  • I love this gumpaste recipe and I have used it since I started making cakes and to this day is my favorite. This tutorial is very detailed for those who never made gumpaste before. Tylose is my favorite gum to use for making gumpaste. I have use others but this one still is my to favorite.

    Thank you so much for this tutorial!!! I tried your recipe after failing with another gum paste recipe that ended up with lumps of tylose and the paste was way too stiff.
    Your recipe is very easy and foolproof, plus your explanation was on point, I had no issue in any step and was done in only a few minutes. I only made half the recipe and used 75 grams of egg whites and everything turned out great! Thank you!!

      @@ruzaikanajeemdeen6059 I will be honest, I don't ever do half of the recipe. I know people that do. All you have to make sure is that if at the royal icing stage you feel the mixture is too dry, you can always add a bit more egg white before adding the tylose.

    Thank you for once again a great tutorial,in my case I mostly use the eggs white that come in the carton (eggs beaters?) How should I mesure this to have the equivalent?

      They have their own measurements on the carton. Make sure it's 4 egg whites. Make sure to shake the container well also. I never used them and heard some people that had success with it. Let me know how it goes!

      Yes you can, add the color at the royal icing stage.

      Don't store gumpaste flowers in the fridge, They will melt. Place them in a box with paper and store them in a dry area

    Excellent tutorial!!!! Dear Edna I will make the half of the recipe to try it. Because I am placed in Europe (Romania) I can't find Cisco so my question is can I use margarine? I will use this gumpaste for making flowers (I think it will work good). Last question: do you scrap from teaspoon the extra Tylose or just leve it as much as it on? I learn to made roses watching your tutorials. Love you and wishing all the best.

      Fondant es para cubrir tortas. El sugar paste y el gumpaste es basicamente lo mismo. Se usa para detalles y flores.

      You always have to make sure you seal it well so it doesn't dry.

      I don't usually add tylose to fondant unless I am making it myself or the fondant I am using has a strange consistency and I need to fix it.

      A stand mixer is your best bet. If you use a hand mixer just make sure it can handle the dough. Also, you have to keep in mind that the royal icing stages require around 7 to 10 minutes of mixing.

    I’ve bought gumpaste before (I know I know this was before I found your videos) and I reuse that airtight container to store mine. Gumpaste and fondant can be so intimidating if you are new to the world of cake decorating until you conquer your fear. Thank you for your videos.

      I used to buy gumpaste too. I think when you start is good to get to know the product and how it feels. Eventually you find out what works best.

    I haven't got a paddle with my mixer so can i use the wisk instead

      I honestly never tried to make my gumpaste with a whisk. My guess is that it might get all stuck in the whisk and it might be harder in the machine. If you try to test it, make sure to either mix the tylose manually or if you decide to use the whisk, make sure to move fast getting the dough from the mix so it doesn't dry.

    Hi should i store always in the refrigerator or after one hour i can place it in a container and keep it always out of the fridge

      If I am working with it, I leave the amount I use out of the fridge with no problem. It can stay out of the fridge but in the fridge will last for around 6 months. I tend to grab the amount I need and leave the rest in the fridge.

    Great tutorial! I made this when you puta out the first video. I knew 12 tablespoons was too much tylose. I figured you made a typo.

      Well, I did mention it was 12 teaspoons but that nobody listened..lol The typo won! I even put annotations on top of the typo and still people saw the typo more than the annotation. I gave up! lol But The video was old and I wanted to do something better. Back then You Tube allowed only certain amount of length in the video and these days they let me do longer videos so I can give better explanations :D

    Ma’am, I want to know how I can correct my gum paste. I did not knead my gum paste after making it in a stand mixer yesterday. And today it is very very sticky. It has been a day since I made it, can it be corrected by adding icing sugar ?

      Add sugar and see if you can fix it. I never let it stand like that for days but is worth trying.

    Hi. I am not sure if you still reply to questions about your gumpaste. But i am going to try. I used the whisk/beater attachment instead of the paddle attachment in making your gumpaste. Can i still use my gumpaste or do i need to start over? Please help. Thank you.

      You can use x-large or jumbo easily. X large is 2.25 ounces and jumbo is 2.5 ounces average. But if you are not sure, you can see in the video that it's not a difficult fix.

      I let them dry in an open space and once they are fully dry you can store them in a dry box. Make sure it's not in a hot or humid area. Well stored they can last for years.

    Does it get moldy after it has dried up? How long can you store it after drying the gumpaste figures/flowers?

      It doesn't get moldy. I live in FL and gets humid here. I just keep the AC running as sugar doesn't do well in heat. I have never had issues with mold but if you have issues with mold in your area just make sure to keep it stored in an area that is not hot and it's dry. I have pieces that are more than 10 years old that still look as pretty as the first day I made them. You have to make sure you store them properly. Let them dry fully in an open space for at least a week and then you can store them in a box. I prefer using carton as it breathes and put it on a bed of foam.

    it's a great video, I really like it! You say that the gumpaste products must not be put into the fridge as they melt. But if you've decorated your cake with the flowers, you normally store it in the fridge before it is delivered to the client, don't you? it means that the whole decoration will get soft or damaged?

      If you must refrigerate the cake, then don't put the gumpaste decorations on yet, but wait until it is out of the refrigerator or delivered... Just arrive a few minutes earlier to put the finishing touches on.

      I don't place my cakes in the refrigerator once they are covered. They sweat too much where I live and gumpaste details can melt. Some people put the cakes in boxes and wrap them in plastic to avoid this problem but I work with wedding cakes and doing that is a bit difficult. I work with American Buttercream and it does well outside the fridge. I just make sure I have AC running. The fillings use are usually to stay outside the fridge overnight.

      You can use it but sometimes if you see the dough is not smooth, the rest time does help with that. Give it at least a few hours even if it's outside the fridge. Make sure it's well sealed.

      The recipe I share is the one I use and love. If you are working in an area with a lot of humidity I would suggest to make sure you are not working in a hot area. Make sure you have AC running and if the humidity still high then you might need a dehumidifier.

      Some people do the exchange and seemed pleased with it. I can't say since I haven't tested it myself but I love this gumpaste recipe.

      You can try adding another egg white and kneading it into the dough but I would prefer to do a softer mix of the gumpaste and kneading it into it. You can even do half of the recipe.

      Yes you can half the recipe. Place it in the fridge to rest. You can bring it to room temperature or do 10 second increments in
      the microwave to bring to room temperature.

      @@inshiranizam1637 You need to be careful about heat. Gumpaste is harder to work in hot environments. I work with it in a
      room with air conditioner. Yes, it's best for it to be stored in the refrigerator if you live in a hot area. Sugar and heat is
      never a good mix

      I leave them to dry fully in an open space for the least a week (depending on humidity). You want to make sure they are fully dry before storing them.

      Take it outside the fridge and let it get down to room temperature or just warm enough that you can knead it until it softens.

    Do you use pure powdered sugar? Here we have 2 types. Pure Icing sugar and Icing sugar mixture ( powdered sugar + Corn starch ) Thanks.

      It's best to use powdered sugar with less cornstarch. But you can test the other one to see how it works for you. Just keep in mind to follow the tips I wrote with the recipe in the website so you get awesome results.

      Usually confectioners sugar will come in a 2 pound bag. I found bags in amazon that are 4 pounds but you only need around 2 pounds for the recipe. amzn.to/2xiUBLj

      noyflipz 10x refers to confectioners, powdered or icing sugar (all the same thing). 10x means it’s been crushed ten times over to make it powdery.
