In Ghost Rider he's doing an impression of that monk from the Vietnam war (at this point of his career he stops doing other actors and starts to get more political). In Gone in 60 Seconds he's doing Vin Diesel. In Captain Corelli's Mandolin he's doing Christian Bale (doesn't get the accent right though!). In National Treasure he's doing Indiana Jones....or maybe Harrison Ford? I dunno, I get confused by the 2. Which one was in Star Trek? And to answer your 2nd question; No. He was trying to sound like Christian Bale.
