It would be great for we poorer types if you could do a whole series on healthy, budget friendly, dining. I'm talking about as little cost per meal as possible. They'd also have to be easily prepared, because a side effect of not having a lot of money is not having a lot of time for cooking. I know you could do this!

mikkj1 I really like this idea! I think that location may be a big factor though, things that are healthy and quick to prepare may vary greatly in price across the world! Having to keep that in mind might make this way harder but anyway I’d be curious to see what Emmy could come up with~

True, but you can substitute. We were dirt poor, and sometimes someone might give us some canned spaghetti sauce, but we had no pasta, so we'd make rice instead, or dried bread. The best dishes would be ones that could be adaptable.

I'm someone who always HAS to have lemon in their pasta...I would add garlic, and lemon to this (and possibly chili flakes depending on the mood)

Syd Lane Garlic belongs in every pasta sauce imo.
I learned a similar recipe in Italy. It starts with butter and olive oil to sauté onions and garlic. Then you add the zucchini for 20 min and the last few min add a handful of basil. Take off heat for 5 min and blend with a hand blender or like I do a reg blender.
The texture of cooked zucchini that’s not over cooked is amazing, along with other ingredients. Dress with Parmesan.

AK5786 Yeah I loved it. The Italians where all about using zucchini that’s in season. I swear to god if it’s in season it almost had a fresh corn flavor. So good!

...tastes better with some garlic. Saute the garlic with the butter, add the mushy zucchini sauce and toss a few seconds before adding the pasta.

I agree! We used to sauté the courgettes and garlic in butter then add spaghetti. Some of the courgettes mushes and some stays in chunks.

Pro tip: save a cup of leftover starchy, salty water from the pasta pot, use that when combining the pasta and zucchini. It will bind the sauce to the pasta ever so nicely

I grew up with something similar! We call it broccoli spaghetti! We make the broccoli all mushy stir it into spaghetti of choice with fresh garlic, black pepper and butter!
Now that I’d try. I can’t stand zucchini. I try to like it, but it just doesn’t taste good to me at all; same with eggplant.

Kevin Moppett I don’t do well with tomato products either because I can’t digest it so many recipes that call for marinara usually get replaced with Alfredo and my husband makes one heck of a homemade Alfredo but I want to try this soon! I love zucchini so I’m hopeful this will be good. Let me know how it goes and what kind of bullion you use, if you can. If you haven’t made cheese ravioli or cheese and spinach ravioli and used Alfredo instead of marinara you should give it a go.

The water you added to the pasta in the skillet, if you save some of the cooking water of the pasta for that it will make the pasta become glistening!

That's to add some starch for regular sauce. This "sauce" is nothing but starch at this point.

sebeckley Zucchini, unlike winter squashes, have practically no starch/carbs.
My favorite zucchini recipe is “mock” crab cakes. Take 2 zucchini, an run one thru the box grater. Dice the other about 1/2”. Put these in a colander with salt to drain for 20 or 30 mins. Rinse & squeeze out as much juice as you can. Use this to replace the crab in your favorite crab cake recipe. My hippie friends & family love these. They appreciate being able to eat the “same” thing as everybody else.

speaking of zucchini, we had a lot in the garden this summer, so i had to come up with lots of recipes lmao... i made zucchini filled with ground beef sauce, breaded zucchini slices, zucchini in pancake batter, oven-fried zucchini in olive oil, salt and pepper... and of course i added it in fried rice, fried noodles, sauces etc pp lmao
oh and i made a zucchini soup with ginger and cooked potatoes i had leftover from the previous evening

M Soda it’s actually water. You can’t cook pasta in boiling gold.
@@SeeMeEat when pasta boils it leaves behind mostly starches and some proteins in the water. Of course most people add salt to pasta water, too. It thickens sauces a bit, helps to add some texture to the sauce.

As an American of Sicilian heritage, I grew up on this type of food. This is “peasant food” aka the best, most delicious food ever. Yeah, I have a totally black thumb! Except for one time when I was 12, my mother bought me a perennial plant that was supposed to live for maybe a few weeks or so? I cared for that plant like it was my child, and he ended up living for 2 and a half years! I think I used up ALL of my plant-keeping powers during that period, so now everything I plant dies.

"Added protein!" 🤣🐜 ants are quite delicious, along with crickets & many other insects that you wouldn't expect to be so appetizing. Also, really is a great source of protein. You can even purchase cricket flour!! Nom nom nom!!
Haha, I thought I was weird for liking overcooked zucchini, but I guess not! Zucchini in general is rather nostalgic to me as my mother used to make all kinds of things with it. My favourite recipe is probably our Swedish style cheese-cake that instead of containing cheese, contains zucchini. It sounds odd, but it ends up being much more juicy and delicious than the traditional Swedish cheesecake.

I made this a few weeks ago and still have some sauce in my freezer!! I had to kind of figure it out on my own because I couldn't find any good video tutorials. I added sauteed onions to mine and a little more seasoning, and at first I thought there was no way this would taste good. But I was wrong! It certainly is sexy, filthy and filling! Maybe next time I'll sautee the zucchini as well for even more flavor🤔

I just tried this today! The 4 hours were long but OMG they were so worth it! I can't have dairy so I didn't do any cheese. It is so delicious! Exactly as Emmy described, it feels like there's butter in it but there isn't! I opened it an hour before it was done and it felt like it was gonna dry up in the pot so I added a little more water then when it was done, I mixed it with a wooden spoon and smushed it up more to make it look more mushy like Emmy's. So delicious!

First let just say that I really enjoy this channel. I just made this except I added shallots and garlic in the zucchini. I tossed the cooked wheat pasta in a butter and added extra lemon juice, parsley, basil, salt, pepper and chilli pepper flakes. I topped the dishes with parmesan cheese and cooked broccoli. This meal was tasty and guilt free! I also cook my wheat pasta in turmeric to take away the nutty flavor.

I’m almost done making a “quickie” version of this - I got home from work really late, so instead of simmering four hours on low with one cup of water, I’ve had it on a medium boil for two hours, adding cups of water as it evaporates out.
Even with the adaptations, it tastes pretty darn good :)
Since you're on zucchini, you should try zucchini soup - it's basically the mush, with onions, garlic, and some other seasonings and then pureed. And I personally like it with a dollop of sour cream, plain Fage Greek yogurt, or any sour cream sub (like a soy based sour cream like IMO, or a sour and plain plant yogurt).
three ingredients: zucchini, water, bouillon. Plus butter, salt, pepper, garden fresh parsley, freshly grated parmesan reggiano :)

My zucchini plants are producing like crazy this year. I made this dish for dinner yesterday and my wife loved it. I added some finely dices onion, garlic, and chili flakes.

Pro tip: Reserve a little cup of the pasta water for splashing if needed instead of regular water. It’s a little starchier from the pasta which will make your sauce extra creamy when added.
Vegan tip: Nutritional yeast can be placed with a small amount of creamy nut ‘cheese’ for that cheesy / umami added taste if you want it to be vegan. It won’t be the exact same but still a good taste if you’re vegan. Also butter can be replaced with a blot of oil + nutritional yeast OR just Earth Balance.

the cooking time reduces and "mellows" the dish. its not about saving time. literally slow cooked zucchini is the goal here hence 3 ingredients

What kind of butter are you buying? The cheese I can somewhat understand (albeit, that’s assuming you’re picking an expensive cheese you don’t need) but a tablespoon of butter is relatively cheap. Or even margarine.

Cheryl H, don’t tell him. It is not recognizable as zucchini. When my son snuck a taste, he thought it was eggplant. He likes everything, but he did not realize that it was zucchini. He loved it. It is incredibly sweet, even though no sweetening agent is added. Enjoy!
We have a Mexican version of this, just replace the pasta with rice and add tomato or tomato sauce.

Just finished my batch with a few tweaks. I used 8 good sized yellow summer squash, I had a new size head of broccoli with half the stem, a LARGE Vidalia onion, 4 cloves of fresh garlic and fresh oregano, thyme, sage and parsley. Cut all into small dice and cooked with a bit of veg stock, olive oil, black pepper and salt. Just mashed and added 1/3 cup of parm/pec/Asia go blend. I. Am. So. Happy!😂 This is amazing. Yes, mushy zucchini is good. But! Wouldn’t it be easier, & take a LOT less time, to grate the zucchini? Then it would mush quickly.
mush isnt the goal. sweet carmelized slow cooked zucchini is the goal with mushy consistency as a side effect

Slow cooked, sweet, reduced. Not "fast". There are many times in life where faster is absolutely not better.
If you'd want a cheap/easy alternative, I'd go with a crock pot over an instant pot as an instant pot would be entirely *too* fast and the flavors wouldn't even be similar.
A crock pot for 8-12 hours would create flavors more similar to the original dish, would avoid heating your kitchen thereby reducing cooling costs, and crock pots use only pennies worth of electricity.
Just had some pan fried zucchini for dinner! I saw this recipe floating around and I think I might use some of the leftover unfried slices for this as tommorow's meal
I like to grate a zucchini, saute it with garlic until it reduces to a thick, jammy consistency, then mix it with an equal amount shredded cheddar and a little mayonnaise. Then I use that spread to make grilled cheese sandwiches. My husband adores them.

I grew up in Poland and it's very traditional to have a two course meal as dinner, them being served one after the other.
The first is always a soup of some sort (you should look into Rosol soup) and the one that follows usually consists of a type of meat, a potato dish and veggies on the side.
My mum's way of jazzing up cauliflower and making it super tasty for my brother and me to eat(granted not exactly that healthy but it was definitely a treat once in a while) she calls it the 'naughty cauliflower' .
This cauliflower dish would go perfectly alongside goulash (or 'gulasz') or chicken 'kotleti'. She boiled the water for the cauliflower, added milk to the water which in turn makes it more creamy and much sweeter. Once the cauliflower is cooked in the milky water she would make a 'crumb paste' by melting butter onto the pan, adding breadcrumbs and some flower and mixing that on heat to create a paste. She then roasted sunflowers and lastly put the crumb paste and the sunflowers onto the cauliflower.
DELICIOUS!!

Drag ir through sauce to coat cooking it a bit to absorb the sauce
It's actually a shipload of starch...Not good for Keto or diabetics.

I did mine in a rice cooker. Cut up zucchini, splash of water and a few garlic cloves. Stir after 20 mins. Stir again once it pops to warm. Done in about an hour. Caveat: You need a non stick inner pan as there will be some scorching but if you stir more often, you can avoid it. Salt, pepper, sugar and some bouillion powder to taste. Top it with some optional olive oil. So delicious!
