I’m so happy I decided to give this recipe a try. My client who I cook for cannot do dairy. ( I am a senior home care aid) I myself am vegan and have been for more years than I care to count. Anyhow I mentioned to my client that he can still have mushroom soup because I can use cashews instead of dairy. So I looked through my favorite vegan chefs recipes and decided on this recipe to try. It’s absolutely divine the potatoes add a whole new dimension in the soup and I’m blown away with how good this is. Thank you so much for sharing and my client thanks you as well ❤️

This was amazing, I substituted the potatoes for white beans instead and used coconut milk instead of cashews. It was yummy. I substituted only because I did not have those other ingredients on hand and was eager to make it. it was very creamy using the beans and the coconut milk. Will try this exact recipe when I make it again and be sure to have all of the ingredients. Also it was very satisfying and filling. thanks for sharing this with us.

Wow made this last night. It was amazing. everyone loved it. made a couple of small tweaks.. added a mushroom bullion cube to the veg broth and used almond milk instead of water with the cashews in the blender. but otherwise followed it exactly. we will make this again and again. velvety very good mushroom flavor and pretty easy to put together. ty ty for sharing this one!

I have a phillips soup maker and I make cream of whatever soups with cashews all the time and I don't have to make the milk separately just toss them in with the rest and push milk soups setting and voila fabulous creamy soup . Cashew milk is delicious in soups of all kinds. Oh yeah the potato trick works awesome too. I learned that a few years back and never used heavy cream again. The past year Ive been making all kinds of nut milks in my soupmaker on milk function and just love it.
I've tried this now and I can tell you all... it was sooooo good! (c: I have a little warning, though... When I rinsed the glass jug for my blender it cracked because of the quick temperature change. A lot of blender glass jugs doesn't withstand boiling temperatures, so you better let the soup cool down a little before pouring it in. And do not rinse it in cold water right after!

I've been vegan now for several years and still discover awesome channels like this one!!! Made this recipe which was awesome and also have been playing around with silken tofu so another idea is chickpea pasta with mushroom alfredo? Just was one of those lucky accidents that took vr little time to prepare; I pulverized a head of parsley while grilling half cremini half shitaki; salt came from white miso I like heat so a jalapeno went into the blender with tofu parsley dried herbes de provence wrote it down so would not forget next time; juice of one lime 3 garlic cloves; 4 people; what did I leave out; walnuts for healthy fat. One friend did not notice it was vegan; always good sign .. really love this channel. Tx!

Wiping that drop of soup off the edge of the plate shows that you care about presentation. Excellent technique :)
I've never made it myself, but I've literally eaten 100+ different cream of mushroom soups from around the world over my lifetime (I'm over 50yo). And though I've just watched this... it's the best. This is absolutely scrumptious!! Nutmeg is a perfect complement with mushrooms in my opinion. I added a little to the sautéed slices before adding the blended soup. I couldn’t stop eating this!
Started to gravitate towards hearty warm meals, soups in particular, closer to autumn, and it was first to pop up on my UA-cam, made it last year. Glad UA-cam recommended it to me again and reminded how easy and good it was 😋
I just made this soup. It smelled so good I had to try some immediately! Burnt my tongue a little. Totally worth it. I’ve never tasted creamy mushroom soup tasty! Going to make another batch soon, and freeze it, so I can use it in casseroles come autumn time, and to always have it conveniently handy. Will probably never buy canned again.

Simple yet so wonderful. I've experimented with a lot of cream of mushroom soup. I often think that more spices and more ingredients boost the flavor. In this case less is more. I do add more potatoes just to bulk it up for the big eater in my house but I don't veer from the recipe other than that. There's no need. Just made it today. I didn't follow the exact measurements because I just used what I had on hand and wanted to clear some ingredients in the fridge but it still turned out really good! A little runny but that's fine with me, so glad to find a recipe that actually tastes good for people with dietary restrictions! I've tried some other recipes that does not taste good haha

i made this today but used soy cream instead of the cashew cream and I think this is legit the best meal I have ever made. the soup is just so creamy and comforting to eat. definitely a must try!!
9/10 did not expect it to turn out good. I just made a few changes like cut the cashew in half and replaced with silken tofu for some protein. I also added dried red chili to kick up the spicyness. Yum!!!
I made this soup and it was delicious. But I added 2 cups of cooked white beans (cannellini). I blended 1 cup with the soup base and added the other at the end. Always looking for ways to add bean protein.
This is a winner! Made it two days in a roll. Taking it tonight to a dinner party. So much flavor for a very simple recipe. I used half cup of water and half cup cashews but not sure it will make a difference.
Wil, thank you for the great recipe. I made it and it was delicious. I subbed coconut milk for the cashews and it was great. I also added a drizzle of white truffle oil at the end. I'm taking the extra whole mushrooms and I'm going to chop them up so the soup will taste exactly like the old "C" brand we grew up with. I'm going to have to have a mushroom soup challenge with my mom now.

I am definitely trying this next time I go shopping. I should substitute cashews with sunflower seeds and peanuts. I have a recipe for you: Colchannon. Really simple. Just saute' chopped cabbage in butter until soft and put it over mashed potatoes. You can add some onion if you like.
Looks delish! I made a mushroom soup recently with similar ingredients, but also added one celery stalk (that got blended in once cooked) that had amazing flavour. As a result, I am going to experiment more with celery in my soups.
this is the best vegan cream of mushroom I've seen online ... I am soooo going to make this :) Do you soak or boil the cashews at all? I don't have a high powered blender yet, so I might soak or boil my cashews. Thank you for sharing ... I'm getting addicted to watching your recipe videos :)
Hey shanez! I have a high powered blender and it gives me a completely smooth cream even if the cashews aren’t presoaked. I believe with lower powered blenders, you would have to boil or presoak in order to liquify. I almost didn't watch the video thinking that you used coconut cream. I'm not vegan, but I'm on a cholesterol lowering diet, so coconut cream is out due to the saturated fat content. Mushrooms are a favorite of mine, so I will definitely make this.

I am definitely trying this next time I go shopping. I should substitute cashews with sunflower seeds and peanuts. I have a recipe for you: Colchannon. Really simple. Just saute' chopped cabbage in butter until soft and put it over mashed potatoes. You can add some onion if you like.

I made a mushroom soup recently with similar ingredients, but also added one celery stalk (that got blended in once cooked) that had amazing flavour. As a result, I am going to experiment more with celery in my soups.

this is the best vegan cream of mushroom I've seen online ... I am soooo going to make this :) Do you soak or boil the cashews at all? I don't have a high powered blender yet, so I might soak or boil my cashews. Thank you for sharing ... I'm getting addicted to watching your recipe videos :)
Hey shanez! I have a high powered blender and it gives me a completely smooth cream even if the cashews aren’t presoaked. I believe with lower powered blenders, you would have to boil or presoak in order to liquify. Lol I’m so glad to hear 🙌👨🍳 I cant believe I’m coming up to almost 150 episodes 😅😅😅 glad to have you here 🔥

I almost didn't watch the video thinking that you used coconut cream. I'm not vegan, but I'm on a cholesterol lowering diet, so coconut cream is out due to the saturated fat content. Mushrooms are a favorite of mine, so I will definitely make this.
