- In an unassuming building in Galliano, Louisiana, Alzina Toups makes some of the best food you’ll ever eat. But while her Jambalaya, fried shrimp and other garlic-laden Cajun staples are sure to bless your tongue and break your heart, they aren’t so easy to come by. Alzina doesn’t take walk-ins, and reservations-which book up a year in advance-can only be made by reaching her by landline.

If you want to go on a trip in the area, well, flight tickets and such are cheaper the earlier you buy them I hear. If you looked forward to it you'd surely remember, or just write it up on a calendar or in a notification.
Y'all would love it here. We got good cookin' everywhere, and it ain't really fancy! Stop by and get some po-boys from the little shop, or some jambalaya from the gas station everyone stops at for a quick and tasty meal... You don't know what it feels like being a part of Cajun Country, and I couldn't be any more proud of my heritage and the people I'm surrounded by. If you wanna feel like you're at home when you're hundreds or even thousands of miles away, book yourself a flight to New Orleans and go visit the French Quarter for the day. We'll make ya feel welcome 🙂

There’s only so many ways to make a gumbo. And even if it’s amazing or boring, it’s still just a gumbo. There’s no magic ingredients that she could possibly use to make it worth a 1 year wait.

I see complex biological life and complex chemical compositions in a complex space, along with universal truths. To me this is proof enough, I see a watch...was the watch created? I knew her when I was little! My Grandmother, Rita Adams Ledet was good friends with her before she passed away. She even had one of her recipes published in Mrs. Alzina's cookbook. It's so cool to have came across this video. Brings back so many memories of making holiday trips back to the bayou. I gotta show this to my mom. 😊

Mrs. Alzina is survived by her son: Anthony Toups (Rebecca Toups Danos); granddaughters: Tish Toups and Jenny Toups; great grandchildren: Anthony Goldsmith (Shea), Brett David, Alyssa Matherne (Dylan); and Camelia Williams and Jax Matherne.
Mrs. Toups was preceded in death by her husband: David Toups; parents: Horace Guidry, Sr. and Anna Lombas Guidry; son: Joey Toups; brothers: Walter Guidry (Mary Joyce) and Horace Guidry, Jr. (Audrey).
She will always be remembered for her love of family, cooking, traveling, and God.

I'm of Acadian background (Northern Cajun's) The food is a slight different and the culture But both have wonderful things to share We have many Native Canadian twist foods and slangs Cajuns have River / Seafood and a kick of spice that dates back to the carribean and Africa ..In the east coast of Canada There is a place in Nova Scotia You can camp out at night drinking beer And eat clams fresh from the beach not 300 ft away while you lay back and look up at the thousands of stars so clear We seen satellites moving across the sky. With the ocean sounding off the shoreline.. Next morning you jump in the car And head over to the local bakery Everything hand made The coffee was pretty good But the baked goods were a top notch Swiss milk chocolate donuts was tossed cocoa powder we sat on the bench and watched smile after smile and widened eyes at first bite

Cajuns are of Acadian ancestry, but the food and culture of Cajuns is multicultural just like the rest of Louisiana. The influence in the food is Acadian, French, Spanish, German, African, Caribbean and Native American.

@@freakyflow Yes, but the Acadians that arrived in Louisiana came in the 1700’s before there was all of that vast multiculturalism in that part of Canada you speak of and they brought influences to Louisiana that was primarily of Acadian French based origin. It was this that mixed with the other influences in Louisiana to create modern day south Louisiana cuisine (which is mistakingly called Cajun, because it’s not only Cajuns that cook it, eat it and created it).
I’m gonna repeat something since some people have been talking about Gordon Ramsay. He would probably love to learn tips from her. He’s always trying to broaden his tastes and expand his cooking experiences. He recently made a video in Hawaii learning how they use spam in their traditional dishes. He shows a ton of respect to those who aren’t conceited about their cooking capabilities.

Wow, she reminds me so much of my wife’s now deceased Aunt Bertha. Bertha’s kitchen was the center of the family life. There was always some good Cajun food cooking in the pot. She was so good to us, we really miss her.
