INGREDIENTS
3 1/2 cups (410 g) instant corn flour amzn.to/33dVy5J
1/2 cup (60 g) corn starch
1 tsp baking powder
1 tsp salt
1 1/2 cups (300 g) granulated sugar
3 sticks (341 g) unsalted butter (softened)
2 cups (473 ml) pineapple juice
1 cinnamon stick
2 tsp vanilla extract
20 oz (566 g) can of crushed pineapple
40 corn husks (cleaned and presoaked) amzn.to/33kFHTb
16 qt STEAMER POT
amzn.to/320tgLJ
INSTRUCTIONS
- In a small sauce pan add pineapple juice and cinnamon stick, bring to a boil, remove from heat and steep for 10 minutes
- In a large bowl combine instant corn four, salt, baking powder, sugar and combine well
- Next add softened butter and combine well until masa dough is crumbly
- Now add crushed pineapple, vanilla extract and mix well
- Little by little add at least 1 3/4 cups of steeped pineapple juice
- Mix masa dough vigorously for 2 to 3 minutes
- Cover and allow to set for 20 to 30 minutes
ASSEMBLY
- Take pliable corn husk, add 3 to 4 Tbsp of masa dough to the center of the corn husk leaving at least one and a half inch from the top
- Next fold over to enclose then fold bottom tip under to secure
- Repeat this process until all tamales are assembled
- In a 12 to 16 quart steamer pot add 2 to 2 1/2 liters of water, place the steamer basket/insert and start to stack your tamales open side up in a teepee pattern
NOTE: Be sure water does not touch the tamales
-Now add extra corn husks and cloth to cover the tamales
- Cover with pot lid and bring water to a hard boil
- Lower the heat to a medium to medium high heat then start 1 hour cook time
- Cook time will vary so once a tamal can be removed easily from the husk, then tamales are done
- Remove all tamales from pot, allow to set for 20 minutes, then serve
This recipe can yield at least 35 tamales

SWEET PINEAPPLE TAMALES
As soon as I saw the title....my heart skipped & I stopped in my walking tracks! My grandmother (born /raised in Mexico and once married lived in Harlingen) recently passed away in September. Lived a beautiful 94 years! When she passed...I had this immediate urge to make recipes that she made for me & family. One of them being sweet tamales. She was very well know for her sweet tamales. This was one of them! By any chance do you have the strawberry sweet tamale recipe? Thank you, for sharing all these wonderful recipes! 💕
I will be making strawberry and coconut with raisins sometime this month for sure. Thank you for sharing a sweet memory of your grandmother. 😊🙏
So excited & forever grateful! X

My uncle use to be married to a Mexican lady and she introduced me to tameles omg so delicious and she made these too and use to add raisins and nuts so good
My grandma Baca made these with some cinnamon and nuts. Usually Pinon nuts. Sometimes Pecans. A little ground cinnamon and we ate like little 🐷. My grandma passed away almost 16 years ago but the memories live on. Thank you.
I'm supposed to be making sweet tamales, instead I'm super relaxed and falling asleep. Your voice! Calming!
I made them today and I added raisins and dried up blueberries. They came out so soft and taste great not too sweet or dry. Gracias por la receta 👍

I make a sweet pineapple masa with spicy chicken or beef inside😍
Yumm
This might just be the first tamale recipe I try to make! Looks delicious!
Got super excited when I saw this recipe. Great detailed instructions and super tasty but not what I thought it would be. Very buttery and reminiscent of shortbread so not a whole lot of “tamale” or masa flavor. Thank you for a great jumping off point tho.
Thank you for your great detailed video! I am going to make these today. I like the pineapple juice and cinnamon stick for the liquid to add to the masa. Also, adding butter to the masa is a great idea and I am sure it gives them a wonderful taste. Can't wait to make them : )
I've been wanting to make these for a long time!!!! I'm going to have to try this recipe out!

They only need to half as sweet as your voice to be absolutely delicious ❣️
Hi, I was thinking of making these tomorrow (Wed. when I have time) to take to my nieces home on Sat. Will they hold till then?
I couldn't find unsalted butter is it ok to use salted butter. I'm going to try to make some for the first time. 🤔😊🙏💛
What else may I use instead of butter (my husband is allergic to butter)?
Can you freeze these and reheat them later?
Si señor! Now I'm ready this brand tamale corn flour also comes gluten-free my "Chjueta" used to add a pinch of anise and a few raisins they were fabulous. I'm going to use your receta. Now your husk are good ones nice and uniform and large don't know if they sell that brand here in Wellington Heights Ca 90063.
Omgoodness I need to make these! I love how you did them. I’ll be eating them with my coffee for a month 😂😋
Hi. I’m making these today and have a question. The written recipe calls for cornstarch and was wondering when you add this.
I met some guy that made these he would say he makes the best tamales in the world
