    So, I made this, and all I could find where I live, is coconut milk that does have the guar gum added. I looked at a can of regular coconut sweetened condensed milk, and read that IT had the guard gum as well, so I decided to try it. I also used a mixture of powdered Swerve, and so allulose and a little stevia. Cooked it up, and it thickened nicely. Took about 24 min. Added the vanilla, and it came out great ! I’m about to use it to make a keto magic cookie-type thing, and I sure hope it works in that recipe, but, as is,it seems like a great sweetened condensed milk!

    So excited! I finally got around to making fudge today for the first time. I used this recipe to make the condensed milk for the fudge and it was simply devine!! They have been setting all this afternoon and I just finally took them out and had 2 pieces already. The condensed milk really took it to another level. I had Lily’s semi sweetened white chocolate chips and Artisan kettle organic dark chocolate chips on hand. I used 1/2 a cup of each. Put in a big mug, added 1 tbs of mct oil, 1 tbs unrefined coconut oil and 1 tbs of butter and place in microwave to melt at 30 sec interval. When nicely melted, add condensed milk to mixture and mix thoroughly. They are so rich, smooth and decadent!!! Thank you!

      Hi Anisha! This is very much the consistency of sweetened condensed milk, before it cools, but what I would suggest is that when you first make the recipe, make a creamer using a ratio of from one quarter to one half sweetened condensed milk with the rest almond milk. Stir them together, and use that as the creamer. However, if you really like it nice and sweet, then you can use the condensed milk in your coffee directly. As for the iced koffie, I would use the creamer mix instead of the condensed milk directly, because the concentrate will probably crystallize at the lower temperature. Enjoy!

      Yes of course. What I will be mixing is water, almond milk, your dairy free keto condensed milk. I like to add matcha powder for the flavour, however you can add whatever flavour you prefer. The way to prepare however is a bit different to normal ice cream.     I first saw/watched your mint ice cream and moved to this video,all I can say is I LOVE(D) both videos but most of all,I really LOVE the fact that you engage each and everyone of your viewers/comments,and for that you have gained a new subbie in me😉
    I am going to be trying both the Home Made Mint Ice Cream as well as this Condensed Milk recipes,I will certainly revert with feedback on my outcome,hopefully favorable outcomes😉
    I am in Africa- Johannesburg,South Africa 🇿🇦- to be precise,I have to search for some of the ingredients as we might not have and also one thing I’ve noticed is that we used different terminology for pretty much the same thing(s) which can be daunting/confusing at times.
    For instance,Confectionery Sugar,that’s known as Icing Sugar to us😉- talk about that,I see you used Confectionery Sugar,was that normal Icing Sugar or was it home made?? I’ve just noticed or learnt that one can make Confectionery Sugar from Cornstarch and normal granule sugar,would you advice I make my own or should buy normal icing sugar...???

      I use the term "confectionery" to refer to having ground up the sweetener into a fine powder, like icing sugar but, since mine is a keto channel, I am grinding up an alternative sweetener - I use a blend of monkfruit and erythritol that has the same sweetness as sugar, but does not affect blood sugar levels, and is a healthier alternative to any type of sugar or starch.
      I love to correspond with my viewers and subscribers - by the way, I take requests and appreciate suggestions. Have a wonderful weekend, in Johannesburg - my daughter's boyfriend is from Cape Town! Cheers!

      @@KetoMealsandRecipes Thanks for your response, I’m not really vegan(I tried that back in 2013 and ended up in hospital for hemorrhoidectomy) and never attempted again.
      I do however watch my weight and what I eat, I do a whole load of Intermittent Fasting(I’m very active as well,I’m a cyclist,runner,walker,golfer and jump rope so I’m a relatively fit gent)
      I have heard of the sweeteners you’ve mentioned and will certainly look for and make use of them.

      @@KetoMealsandRecipes hi there, so yesterday I played golf with a buddy of mine I hadn’t seen in a while and we were both in shock at our physiques.
      We both lost tremendous amounts of weight,I lost 22kg and he 19kg,and I discovered an interesting thing from him.
      He has been vegan now for 16 months and the results are showing,said he’s never felt this strong before,more energetic,we are both 41yr olds.
      He referred me to this Netflix Documentary THE GAME CHANGERS which I watched yesterday and outright convinced me to stop eating meat and go back and try vegan again,he advised I know my blood type and learn what food to eat and which to avoid which is things I never really looked into in my previous attempt at Vegan,the dude’s knowledge combined with what I saw in that documentary really convinced me to get off meat completely,it was quiet an interesting and eye opening document.
      I am now seriously going to binge on your channel and guide myself through it with all your videos,I’m also going to research more on Keto,learn as much as I can on what it really means and how it can benefit and make me stronger.
      I just wanted you to know that I’m now your biggest fan and going to learn a lot from your channel.

As for your going completely vegan, I applaud people becoming very informed about anything before they do it. However, I have a few concerns because of the difficulty of getting several critical minerals and B vitamins, for people who are completely vegan. There is a professor, Professor Noakes, in South Africa who is quite a well-known doctor and former sports medicine professor - you might want to contact his foundations to get a fully-rounded opinion, and advice on what sort of supplements you might want to do if you're going vegan. Also, if you want to ensure that your knowledge is complete, look up "Low Carb Down Under" lectures on UA-cam, especially to do with nutrition and keto vegan diets.       Hi Alondro! I always buy just the regular white or the gold - both work equally well, just the gold has a slightly more caramelly flavor. I also always grind my sweetener in a bullet myself.       Hi Jeimi! You have to use full fat coconut cream/milk from a can, not the beverage in a carton. When you look at the can, make sure that there are only two ingredients, coconut and water. I have found that products from Thailand usually are the best quality, in my area, but the labelling is inconsistent - some companies call it milk, and some companies call it cream. I look for the highest fat content, and that there are no gums in the ingredients list. BTW, my favorite brands are out of stock from time to time, so I have several different companies that I use and I do buy extra when I find a product I like. So, if you mean coconut milk from a can, I think that we both mean the same product. Also, is there anything your mom is craving that I could put on the list for 2020? (It does not have to be a dessert) Cheers!

      Hi Lylia! This is a sugar free recipe version, for keto, low carb diets, etc., for people who don't use sugar. I'm not sure if your doing keto, or just dairy free, but are you aware that maple syrup is very high in fructose? As for using it in this recipe, I'm really not sure because you need the crystalline structure of (e.g.) an erythritol sweetener or, alternatively, a rare sugar like allulose. If you do try making it with the maple syrup, PLEASE let me know by leaving a comment, as I'm sure other people would be helped by your input. Cheers!

      I have known about the Lakanto and other similar type fiber syrups, and have tried some of these in the past, because they would have been a very convenient ingredient to use. However, after trying it out on myself, and doing blood glucose and ketone tests after use, these *zero* sugar syrups actually had a substantial glycemic effect on me. And, reading the label, you will discover that Lakanto sugar maple syrup, for example, has the following ingredients (pasted from their site):
      PURIFIED WATER, TAPIOCA FIBER, CHICORY ROOT INULIN, POTATO STARCH, NATURAL FLAVORS, VEGETABLE GLYCERIN, SEA SALT, MONK FRUIT EXTRACT, FRUIT JUICE (COLOR), NATURAL CITRUS EXTRACT (PRESERVATIVE)
      Please note that there is tapioca fiber, and potato starch (near the top of the ingredient list) which I know they are labeling as fiber, but they do have a glycemic effect. Although these syrups are convenient, their taste and viscosity is manufactured, and therefore this is a processed food, something that I try to avoid as much as possible, and stick to the whole food ingredients as much as possible.
      I understand that people who have a healthy metabolic system, and are doing keto to improve their base dietary style, do not have a problem with processed products such as the Lakanto sugar free maple syrup, but for this recipe, I really don't think that it is necessary. This is just my opinion, based on my physiological reactions as a type 2 diabetic.

    Hey there, I like the idea of your coconut condensed milk so i was hoping if i can give you just one question. for condensing coconut milk is it important to use substitute sugar and if so can you give me a reason why?

      HI David! The reason that I use a substitute sweetener is that I am diabetic and following a keto diet. On keto, we do not use sugars or sweeteners that cause an insulin response. That is the reason that I don't use regular sugar.
      However, the sweetener that I use in all of my recipes can be substituted on an equal 1 to 1 basis with regular granulated sugar.

      Hi May! Yes, please do use a sweetener that is available to you, as long as it is within the keto profile. The one thing that will really help, is that if it is not in a powder form already, grind it to a very fine powder consistency. One other thing is my sweetener is a 1 to 1 substitute for table sugar, so check the ratio for your sweetener of choice, and adjust accordingly, if needed. Good question! Thanks!

      Hi Ship Creek! I have a son going to uni in Melbourne, and family and friends in Sydney - where are you? In answer to your statement about the confectionery sweetener: First of all, I use a monkfruit/erythritol blend sweetener. In this particular case, I used a "golden" version. "Confectionery" means taking your granulated sweetener and grinding it to a very fine powder, like non-keto icing sugar would be. I usually grind my sweetener, especially for dessert recipes, because it incorporates better with the other ingredients. I am glad that you asked the question, and I hope to hear from you again!       West Aust is stunning and rugged. The karri forests are truely stunning. WA is huge though. It takes up a 1/3 of Australia. And be prepared for early closing times of most business's.

My son's current placement is in a town about an hour and a half from Melbourne near the coast. Since he is almost finished his medical studies, he is hoping to remain in Australia as he loves the country and the people there. So I foresee many trips to Australia over the years, and lots of time to explore. The rest of my family and friends are safe, but everybody is extremely concerned about property loss for the people in affected areas and the tragedy of the devastation caused to all of the animals and the natural environment.       Hi Rabbit and Cat - you can use any cream-based non-dairy milk (high fat) if you can find one. I'm sorry, but I am not aware of a nut or seed-based milk with high enough fat, other than coconut cream. As per your previous question regarding the cashew milk, if you made your own cashew milk, and cooked it to have more fat content like coconut cream does, it may work. The only other suggestion would be to perhaps use arabica gum or glucomannan as a thickener. I think xanthan gum would make it too slimy. I will give this some more thought, and if I find a product that would help you, I will let you know.

      Hi Darla! Unfortunately, no. You cannot substitute almond milk for the full-fat coconut cream. I am not using coconut milk (the one you get as a drink) I am using the canned, full-fat, very dense coconut cream, which has a lot of coconut solids and fats. When you refrigerate the coconut cream, it actually forms a thick solid with a bit of separated water. The almond milk is usually just a beverage, but does not contain enough substance to form this sweetened condensed milk. Cheers!

      Hi Kristine! My apologies for the confusing format for the written recipe. I have put as a to-do to change the formatting so the written recipe is easier to follow. However, the amount given is 5 tablespoons, or 60 grams of finely ground sweetener. For best results, weigh out the ingredients, as they will be more precise (not dependent on how finely ground your sweetener is).

      Hello! If you are making homemade coconut *milk* just for drinking, and it is very liquid, I do not think it will work. However, if you can make full-fat coconut *cream* as thick as the kind in the cans, yes, absolutely, that should work.     It seems that all your recipes that use sweeteners include ERYTHRITOL (like the Lakanto Monkfruit sweetener in this recipe) which has given my husband and I stomach distress, for two weeks he had to be near a bathroom at all times. It was an awful experience, I hope never to repeat. Do you have ANY recipes that use a sweetener that doesn’t have any ERYTHRITOL in it?

      Hi Celeste! In all of my recipes using the monkfruit sweetener with erythritol, you can instead substitute allulose, but please check out its properties to decide whether it is right for you. Here is a link to a product that I found:

      Hi ILOVE2FeelGOOD! The coconut cream that I use is very light and fresh-tasting, and gives a nice caramel-ly taste to the sweetened condensed milk. I have found that you have to be quite careful of the full-fat coconut cream that you use that the cream itself smells just like fresh coconut, for best results. In answer to your question, I like it as a creamer when I want a sweet, treaty coffee - it makes the coffee sweet - so I don't use it often as I usually like my coffee black.

      Hi Irma! A sweetener is any substance that produces the same "sweet" taste as sugar. People on keto or low carb diets usually choose sweeteners that do not affect blood sugar levels, such as monk fruit/erythritol blends or xylitol (also called "birch sugar"). Some people also use stevia, but that one has an aftertaste for some people (like me).
      In my recipes, I usually use Lakanto's monkfruit/erythritol blend. You can find this product in health food stores, and also online. Here is a link to that product:

      Hi Leesa I. My macros were calculated using a full fat coconut cream that is just coconut and water, with no gums or other additives, so the macros I'm showing have taken account for that. Also, just using coconut milk without other additives will not result in a sweetened condensed milk. What you will have is a sweetened coconut milk. The carb count varies by manufacturer, so do read the ingredients and the nutrition table provided. Unfortunately, there doesn't seem to be a standardized product at present, across all producers.       Hi Jamie! Yes, you absolutely can use coconut sugar, however please note then it would not be "sugar free" as coconut sugar would spike your blood sugar the way table sugar does. Coconut sugar is very tasty, and will work well with the recipe for people who are not sensitive to sugars for health reasons.

If you are looking for a vegan milk, but are not concerned about keto or low carb, and do not need it to be sugar free, yes, you can use a light brown sugar in place of the sweetener. Please note that the macronutrient ratio will change greatly, with a lot more carbs and calories.

    Coconut milk and coconut cream is not the same. Coconut cream is loaded with sugar.

      In Australia coconut cream and coconut milk are sugar free but have different fat percentages. Cream is made from the first extraction and has higher fat content. Creamed coconut is a different product altogether and may contain sugar.

      Hi Thomas. First of all, I think that there must be some miscommunication. I provide, for every video, a link to the full written, printable recipe, with all of the exact quantities in both metric and US measure, and well as summary step-by-step directions, with clickable boxes so you can keep track of which step or ingredient you are on.
      I am not sure which channels you are watching, but I find that in many food videos, the channels do not provide the specific quantities on the video as they are preparing the recipe. They focus on the how-to, rather than breaking the flow of the instruction with the ingredients. These kinds of channels do usually have a link to a written recipe. For example, here are a few people who I admire, and whose presentation style I like:
      Food Wishes
      Joy of Baking
      Recipes 30
      Bigger Bolder Baking
      Gordon Ramsay
      Jamie Oliver
      to name a few of the larger channels.
      I understand that my presentation style may not be your cup of tea, but this is what works for me, and how I choose to run my channel. I am sorry that may not be what you are looking for, but I am going to continue to do it my way, as it is how I like it, and how most of my audience has come to expect it. So again, if you are on one of my videos, and need the exact quantities, go to the UA-cam description, click on the link to the written recipe, and you will find all the quantities. Cheers!

    One thing I really don't get, the whole point of keto is to avoid sugars. The ideal is you retrain your tastebuds to not crave sugar, to be content with the natural sweetness of food. So WHY do all keto recipes include a sweetener? You will never fully adapt to the taste of real food if you keep adding sweeteners. My tastebuds have changed so much that even the steamed green-lipped fresh mussels I had for lunch today tasted sweet. I didn't need to add any seasoning, they were naturally beautifully tasty. So please folks, do yourself a favour and ditch the sweeteners as well as the sugar.

I agree with you that, once we become keto-adapted, by eliminating all processed sugars and fructose, and processed carbohydrate ingredients, our taste buds and brains (sweetness receptor sites) readjust. I have found that to be true for myself as well. As for not using any form of sweetener in recipes, that is a personal choice, and I respect your discipline very much. However, many people, including myself, prepare meals or recipes to be shared with non-keto people. In my family, half of us are keto, and half are not. I believe that mealtime, as much as possible, when I am eating with others, should be a social time. Creating recipes that even non-keto people enjoy serves two functions for me. First, we can all eat the same thing, without needing a special something-or-other for the keto crowd. And secondly, by making my keto meals palatable to the non keto crowd, I am demonstrating how a healthier alternative lifestyle is something that they can enjoy and maintain. My dessert recipes, for example, have cakes for birthdays or special occasions. Cookies etc, also for snacking or special occasions, because keto for me and many of us is a lifestyle, not just a diet. As a lifestyle, it has to be something that I can maintain within the parameters of the people I associate with, and my family's needs. Treats and desserts are an occasional delight - by no means are they a necessity. I am sorry for the long winded explanation, but I just wanted to share my thoughts with you. Cheers!
