The easiest substitute for the milk powder would be to omit the milk powder and replace it with one more egg yolk, at the step at which you are doing the egg yolks. The mouth feel will be a bit creamier, but it will still taste amazing. Also, I would like to suggest that you should take a taste of your custard, after you cook the custard, and if needed add a little bit more lemon extract, not lemon juice because it could curdle the custard.
