      Yes placing the onion in the freezer mix it so it doesn't have your eyes tearing up. This is something I try to practice often

    For those with smaller blenders, you may consider blending your soup in batches while ventilating for safety reasons. Hot ingredients in a blender can cause pressure buildup and explode if there's no ventilation for the steam, so be careful!

      @@Belfastboi Hi! I tend to use vegetable broth in everything because it's so easy to make from what I typically have on hand (and a great way to repurpose food scraps). To make it, you can simply boil vegetables and strain the liquid, but I suggest roasting the vegetables first (especially onions) to get deeper flavor. Then, I typically freeze it in batches for convenience later. I do keep a jar of Better Than Bouillon Vegetable Base in the fridge in case I feel lazy or don't have stock in the freezer.

    I’m very sensitive to onions, so my trick to cutting onions is to wear goggles. You know, the ones you wear in the pool. I may look ridiculous, but it TOTALLY works!

      One easy tip I found is slice the onion 2 or 4 and put it in fold water then leave for a couple at least an hour or 2 best overnight the stinging Ness would be totally gone. Hope that helps

      You do realize if you don't cut off the root end, it won't bleed and there will be no tears.

      Cari Lescalleet actually the biocompound from the onions when we cut it mixes in air and goes inside our body through nose by inhaling causing burning of eyes... if we don’t inhale it or breath by mouth during cutting onions we won’t get burning eyes... I have tried it and it works...

    When cutting onions I always turn on the stove fan/suction thing, and stand underneath it (sorry I don’t know what it’s called in English 😅) it works great because the particles that makes you cry, gets sucked up and won’t end up in your eyes! 😁

    Hi Lisa. Thank you so much for these recipes, I'm going to cook all of them. As a Ukrainian, I cook beets quite often ( because of the Borscht) and the lifehack is to boil them first and then cut. You can add them as your last ingridient right to the blender, they'll still give all their color to the soup. It eases the whole process soooo much. Hope it would be helpful)

    Okay i still want a Vitamix for smoothies but immersion blender (at a fraction of the cost) can blend your soup right in the pot, saves time, extra steps and less cleanup. These recipes look delish! xo

      I’ll take all the power. It’s an investment up front but it’s a made in USA tool that I’ll have for a long time. I’ve heard of some owners who have had there Vitamix for well over a decade.

      An immersion blender will never get your purees as silky smooth as a high powered blender. If you're going for a more rustic style, that's fine but your pureed soup will be a little chalky or grainy with an immersion blender.

    This cauliflower soup recipe is so easy and wonderfully delicious. I add celery to the baking sheet. I love how effortless this recipe is.

    It’s now my goal to make all three of these soups this winter! Although I think I’ll substitute my Instant Pot and immersion blender wherever possible.
    On the onion causing tears-it does help a lot if it’s chilled. I keep my onions in my fridge. But my eyes are so darn sensitive, I finally bought protective goggles that “seal” all the way around, and it was money well spent! I just look really goofy and nerdy when I chop onions, but it’s totally worth it.

    For cutting the onions , once I cut half of the onion 🧅 I will runs the open parts in tab water for 3 seconds then cut them.

    Just made the sweet potato/carrot soup, except I substituted butternut squash for the sweet potato and added a green onion stalk, some cashew nuts for extra creaminess and some lite coconut milk during the Vitamix blending step and I must say, it was fantastic. Garnished with some chopped green onion and croutons and everyone said...."OOOh....it's so good!" Thanks for a wonderful, hearty and satisfying recipe. Mmmm!

    Thanks for the soups! I ALWAYS keep my onions in the fridge. If I don’t then I stick on in the freezer before I start my other prep. I find just keeping them in the fridge works the best. If I forget to use one in the freezer than it’s ruined and I can only use it for stock. As soon as I take an onion from the fridge I just replace it with another one.

    I know I’m late to this video, but for anyone that wants to know: I learned from a Jacques Pépin video that when cutting an onion, the sharper your knife is, the less you’ll cry. When you chop an onion, it releases a compound of sulfuric acid. That’s what stings your eyes and makes them start to water. The sharper your knife, the less pressure you have to use as you cut, the less it crushes it, so less of that compound is released :)

    Thank you! I love soup. I made the cauliflower one and it came out great. I don't have a vitamix but used an immersion blender and it worked out fine just took longer. This was perfect for a cold rainy snowy night.

    I adapted this recipe for sweet potato and carrot soup to a smaller family size of 2. I used 1/2 of a small onion chopped and sauted in a saucepan in a little olive oil for about 2 to 3 minutes until tender but not browned. I then added 2 cloves of garlic minced and then sauted for 1 minute more. I then added 1 medium sweet potato peeled and cubed and one half of a quart bag of blanched frozen carrots from my freezer, 2 teaspoons of ground cumin, and 2 cups of vegetable broth. Bring to a boil and simmer covered for about 15 to 20 minutes until fork tender. Ladle all ingredients into blender and add 3/4 cup water. Blend on soup cycle using tamper stick at beginning of blending process. Yummy!

    Yes I've tired that tip about the onion and it actual does work. What I normally do, is put my onion in the fridge early since letting it sit in the fridge doesn't hurt it, that way I always have at least one onion ready to go without tears.

    Love your recipes, Lisa. Aso have a hint for you. Sprinkle a little bit of baking soda on your hands after cutting beets, and it will quickly remove the stains. Hope you try it and let me know if it works for you.

    What makes you cry with the onions is their "gaz"... so just pass the onion under the water, the gaz won't be able to go up and reach your eyes... and you won't cry ! :)

    Thanks for these recipes. I've had my Vitamix for over 20 years and use it every day. Best kitchen appliance on the planet. I've bought one for both my sons. Just ordered a souper cube-- this thing will be great for freezing and storing sauces and pestos!

    Tip: You can just put a wet papertowel next to the onions when you cook them and the towel will absorb the chemical from the onion and it won't affect your eyes. Watery onion eyes make me nuts when I'm trying to cook. And it smudges my mascara................ :( Have a great day and thanks for all these awesome recipes and kitchen tips.     Tried your cauliflower soup today, i loved it so much, thank you for that ❤️❤️❤️ Also, I started storing my onions in the fridge, so whenever i cut one now, i don't cry at all, and that's something i used to cry so much while cutting them I'd take breaks 😂😂😂

    I was so upset because I cannot eat raw anymore. The lectins in the vegetables attacked my digestive system and cause severe pain in my tailbone. I thought I was through buying vegetables until this video! I’m in like flint with my vitamix to make all the soups and more! You are a lifesaver! My vita mix has been sitting all by itself doing nothing until now! Thank you thank you thank you. I could not even make smoothies anymore!

    I made tonight the cauliflower soup and it was so good! I added a bit of cooking cream at the end, as I am used to put some in most of my soup. I love the crunshiness of the roasted almonds and even the pieces of cauliflower on top. The cum8n and coriander were a perfect blend. Next will be the other soups. Thank you for sharing.

    Can't wait to try them! Next time you make beet soup I recommend trying it with addition of some orange juice - it was a game changer for me as it made my beet soup much fancier :D so I started to serve this at parties and for my friends, not worrying that it will be too 'traditional'. It nicely mixes things up for this well known taste :)

    The fridge/freezer trick for onions TOTALLY works! I never remember to store mine in there, so I usually end up sticking it in the freezer while I prep everything else and it still works.

    We just tried the beet soup, yum! Even my toddlers liked it. I've been looking for ways to incorporate beets into our diet and this is a delicious way. Thank you for this great recipe.

    The best way to dice an onion:
    Cut the bottom off
    Cut in half, but leave the stem at the top!! This is where the gas releases that makes you cry.
    To dice while still leaving on the top, make horizontal cuts, then vertical cuts from the base to the top. When you make these vertical cuts, don't go all the way through to the top.
    Then, make perpendicular cuts, which dices the onion! No tears. :)
    This was confusing but I hope it helps! The trick is simply to leave the stem/top on the onion as long as possible. I use this when cutting any onion, and completely prevents tears for me!!

    I hope you know you can use ALL of the cauliflower, core and greens. I often use them with the flowerets to make mashed cauliflower. Delicious with added diced, lightly sauteed celery. Don't over cook the cauliflower as it may make watery mashed cauliflower.

    Thx for the recipe! Yes, if you put your onions in the freezer before cutting them it does it's trick. But don't leave them there for too long, because if the onions freeze and then defreeze they would become like snot.

    I love the recipes, will surely try them!! Just a quick side note: You could blend the second and third recipe with an immersion blender too right in the pot! Way easier and less clean up afterwards! :)

    Wow! I'm glad I found this video. I have a Vitamix Ascent. Just made a quick tomato soup that tastes fantastic, so I thought to look up other Vitamix soup recipes.       @@Downshiftology It's surprisingly easy to make vegetable broth. We sauté onions, carrots, garlic, and celery in a big pot with some olive oil. Sautéing the veggies will darken the broth and add a more complex flavor. Add fresh parsley, mushroom, bay leaf, + salt and pepper. Fill with water. If you have other veggies (like squash) that you won't use, throw it in there too. I'd avoid using peppers though. We've even added parmesan rinds for more of an umami flavor. Bring to a boil, then reduce to a simmer for 30 minutes. We have a recipe on our blog but honestly it's one of the easiest (and cheapest things to make) and we love being able to control the ingredients/flavor of our veggies broth. You can even add in some ginger if you're using it for Asian-inspired dishes. --Michelle and Jake

      I used the Casa De Sante vegetable stock powder made from salt, Carrots, Salt, Cucumber, Parsnips, Red Peppers, Parsley, Thyme. I’m allergic to onion and garlic.

    I throw sweet potato and carrots in the instant pot with onion and garlic and veggy broth. Then I dump everything in the Vitamix and add a can of coconut cream it's amazing and easy

    We are going to try these for sure! Not a fan of blended soups so I will chop things uniform, blend some and leave the rest chunky😀. That way we chew and it fills us up better now that we are gluten free. No more bread with soup is pretty sad😣. I will adjust and life will be great again😄. I know you can relate😉. Thanks a bunch!

    Yes, freezing onions for 10 mins prior to slicing prevents tears! I fo it all the time.

    actually when i use half an onion i place the other half in the fridge and when i use the other half after a while ive noticed that the crying habit is gone sooo i think the theory of placing the onion in the freezer might work!

      I stick my tongue out 😋 The essential oil in onion is hydrophile, it will stick to the tongue instead of the eye. Saw it on TV, and it works!

      I just refrigerate mine. You can also turn on the exhaust fan and cut them near your stove.

      When I need to chop a lot of onions, I will place a lit candle near my prep area. It burns up the onion gas and, viola, no more tears!

    Love your recipes ,I freeze the fresh ginger with skin on then grate as is while frozen ,so simple and easy then place the ginger not being used back in freezer no waste .

    Delicious carrot ginger sweet potato soup. I added 1tbs. smoked paprika, 1 tbs. Thai red curry paste and 1tbs. chopped cilantro for garnish.

    I like the simplicity of your recipes.I have one suggestion. I steam my beets, whole with the skin on first. You keep your flavor and they are easier to peel and cut.

    Great recipes - looking forward to trying them. I love my Vitamix! To prevent crying, do not cut into the root of the onion. This really works.

    I love how Americans are obsessed with minimising carbohydrate intake...carbs are good for you! Although I have seen the portions in USA, so the problem is how much they eat.

    There are also half cup cubes available from Amazon. I use them for my mom who needs small meals often for her gastroparesis. This way I can make very nutritious soups which are easy for her to digest and store them in small serving sizes.

    If you add some acid to the beets prior to cooking, it should help beets maintain more of the magenta hue. 😉 awesome recipes, will try for sure

    Finally! A thorough recipe. Thank you for showing all the steps for roasting. I didn't know what roasting was, and recipes I've seen just say "use 1 roasted squah" as if you buy that at the store :)

    I was told that onions won't make you cry if you have a sharp enough knife, and that they only make you cry if the knife is crushing more than cutting. Also, excellent video... I never thought of making soup in a blender. That is an awesome idea. :)

      I don't think that's true with a sharp knife, as mine is sharp. Maybe with a sharp knife you just tend to cut faster so have less opportunity to cry! Lol. So glad you enjoyed the video and you should definitely try making these soups in your blender. :)

    I used to work in a sandwich bar and I always halved and peeled the onions, put in cold water and put the container in the freezer for up to half hour. Definitely reduces amount of tears when you have to chop 10-15 onions at a time!

    It took me 2 years and your videos to decide on buying a Vitamix. I finally chose the same model you use in this video and I’m sooooooo happy. Cannot no longer imagine being without it a single day. I have used it at least twice a day since I bought it 2 months ago.

    Simple but brilliant as always )) Have you tried using baked beetroots for your soups? It gives a nice hint and makes peeling much easier. With large beetroots i just wrap them in aluminum foil, bake them for an hour in the evening and leave them in the oven overnight to be cooked while the oven is cooling down.

    If you’re looking for more fibre, you can leave the skin on. I tried it and the vitamix still pulverizes everything and the soup is super filling

    I've been looking for a more convenient way to freeze soups and oatmeal so I can take them to work. I really want to get away from plastic but glass is so expensive and heavy and I didn't want a ton of glass just sitting in the freezer. I am looking forward to using those souper cubes and making myself some yummy soups to store in the freezer for my lunches at work this winter! Love your videos!

    I loved this video so much! Here in Brazil, it’s spring now and getting hotter, but I always have soups for my dinner, even in summer. I always make some gaspacho too and leave it in a jar in the fridge. Goes really well as an afternoon meal on weekends or a refreshing meal when you arrive home from work, sweaty and tired... 😉😊
    I’m a doctor and soups are the best way for me to eat healthy, cause I don’t have much time to cook everyday.
    Thank you so much for sharing these recipes. I’ve already put parsnips in my grocery shopping list 😜☺️
