Hi Edna. Thank you for uploading this tutorial in detail. I hope you can help me. I made a mistake in measuring my tylose and may have put 1 teaspoon more than required. Now my gumpaste is hard to work with. How can i fix this? Help please. Thank you.
You can try adding another egg white and kneading it into the dough but I would prefer to do a softer mix of the gumpaste and kneading it into it. You can even do half of the recipe.
This was an excellent tutorial. I learned a lot.I will have to make it keto but I can not thank you enough for making this video. You are an amazing baker!

I will use this gumpaste for making flowers (I think it will work good). Last question: do you scrap from teaspoon the extra Tylose or just leve it as much as it on? I learn to made roses watching your tutorials. Love you and wishing all the best.
I honestly never tried to make my gumpaste with a whisk. My guess is that it might get all stuck in the whisk and it might be harder in the machine. If you try to test it, make sure to either mix the tylose manually or if you decide to use the whisk, make sure to move fast getting the dough from the mix so it doesn't dry.

Edna De la Cruz thank u sooomuch for the reply. Wot I actually want to know is weather i can store it in room temperature? I live in qatar and its really hot here so what should i do plz
@@inshiranizam1637 You need to be careful about heat. Gumpaste is harder to work in hot environments. I work with it in a room with air conditioner. Yes, it's best for it to be stored in the refrigerator if you live in a hot area. Sugar and heat is never a good mix
it's a great video, I really like it! You say that the gumpaste products must not be put into the fridge as they melt. But if you've decorated your cake with the flowers, you normally store it in the fridge before it is delivered to the client, don't you? it means that the whole decoration will get soft or damaged?
If you must refrigerate the cake, then don't put the gumpaste decorations on yet, but wait until it is out of the refrigerator or delivered... Just arrive a few minutes earlier to put the finishing touches on.
I don't place my cakes in the refrigerator once they are covered. They sweat too much where I live and gumpaste details can melt. Some people put the cakes in boxes and wrap them in plastic to avoid this problem but I work with wedding cakes and doing that is a bit difficult. I work with American Buttercream and it does well outside the fridge. I just make sure I have AC running. The fillings use are usually to stay outside the fridge overnight.
You won't have gumpaste if you don't use tylose. Tylose is what gives elasticity to gumpaste. You can use CMC which is another name used for this type of gum.
Here is the full recipe and tips link. You will use around 2 pounds but it can be less or more depending on humidity around you. www.designmeacake.com/tylose-gumpaste

Do the flowers remain hard or soft your gumpaste recipe?
It's normal gumpaste, they dry hard.
Edna love your tutorial, thank you for sharing. I'm new in the cake business, and I want to learn all that I can. Thank you. God bless
My pleasure!
it's a great video, I really like it! You say that the gumpaste products must not be put into the fridge as they melt. But if you've decorated your cake with the flowers, you normally store it in the fridge before it is delivered to the client, don't you? it means that the whole decoration will get soft or damaged?
Hmmm, good question. 🤔
This is fantastic! Thank you so much for the tutorial! 😊
My pleasure!
Can I substitute the tylose? And what I can substitute?
CMC is the only substitute that you can use.
What would be a great subtitute for tylose ? What will happen without tylose
You won't have gumpaste if you don't use tylose. Tylose is what gives elasticity to gumpaste. You can use CMC which is another name used for this type of gum.
Thanks you, please tell me how many quantity of icing sugar use for that gumpast mixture .
Here is the full recipe and tips link. You will use around 2 pounds but it can be less or more depending on humidity around you. www.designmeacake.com/tylose-gumpaste
