I love how you utilized potatoes to thicken it, I do it all the time! This sounds insane but I was craving something sweet but healthy so I just made a creamy blender "pudding shake" with a few small cooked golden creamer potatoes, a few dates, maple syrup, cocoa powder, a dash of cinnamon, cayenne, and some almond milk. OMG, crazy good!
Made this a few times now. Usually I add less veggie stock to make a thick and creamy pasta sauce. I love this recipe! It made the most amazing vegan “cream of mushroom” fora green bean casserole on thanksgiving. It was a huge hit. Thank you for your sharing all of your creations!

I made this last night and honestly it was one of the best mushroom soups I’ve had in years. The cashews were a perfect substitute for cream or butter. Had a ton of compliments on this, and it was soooo easy. Thanks so much!
This is a great recipe! As are all the ones I tried from your channel. I did sauté the mushrooms with butter, and added almond butter after blending the soup, to make it thicker. It was perfectly creamy yet not too heavy.
This is the most delicious creamy mushroom soup by far! I was a little skeptical of the potatoes at first, but it added a nice creaminess to the soup. The cashew cream was amazingly simple..and delishious! This is my favorite of shroom soups!! Thank you Wil, always delicious recipes!
This is LOVELY! A lot of vegan creamy recipes have so much coconut oil or milk that they're way too rich. This soup looks just perfect. Gorgeous filming too. Thank you Will. I'll definitely be making it
It’s always good to soak the cashews over night or boil them for 10-15 minutes. Not just to soften them, but It helps to leach out the lectins (toxins) in raw cashews that are very hard to digest before blending and consuming.
@@edonna7370 Google it and you will see that raw cashews are not sold in the US. All cashews are heat treated in some way before sold here (to remove the toxic resin in them).

I've seen on other cooking shows how u can stop the pressure from building is if u only put half the mixture in, and start with some low pulses before you get going. And to also not put the lid on tightly, to crack it, put a towel over the top of it, or if your blender has an insert in the center, to remove that and then put the towel over. Hope this helps!
I love this recipe and am looking forward to making this soup which is one of my favorites. My addition to my creamy mushroom soup is to make it a chunky soup by adding lots of chopped celery and water chestnuts.

Omg I made this today for lunch and it was sooooo good, the only thing I changed was that I doubled the mushhrom, added some miso paste and deglazed the pan with whisky
I love the sound of this soup. There was an amazing restaurant in Los Angeles called Menagerie years ago. I was devastated when it closed because I was obsessed with their cream of mushroom soup. The consistency is so smooth and creamy, just like a cream soup, but it's a little more liquid, which makes the soup much lighter. The golden colour of the mushrooms promises a great taste! Love it! 😍

I made the soup for the second time and I loved it. I just made a slight variation, I used zucchini instead of potatoes as well as I added a bit of nutritional yeast to the cashew mix and it was a real success. Thank you for this delicious recipe.
Hey Wil! Glad you're making a new video on this recipe, this has been my go-to way to make mushroom soup ever since I saw it on your channel! It's really good. Quick question: Why are you not directly pouring the veggies & stock in the blender after making the cashew cream? Is there any benefit to mixing the cashew cream with the rest and bringing it to a boil before blending everything together?
I *have to* try this...I ADORE my Vitamix also...got it on Craigslist a few years ago...barely used....young couple got it as a wedding gift and she was like "ewww...I hate cleaning it out"...whatever....I got a very nice deal! That thing will grind/blend up raw CARROTS into my smoothies too....amazing what it can do!

Hey Will. I've been watching your videos for a while now and I absolutely love them. Your passion for food really really shows. One thing I've found is that the cadence of your voice when narrating is rather stilted and robotic, which is nothing like your live segments! I've got one suggestion, if you'd like it - I suggest narrating the video in longer takes, so the rhythm of your voice sounds more natural. This is in opposition to your current method, which is short audio-bites for each video clip. Again, I really appreciate the content you create! Thank you! (I left this comment on another video a while ago, I've placed it here again)
I have to agree on the robotic part of it. It was rather off-putting for me at first. I'm kind of used to it now, but I think it'd be better if he'd say a few more words than just, "Stir...mix.." LOL! Also, wish he'd use the proper terms for cutting veggies like minced (for garlic), finely diced, roughly chopped, etc. And list "cloves" of garlic vs pieces of garlic or stalks of celery vs sticks of celery...I watch too many food shows apparently. LOL!
Made this last night with a few additions. I added a bit of broccoli and cauliflower. I didn't have cashews so used macadamia nuts and it was a huge hit for dinner. Everything came together so amazingly. super delicious. Excellent recipe. Saving this as our go to mushroom soup recipe.
This soup was awesome. I doubled the recipe. The half cup of cashews didn't thicken it enough so i blended another cup of cashews and water which thickened it perfectly. Thank you! Freezing it for granddaughter in college!

I have just made and tasted it - it is delicious! You can never imagine that it is 100% vegan. Idea of cashew cream is just great. Many thanks for this recepy - I am going to cook it often.
Made it today. Doubled basically everything so I could freeze portions of it for my elderly parents. I did add a couple small carrots, mostly so they wouldn't go to waste (caramelized them), and fresh oregano and dried thyme. Stick blender worked fine for the cashews and soup. Something in there added a slight hint of lemon, not sure what. But turned out great. And so easy.

You can try this right now. Just cook it a little longer, put the soaked and chopped Cashews right in while cooking and use a cheaper stick blender to get the job done. You don't need to wait until you can afford fancy equipment, just be creative. ;-) Edit: I see, Wil was faster than me. :-D

You can reduce the ammount or use a lite version.

Made it today. Doubled basically everything so I could freeze portions of it for my elderly parents. I did add a couple small carrots, mostly so they wouldn't go to waste (caramelized them), and fresh oregano and dried thyme.
Stick blender worked fine for the cashews and soup.
Something in there added a slight hint of lemon, not sure what. But turned out great. And so easy.

You can try this right now. Just cook it a little longer, put the soaked and chopped Cashews right in while cooking and use a cheaper stick blender to get the job done.
You don't need to wait until you can afford fancy equipment, just be creative. ;-)
