eat any food prepared in a kitchen in which a cat has been walking around on the prep space. I've seen cats sitting on cutting boards and "cat people" seem to think it's all good (yuck!).

I feel kinda bad about this but there’s nothing I find more fun then when cat parents tell their cat to do something and they’re ignored until the cat goes like “I will do what you say but not because you said so but because I want to”😂 also the dessert looked delicious long live Claire’s dessert reign ❤

I make blueberries squares like I would do date squares, I make a blueberry sauce with a bit of water, sugar and cornstarch. Your recipe looks very good. When I dont want my cats in the kitchen, I put them in another room if I dont want to be bothered, but yes, mine go on the countertops too. Felix is a beautiful cat, I enjoyed seing him in the video.

I made this recipe the day What’s for Dessert came out: So Good! Had to make some substitutions because I couldn’t find buckwheat groats on short notice, but a brown butter, oat, and pecan crumble hit some of the same notes.
Can you share the proportions for your topping? I'm sure I won't find groats either 😂
Sure! I subbed about a 1/2 cup of chopped pecans for the whole groats, and then replaced the buckwheat flour with 1/4 cup of oats and maybe 2 tbsp extra all purpose flour till the topping was nicely crumbly. It’s pretty forgiving!
