Made this (with my mom's favorite boxed mushroom broth instead of veggie stock) for Christmas Eve and it was a hit! Delicious and easy to juggle with the other cooking, I found all the timing to be pretty forgiving. I think the white wine is what really takes this to the next level. Making it again today and adding some pasta towards the end, we'll see how it goes!
I just made this recipe tonight and WOW! I tried cream of mushroom soup years ago when I wasn't plant-based and hated it. But this recipe intrigued me and it was delicious!
I like how you guys are not afraid of fats/oils. There is too many vegan recipe videos on UA-cam shunning oils and fat and shaming those who don't think the same as them. Its refreshing to see something different :)
What's going on is that those recipes advocate a whole food plant-based diet, which has been shown by multiple researchers and doctors to be part of a healthy lifestyle - no processed oils, especially for those with heart disease. See the China Study for more info :)
Made this soup over the weekend and LOVED it! So did my husband and my very picky teenager! Highly recommend it to all your CREAM OF MUSHROOM SOUP lovers. It's a healthy version but you'll never know it - SOOO FLAVORFUL! Thanks so much for this recipe. It'll be a regular at our house.

I'm the same! I only watch vegan cooking. Watching meals made from animals grosses me out and makes me want to cry. I love animals to much to see their corpse and suffering being used to satisfy one's tastes.
Just made this today and it was incredible! I didn't have any vegetable stock so used one can of coconut milk and one can of water. My daughter didn't want spinach so instead of adding it to the pot, I put a couple handfuls in my bowl and poured the hot soup over to make it wilt. SO GOOD!! Also, my daughter didn't even realize it was coconut milk. It was very easy to make as I just whipped the mushrooms through the food processor slicer and the onion and garlic through it's chopper.
I love making cream of mushroom soup. I make a low fat version that uses cauliflower for the cream. If you steam it and blend it with garlic and onion powder and just enough soy sauce, it get's that really nice cream sauce flavor. I always use three types of mushrooms too: cremini, shiitaki and oyster. Next time I make it, i'll definitely add kale or spinach, though. That looks super tasty

I watched this video earlier today, went to the store, bought the ingrediants, cooked it up, and DEVOURED it. This is the absolutely most delicious thing I've ever made.
So YUMM!!! I made a seperate batch of this and left the spinach out, added arrow root to made it thick and store it in mason jars for when I have a recipe that calls for a "can of cream of mushroom soup" (I don't like store bought canned soup- too much sodium and other crap)
This recipe is fabulous. We had it for dinner this evening. With a salad and a boule of home-made crusty bread and cheesy spread. My BF, who usually picks at his food, snarfed his bowl down and then cleaned out what was left in the toureen (I had to fetch him a spatula to get every last drop). The only modifications I made were that I used the Better than Bouillon "no beef" in lieu of veg stock, and I added a couple of pinches of tarragon because I just adore tarragon with mushrooms. Pureed about half of the soup in my mini-processor with a touch of flour to make it thicker when added back to the rest for a final simmer. Definitely a keeper. Does it freeze well? I could see myself making a ton of it and freezing.....
i'm currently a vegetarian, trying to transition to veganism and as a high school student, i have my parents to convince as well! i showed them your channel and we scrolled through the blog, and we made the coconut fakin bacon and loved it! then for dinner i made the broccoli stuffed shells and they were so impressed. they're on board with my transition to veganism!! hot for food is becoming a staple in my house.

May I make a couple of comments? 1) I have used it for green bean casserole and it's fabulous. 2) reheated in the microwave with some leftover basmati rice and a dollop of indian eggplant relish is a wonderful quick lunch. 3) Make a roux, stir in a bunch of the leftover mushroom soup until it becomes really thick, add tarragon, then fill puff pastry pockets with it and throw in the oven until brown and crispy. Makes a wonderful appetizer / party snack.

I've just made this as my partner can't have cream or milk I was sceptical using coconut milk as I'm half Thai I use for curries as a more fruity sauce or deserts but OH MY WORD I had pure foodgasm trying this!! Just found your channel and I absolutely love it. The food is very versatile and simple yet looks super yummy. I'm not vegan and I will never be because my system doesn't digest many key vegan ingredients very well (allergic to nuts, problems digesting soy products and all beans etc.) but this really inspires me to cook and eat better.

I made this yesterday and it's DELICIOUS!!!!! I added a little bit of arrowroot dissolved in water to thicken it up a little and it was perfect!

I don't really like creamy soups (I'm more of a broth soup kinda girl) BUT if it is creamy, it needs to be thick.

Tried this recipe, but added peas and carrots instead of spinach and served with rice. So delicious!
