One thing I don't see many people doing when making this ice cream is to add vanilla extract. Vanilla takes out any salty taste from the cottage cheese and adds a richness to whatever flavor you're using, even chocolate. Also, if you're doing keto do not use honey, it spikes insulin. Use stevia.
I use monk fruit, splash of vanilla, ... tried differnt flavorings and found one of my faves is using flavored water enhancer PurAgua, (no carbs no sugar) in flavors: strawberry pineapple, strawberry watermelon and orange tangerine... my grandaughtered said it tastes like frozen yogurt ... yes!

I've heard that using allulose or liquid allulose prevents freezing too. Also wrapping the cottage cheese in cheesecloth and squeezing out the excess moisture prevents freezing and makes it even creamier.

Myra, try this low carb, rich, creamy and easy ice cream, use heavy cream, coconut cream from coconut milk or from shredded coconut you run through the blender with water and then strain and separate in the fridge, just add sweetener powder and flavoring, it will turn into soft serve right in the blender before you even freeze it, high calories from fat to be sure, so you may want to play with the recipe to reduce that a little, but as good as any regular ice cream.
I think I'll try avocado as a substitute for the cottage cheese, and carob powder for the cacao powder. There is a chocolate avocado ice cream at whole foods that costs almost $9 for half a pint! It has the same consistency and creaminess as this recipe. If the substitutes works I can start having my fav dessert again at a fraction of the costs of store bought. Plus healthier too👍!

I would use the appropriate amount of Swerve in place of the honey, as I am avoiding sugar as much as possible (lost about 120 lbs since Sept 12, have about 70 more to lose). As with all the recipes I get from you and other channels, I type it up in an MS Word document, cite your video and website as sources, and include my own modifications. AT this point I have amassed a little keto cookbook of sorts, and I'm always looking to expand it (as I shrink!).

I was trying to make cottage cheese ice cream and stumbled on something, to flavor it used a package of "Sugar Free" Pudding. 16oz cottage cheese, 1 cup water, 1 packet sugar free pudding, blend it together. Didn't need any additional sweetener.

I'll try this with my NuNaturals stevia sweetened cocoa syrup concentrate. 1/2 tsp makes a good sized cup of coffee into sweet mocha, so I'll use 3/4 tsp to start. Yours is my fav cooking channel!
I omitted the honey and used a small banana in stead. Lower carb with added micronutrients. Also giving a nice texture to the ice cream . I do not like artificial sweeteners and allulose and monk fruit is hard to find and afford in South Africa

I'm sticking with my stevia that's awesome and going to add xylitol to my recipe, too. Some won't use xylitol due to it being toxic to dogs which makes me wonder about that too!!!

I do something similar but in a ninja creami. It is way better than any store bought ice cream I’ve ever had! 🤤 I like to use protein powders for different flavors. So good.
Love this. I love cottage cheese but never did ice cream with it. I did heavy whipping cream and the recipe called for vodka. Really. Something about the way it freezes and u had to shake it in a jar for 5 minutes. I felt like it was a workout. I did taste the vodka tho which wa😂s not good. So i wont be making that recipe again. In her recipe that's linked to this video she only says "one container;" going by the amount of the other two ingredients, I'd have to say it's a 16 ounce container.
I can’t imagine with that much honey in that amount of cottage cheese, that this would be a low carb ice cream. I’m sure it’s delicious but people will be making this thinking they are eating an amazing low carb dessert when in reality it’s not.
Like sugar, honey is high in carbs and can raise blood sugar levels. It is also high in calories. Honey because its high in carbs it is not compatible with a keto diet which requires consuming almost no carbs at all.
Sister, you haven't met HALO TOP lce cream, best flavor is: CHOCOLATE WITH CARAMEL COOKIE CHUNKS. 360 calories PER PINT!!! and very few carbs. When you have no time to cook ice cream 😂😂
That's very high calorie. You can make ~120 calorie per pint ice cream from water, protein powder, cocoa or other added flavorings, some stevia and a T. of sugar-free pudding. Put it through a Ninja Cremi.

The Friendship brand makes a no salt cottage cheese, I used to buy it all the time for my salads. It's harder to find nowadays for me but I still do occasionally.

I'd guess 16 oz container gauging the size or the bowl. That bowl of honey looks to be a lot more than 4 tbsp, though. Gonna go make it now and see.

Looks wonderful. FYI you were using cacao powder not cocoa powder. There's a difference. Cacao is less processed and a better option. 😊
Cacao has more caffeine though. It can make people super jittery.

It's going to freeze hard regardless. Her results were only after a few hours

I was trying to make cottage cheese ice cream and stumbled on something, to flavor it used a package of "Sugar Free" Pudding. 16oz cottage cheese, 1 cup water, 1 packet sugar free pudding, blend it together. Didn't need any additional sweetener.

Generally additional salt is added to lower/nonfat products to replace the flavor lost from removing fat.

I'll try this with my NuNaturals stevia sweetened cocoa syrup concentrate. 1/2 tsp makes a good sized cup of coffee into sweet mocha, so I'll use 3/4 tsp to start. Yours is my fav cooking channel!
I omitted the honey and used a small banana in stead. Lower carb with added micronutrients. Also giving a nice texture to the ice cream . I do not like artificial sweeteners and allulose and monk fruit is hard to find and afford in South Africa

@@britt1784 I've been low carb for decades. I'm working on a great brownie recipe and considered allulose. I read that Canada has it banned due to just not knowing more about it. I'm sticking with my stevia that's awesome and going to add xylitol to my recipe, too. Some won't use xylitol due to it being toxic to dogs which makes me wonder about that too!!!

I do something similar but in a ninja creami. It is way better than any store bought ice cream I’ve ever had! 🤤 I like to use protein powders for different flavors. So good.

Love this. I love cottage cheese but never did ice cream with it. I did heavy whipping cream and the recipe called for vodka. Really. Something about the way it freezes and u had to shake it in a jar for 5 minutes. I felt like it was a workout. I did taste the vodka tho which wa😂s not good. So i wont be making that recipe again. I make homemade cottage cheese all the time, and I do use a lot of salt or it is hella bland but I can do it without salt for this❤
But all commercial ice creams, as well as homemade, call for salt! ALL of them!
Total Carbohydrate 17 g in 1 tbsp of honey alone. I'd rethink this one if you're "low carb."

I can’t imagine with that much honey in that amount of cottage cheese, that this would be a low carb ice cream. I’m sure it’s delicious but people will be making this thinking they are eating an amazing low carb dessert when in reality it’s not.

Like sugar, honey is high in carbs and can raise blood sugar levels. It is also high in calories. Honey because its high in carbs it is not compatible with a keto diet which requires consuming almost no carbs at all.

That's very high calorie. You can make ~120 calorie per pint ice cream from water, protein powder, cocoa or other added flavorings, some stevia and a T. of sugar-free pudding. Put it through a Ninja Cremi.
But what are the ingredients?? Is there a laundry list of ingredients? No worries, I looked it up. *_Coconut Milk (Water, Coconut Cream), Sugar, Soluble Corn Fiber, Erythritol, Fava Bean Protein Concentrate, Vegetable Glycerin, Enriched Wheat Flour (Wheat Flour, Niacin, Reduced Iron, Thiamin Mononitrate, Riboflavin, Folic Acid), Contains 1% or less of Vanilla Extract, Natural Flavors, Cocoa Processed with Alkali, Sea Salt, Cocoa Powder, Salt, White Rice Flour, Pea Protein Isolate, Coconut Oil, Palm Oil, Sunflower Lecithin, Canola Oil, Molasses, Baking Soda, Cellulose Gel, Cellulose Gum, Stevia Leaf Extract (Reb M)._* That compared to 3 ingrediants. Also, this isn't their Keto line, but even those have just as much of a laundry list of ingrediants and not all Keto friendly. *I think we become so focused on the "carbs" that we will be ok with any type of ingrediant.*

The Friendship brand makes a no salt cottage cheese, I used to buy it all the time for my salads. It's harder to find nowadays for me but I still do occasionally.
