How To Make Thumbprint Cookies

- These classic thumbprint cookies are made with a simple sugar cookie dough, rolled in sparkling sugar, and then indented and filled with your choice of jam!

Ingredients
1 cup unsalted butter softened to room temperature (226g)
1/3 cup sugar (70g)
1/3 cup light brown sugar, tightly packed (70g)
1 large egg yolk
3/4 teaspoon vanilla extract
2 1/4 cup all purpose flour (280g)
2 teaspooons cornstarch
1/2 teaspoon salt
1/2 cup sugar for rolling (optional)
1/3 cup jam or preserves flavor of your choice -- I used raspberry preserves for this recipe (105g)
Instructions

00:25 Place butter in the bowl of a stand mixer (you may instead use a large bowl and an electric hand mixer) and beat until creamy.
Scrape down the sides of the bowl, add sugars, and beat, gradually increasing mixer speed to medium-high until ingredients are well-combined (about 30-60 seconds).
Add egg yolk and vanilla extract and beat well.
01:44 In a separate bowl, whisk together flour, cornstarch, and salt.
02:16 With mixer on low speed, gradually add flour mixture to wet ingredients until completely combined. This dough will seem very dry and crumbly, so be sure to pause occasionally to scrape the sides and bottom of the bowl. If it starts to strain your mixer you can use your hands to finish working the dough together.
02:56 Scoop cookie dough into 1 Tablespoon-sized balls and roll very well (so that the dough is round and there are no cracks/seams in the cookie dough -- this will help keep your thumbprints from cracking).
Roll in granulated sugar (if using) and place on a wax-paper covered plate or small cookie sheet. Use your thumb or the rounded back of a teaspoon to gently press an indent in the center of the cookie dough. Repeat until all of the dough has been used.
Transfer cookie dough to freezer and chill for 30 minutes.
04:54 Once dough is done chilling, preheat oven to 375F (190C) and place your jam in a small microwave-safe bowl. Heat briefly (about 5-10 seconds) or until jam is not hot but is no longer firm and is easy to stir.
Spoon jam into each thumbprint, filling each indent to the brim.
06:05 Once oven is preheated, place cookies at least 2" apart on a parchment paper-lined cookie sheet and bake on 375F (190C) for 11 minutes or until edges are just beginning to turn golden brown.
Allow cookies to cool completely on baking sheet before enjoying.

Normally I don't post but I saw a how to on thumb print cookies and followed a famous UA-cam baker channel (P.K) and followed exactly as instructed. It came out pretty bad, I jumped into this episode and followed through and came out beautifully! Dough was not cracking as other recipe . Thank you! Fun fact when I was 18. I just figured a few things out and I mixed what I wanted together like butter, eggs and flour with sugar and made them perfectly fine. As long as you have the consistency of dough they most likely will taste great
Made these last week and they were so incredibly buttery tender and yummy! All the steps and techniques that you shared here helped made it impossible to eat just one!
The only slight change was after rolling it in sugar and creating the thumbprint indention was leaving it in the freezer for an hour. And the structure was perfect for adding 1/4 teaspoon of strawberry compote into the center. I found the sweet spot for me was to let the outer part cook til it had an exterior crunch, but the middle w filled w the jammy middle. Was EXACTLY how I had hoped it to be and can't wait to try it out next w a raspberry-strawberry compote filling!
If anyone is on the fence of trying it out, definitely go ahead and do it!

I rolled the dough balls in the sugar. After they were baked, the sugar melt and spread out. Although I used the spoon to smooth out the edges, they still had the rough edges. Is this a common problem when rolling dough in the sugar?
Melt in your mouth delicious. The cookies also came out great! Seriously, we made this exactly as listed and they were light, and delicious. We filled ours with apple jelly, strawberry and fig jam. Try apple jelly sometime -amazing!

I typically try to save them for other baking that I have to do but sometimes I just don’t have anything to use them in. They are also great for making meringue cookies. 😊

Can I freeze the dough in advanced then let it thaw out just a bit where its just cool enough and then make the thumb indents to fill them in?
To reduce the risk of cracking I recommend making the thumbprint before freezing.
Could you bake them without adding the jam first? And fill after they're baked?
That should work just fine. The centers will puff up when baking, so within a minute or two of the cookies coming out of the oven, you will want to make that indent again. 😊
I made these & the cookies were delicious I used the Smuckers brand Raspberry Jam I don't know why but I did not like the taste of the jam it tasted real cheap like from the dollar tree what do you recommend I should have used or which brand did you use? My mom enjoyed it though.
You can find good ones at a local farmers market, or try an organic jam. Some people like to use the brand Bonne Maman.

This is a weird question I know, but does the filling spill out if you position it sideways? For instance, if you wanted to display them at an angle, stacked against each other.
It will still be tacky to the touch, but this filling in particular should solidify enough to store at an angle. :)

You can let it rest in the refrigerator overnight. 😊
I want to make strawberry ones. Will strawberry jam work and taste the way I want? Lolol did u say microwave jam first then bake?
As long as you like the flavor of the strawberry jam it will work great! 😊 Yes you microwave the jam first to make it a little easier to spoon the jam. Enjoy!
Just in case you wondered, if you leave out the cornstarch because you're a numpy, you get flat cookies with holes in the middle where a pool of gooey jam has stuck to the pan. I told my husband he could have the entire first pan full. He looked like a dog at a barbeque when someone accidentally drops a burger. It was almost worth the loss. LOL
The cornstarch helps prevent these from spreading too much, so yes, definitely don't skip it next time 😊

I was planning to make this today , then my mixer broke. What brand of hand mixer are you cooking?
This blue one is a KitchenAid, but my favorite hand mixer is made by Hamilton beach.
I don't have a hand mixer, will I still get the same texture if I use a spoon?
It may be a little difficult to do by hand. You need the butter to be creamed pretty well. The batter gets pretty thick towards the end so it would be quite the arm workout but it’s worth a shot. Let me know how it goes. 😊

You can certainly save your whites if you choose to, I just don't eat eggs too often. Alternatively you could use those egg whites to make meringue cookies! ☺
