This tasty sweetened condensed milk has a very similar flavor to that of commercial brands, but has a smoother, more balanced sweetness with a clean vanilla aftertaste, and best of all, it is a sugar free alternative. Condensed milk is easy to make, using full fat cream, and confectionery sweetener such as Lakanto Monk fruit based sweetener, cooked slowly to evaporate some of the water. I tried this with unsweetened vanilla almond milk! I only added an extra tablespoon of butter. It came out so good and is only 42 cal and 0 net carbs per two ounces! It came out with the same thickness and is so yummy :) Thank you!

Hi Liudmila! Thank you for your question. First, to make condensed milk properly, it must be done over low heat. The time can vary between 10 to 25 minutes. The difference is on whether you are using gas or conduction heating, and how well you can control your heat. If the low setting is still too hot, the mixture will bubble and evaporate more quickly, but that could also cause burning on the bottom of the pan, which will ruin the taste. So, just use as low a temperature as will maintain a light simmer, for best results. Also, the hot liquid will thicken, once it starts cooling. Cheers!

Reading your comment made me LOL, because before my family began to appreciate that the recipes were as good as sugar-laden or carb-heavy "SAD" recipes, I would make a dessert or entree and just give it to them without letting them know it was keto. After, they would tell me that they liked it, and ask me how I changed the recipe, because it tasted better - I would 'fess up and say it was keto. Although three of four (adult) children are still not keto, they now enjoy the recipes that I make and post, and actually choose to make them when they are hankering for a particular recipe. I am so happy I made this. I never thought I could have Vietnamese style coffee on keto but now I can. I was out of vanilla so I used a little maple flavoring and it is delicious. I also used a powdered stevia blend I get from Aldi.

Thank you-I’m going to try making this tonight. My husband is from Costa Rica and made me fond of a Spanish brand sweetened condensed milk called La Lechera (“the milkmaid”) that he stocks in the house, but we got into a very bad habit of adding it into our morning coffee. Glad this is sugar-free!
Hi Jmp-vices&virtues! I have noticed that many South/Central American treats use a sweetened condensed milk as an ingredient and flavor. I absolutely understand why - so tasty! When my son was in high school, he did a one-month exchange in Costa Rica to improve his spanish, and loved the treats in Costa Rica.
If you're using it as a creamer, don't boil the Sugar Free Sweetened Condensed Milk as long, and keep it at very low heat, to keep it more liquid. By the way, I have a free e-cookbook, that uses this condensed milk as an ingredient in some dessert and treat recipes. Also, at the 1:06 point in this video, I use the term "confectionery sweetener," which has led to some confusion, as noted in the comments. To clarify, this refers to one of my usual sweeteners, which is Lakanto Gold, a monk fruit/erythritol blend sweetener. I am NOT using, and never do use, any of the sugars, such as white, cane, coconut, agave, etc., because all of these have a high glycemic index. I know it was condensed milk and chocolate chip morsels the semi-sweet ones. And I can't remember what else it may have been, butter ? I don't know.

UPDATE: Thank you for the recipe :--)) I just made this and came out really good just like the condensed milk. It's not as thick as the canned condensed milk but the flavor is just as good. I simmered for half an hour and I made mine extra sweet.
TIP:
I buy 100% Monk fruit sugar and Erythritol separately. This way I can mix them up and make my sugar even sweeter by putting more 100% Monk Fruit. I put in the blender until it becomes an icing sugar. When I let my husband taste REAL sugar vs. the one I made, he thought the NON sugar I made is the REAL sugar because it is sweeter and NO after taste like stevia. You also save $$$ by doing it this way. DON'T buy the one that is already mixed and then they call it Monk Fruit sugar.

In asia, it's very simple (adjust these according to your taste), in a blender, just put one or two fresh avocados (remove the pit), around 1/8 cup of condensed milk, about a cup or more of evaporated milk (there maybe some keto evaporated milk recipe out there). If you think its thick mix more evaporated milk or any milk of your choice. This is my favorite shake!

I'm trying to present both dairy and dairy free versions of some of my basic recipes, because I have some family members who are lactose intolerant, and others who absolutely love dairy. Also, I have had comments from many viewers also who don't have dairy in their diet, and would prefer an alternative. Hello again! When you are using some of the keto sweeteners, the sugar free sweetened condensed milk will solidify in the fridge. For some things, you can use it "as is" but to re-liquify it, heat the amount you need over low heat, stirring constantly, to restore the original texture.

Hi Phucci! In the dairy version of the recipe, I use butter to make it a bit creamier, and to add a nutty, buttery flavor. However, if you don't want to use butter, you may want to look at my dairy free version. If you don't want to use coconut cream in that version, just substitute with full-fat heavy cream or whipping cream. Both of these recipes are really good - they just have slightly different flavor. I see the light! While I appreciate this recipe Intensely (lemon icebox pie of my youth is now back within reach), the eureka moment for me was the "Confectionery" sugar method suggestion of grinding to powder form. I have no idea why that brilliant idea never occurred to me. (could be I lack in the brilliant department). I can't thank you enough for insisting on referring to your ingredient as that. I kept hearing you use the term and I was thinking woman, you can't use confectionery (powdered sugar) in Keto!! You crazy woman you! : ) I kept running through my ingredient roll a dex in my mind while watching and all I could come up with was arrow root and cornstarch. It just never occurred to me that you were grinding/making into powder form/the monk fruit sweetener. Bravo, bravo, bravo you are simply brilliant! This has opened the doors to so many possibilities in my keto kitchen laboratory! Thank YOU! XO (I used to open the can as a child and just spoon eat the contents. Not a care in the world. I do love it so!)

Due to it's very high fat content it can be stored covered for a week safely. If you would use regular sugar it can preserve the milk for a very long time.

Hi Elna. The macro ratio is the % of the calories coming from fat (the blue part of the pie chart) versus both carbs (red) and protein (yellow). For keto diets, it is good to have the highest fat ratio possible. In individual recipes, ratios can vary anywhere from 1:1 to 4+:1. The important thing is to try, with whatever you eat as a meal, to have at least 1:1 but preferably 2:1 or more. Also, it is important for weight loss and to stay in ketosis properly to be mindful of the total calories you take in per day, because you can be in ketosis from food alone, but if your calories are too high, you will not be using your body fat stores, and therefore will not be losing weight. If you're new to keto, first get "keto adapted" (your body getting used to using a keto diet) and then add in other keto lifestyle things like intermittent fasting, for best and maintainable results. Try this recipe on the low setting of a slow cooker. Or use a double boiler to not have to babysit it too much.
Hi Lindsay! Interesting ideas - thank you for sharing! It's not so much about babysitting but the stirring it from time to time that is required, and you'd also have to do that in a slow cooker or double boiler, and you do want the evaporation to occur, but slowly. The double boiler is most useful for things like melting and liquifying chocolate, and other delicate things that you don't want to scorch. I think it would take too long to make the SCM using a double boiler. Have you tried the slow cooker or double boiler?

Uh hi, I don't know if you'll respond to this. When I made it it was great I let it cool of for an hour and then put in into the fridge, but the next morning it turned into butter of sorts with sugar crystals and it wasn't smooth at all. Notice probably because I cooked it for 10 minutes when you recommended 30, but at that moment it was really thick and almost like syrup can you help me figure out where I went wrong? also I used confectioner erythritol.
Hi Andres! From your explanation, there are a couple of things I suggest might have happened, and what you can do about them. First, if it was thick after ten minutes, you had it on much too high of a heat setting. Sugar alcohols like erythritol take a very long time to dissolve, and what you want is a very slow evaporation, not a rapid one, for best creaminess.
Next, although it is perfectly fine to use erythritol without monkfruit, stevia or allulose (organic sweeteners) which enhance sweetness, erythritol is a sugar alcohol which will crystallize more than a mixture will.
To re-liquify, put your condensed milk over a double boiler, or on extremely low heat in a heavy-bottomed pot, and melt it like you would melt chocolate pieces. If it is still very thick, add a little bit of unsalted butter, whisk in when the sweetened condensed milk has melted, and cook for a couple of minutes as you whisk. This should make the sweetened condensed milk nice and creamy again. Start with very little bits of butter at a time, because how much butter is needed will depend on your overall quantity of sweetened condensed milk - a little butter at a time until you get to the right consistency. Stir or whisk frequently as the condensed milk is melting, and it should be good to use again. Re-heat only the amount you are going to use at any time, because it will affect the taste if you heat and cool it many times.
Lastly, if you can get it in your area, allulose is a natural rare "sugar" that works really well in this recipe, but you will have to increase the amount of sweetener by 30%, because it is not as sweet as a1:1 sugar replacement.

i have stevia packets but its not as fine as the confectioner, is that ok to use in this recipe?
Hi C J! I am not sure whether stevia works with this recipe. It has very different properties than erythritol, monk fruit blends, allulose or xylitol, with which I have tried the recipe.
An erythritol stevia blend such as swerve might work, but again I'm sorry - I have no experience using anything with stevia. Stevia gives me a very strong metallic taste even in small quantities, so I never use it.
If you do end up using a stevia product - it can be ground to a fine powder using a bullet or a spice grinder. If you end up trying stevia, do let me know how it worked so I can let other people know whether stevia also works.

I find the ideal way to make this. Is by using an induction cooker the single one. and an extension cord so then you can put it on a coffee table and sit down and relax and watch some TV while stiring and oh dont forget the cup of coffee too.because you could be stirring for up to an hour. Just sharing a tip from someone who's getting on a bit saving the old back and legs lol

why didn't you make it without butter? does butter serve a purpose (besides a better flavor of course), would it have the same consistency without butter??
Hi 5gorgeous! Thank you for your question. And, yes, the reasons I use butter are twofold. As you know, butter is a form of churned and concentrated cream, and by adding unsalted butter, it adds more fat, for a given amount of liquid. Also, it reduces how long you have to cook, because there is less liquid to evaporate and to condense. Secondly, it reduces the water content from the cream for the recipe, which results (in my opinion) in a more velvety consistency when it is freshly made, and when you reheat it to re-liquify it, after it becomes a solid when refrigerated, it remelts into the same velvety liquid.
