  • Banoffee Pudding with Claire Saffitz | Dessert Person
    “Pudding,” in the UK, as I understand, is a generic term that can refer to any number of desserts. In a bit of wordplay, this recipe translates the British pudding banoffee pie, a tart filled with sliced bananas, dulce de leche, and whipped cream, into an American custard-style pudding. Banana and dulce de leche are cooked into a silky, smooth custard and then layered with whipped sour cream, digestive biscuits (though you could use graham crackers), and more dulce de leche. To give the dessert a shareable
    quality, I assemble it large-format. Any glass serving dish or bowl with a 2-quart capacity works, but assembling it in individual glasses is an option, too.

    INGREDIENTS
    PUDDING
    6 tablespoons unsalted butter (3 oz / 85g), divided
    1 large overripe banana (8.8 oz / 250g), peeled and cut into 1-inch pieces
    2 1/4 cups whole milk (19 oz / 540g)
    2/3 cup dulce de leche (7.4 oz / 210g)
    1 1/2 teaspoons kosher salt or 3/4 teaspoon table salt
    1/4 cup cornstarch (1.1 oz / 32g)
    2 tablespoons sugar
    4 large egg yolks (2.1 oz / 60g), at room temperature
    1 large egg (1.8 oz / 50g), at room temperature
    2 teaspoons vanilla extract
    ASSEMBLY
    1 1/2 cups heavy cream (12.7 oz / 360g), chilled
    1/2 cup sour cream (4.2 oz / 120g), chilled
    6 ounces (170g) digestive biscuits (about 12 cookies) or graham crackers (about 11 sheets)
    4 tablespoons dulce de leche (2.8 oz / 79g), divided

    Argentinian here! If the dulce de leche is very thick you can just microvawe it for like 5-10 seconds, you can drizzle it to your heart's content and after a bit it'll firm right back up
    (There's actually different types of ddl that have different consistencies and flavors, but I'm not sure if you get all the types over there)

    Lived in the south my whole life, never has anyone had the gall to hand me banana pudding warm. Always chilled to perfection. No idea what hunchback mountain people you've met that eat it warm...

      I thought the same but I think she meant room temp. My grandma would put hers in the oven long enough to brown the meringue on top then chill it. But she’d set it out before we ate so it was just under room temp by the time we ate it

      i had to pause and immediately come to the comments when she said that! i was so confused! glad to know i'm not the only one. banana pudding is a dessert that never touches the oven and lives in the fridge. i've never heard of someone doing it differently!

    I made a half recipe of this and I’m having to actively resist making it again right now. It’s absolutely one of the most delicious things I’ve tasted. I made my own dulce de leche out of sweetened condensed milk bc my store didn’t have ddl. The Biscoff cookies were the perfect complement to the banoffee pudding.     Just made this gem for Christmas dessert this year...yum! I used some homemade gluten free molasses cookies, so everyone could eat it with no issues. So rich, flavorful, not too sweet, smooth and complex, with that lovely contrast of the sweet banana/salt/dulce de leche, and the sour cream/whipped cream. Thanks Claire for the entertaining and super informative video, and for adding a twist on a Christmas menu!!👍😋😃

    I do a pretty good southern banana pudding. I've been doing it for years It's something I serve at every holiday occasion. I get people from work to ask if I will make some for them for special occasions or birthdays too. The biggest game changer for me was using biscoff cookies a few years ago when I needed to make an extra pudding for Thanksgiving but it was a day before Thanksgiving and there were no vanilla wafers left. No generic, I checked a few different stores around town. Nobody had them, but they had tons of biscoff cookies, so in a pinch I used them and I have never gone back. That is my secret, regular recipe pudding just use digestive cookies. I'm eager to try this I just need to get deeper trifle bowl

    I can't wait to try this, the biscoff cookies sound perfect with it too. One thing that threw me off though is saying that southern banana pudding is served warm and baked. I've never heard of anyone doing this. otherwise the heat would brown the raw bananas on the bottom. You're supposed to make it at least a few hours advance of serving though and keep in the fridge while the nilla wafers slowly soften. Also, check out Paula Deen's banana pudding recipe. It has cream cheese, condensed milk, and whipped cream mixed into the pudding. It's so decadant.
    I'll definitely be trying your banoffee trifle soon 😋

    While it is a portmanteau of banana & toffee, very occasionally you will get one where the whipped cream is coffee flavoured (or you did in the late 90s when this was everywhere) - the coffee is actually really good with it because it provides a bit of a foil for the sweetness.

    Is warm banana pudding a thing? I'm from the south and I've always had it chilled.

    I didn't think that I'd be too interested in Banoffee Trifle (haha), but it's an interesting recipe. One thing I'd add is toasted broken-up walnuts. For both taste AND texture. Another addition I'd consider is cardamom powder.

    Lol, holy shit! I just made my own version of this last week. I steeped the ripe bananas in hot milk for 24 hours and strained it in fine strainer. Made a carmel, then blitzed it in the food processor, and used both to create a pastry cream. Made the Biscoff crust like you’d make for Oreos. Piped the cream onto the crust and topped with a mixture of blitzed Valrhona feves, VA peanuts, and salt crumble.

    What would be a good substitute for banana in this dessert? Love the trifle concept. I grew up with trifle at all family get togethers. My mom and her side of family is from Scotland so we always had trifle. I love dolce de Leche but bananas are total no go with me. Don’t like them and I’m allergic to them.

    I made this for Easter and it was really good. I think i might use 2 tbs of cornstarch next time though, 1/4 cup is so much and it gelatinized almost immediately on mixing. As a result it was hard to fully incorporate and the eggs curdled a little. Never had that happen with a custard before!
    I'd also like to know what black magic made your dulce de leche so nice to work with because mine was not in any way pourable or easily spreadable. 😂

      We only really get one kind of banana in America. It's name is yellow Cavendish banana. Maybe that can help you find out which one it is in Brazil

      Custard powder (basically cornstarch) was developed by a man whose wife was allergic to eggs, so she could still have custard. I think that would get closer to this recipe than adding gelatine.

    Where in the south is banana pudding hot? I grew up in South Carolina, have multiple family recipes for banana pudding, its at every gathering I can remember going to from church to reunions to functions, I get it all the time at restaurants when its available, and I've never seen or heard of a hot banana pudding. I've made banana pudding myself for years nearly every holiday and it's always assembled cold, never baked and served cold.
