I have always preferred to work with buttercream for flowers and on occasion modeling chocolate, however, I have a wedding cake coming up in August and it is so hot and humid that I am not happy with the results of modeling chocolate. I'm so excited to try out your gum paste recipe! Burgundy is also my favorite color of Peony! Thank you for sharing!
Thank you Jodi! Gum glue is 1/8tsp CMC mixed with 45g boiled then cooled water. Refrigerate overnight then it’s ready to use in the morning. Let me know how the flowers go!
You mention in your videos to roll the sugar paste to size 5 on a pasta machine; what is the equivalent in mm for those of us who don't have one? Love your work too.
It should be thin enough that it's translucent. When you have your hand behind the paste you should be able to see the outline of it. I think about 1.5-2mm

Hi Zahara, Thank you! Yes I do store it in the fridge unless I'm using it. You can store fondant cakes in the fridge, I usually will put them in a closed corrugated cardboard box to prevent excessive humidity.
Hi, could you please give the link for your silicone mat you roll out and cut out on? You put very little corn flour on your mat so it doesn't dry out so much. I can see the link for the sponge mat but not the silicone mat. I have tried several mats and granite slabs and I haven't found one yet that doesn't need corn flour to stop flower paste sticking. Thanks

Oh arranging is definitely a struggle :) it comes natural with real ones but to think ahead and make everything at first... not easy I always struggle with planning and sketching too... I'm such a flow person creativity wise...

Have you experimented with using something edible instead of a foam ball? A covered rice krispy ball maybe? Or a cake pop?
I've never tried! I think it would need to be something lightweight and sturdy so I'd bet the rice krispy would work, let me know if you try it!
I find my petals stick when I used the frilling tool any tips love your videos
Rub a tiny bit of shortening on it. If it’s still sticking just leave your gumpaste petals out for 30secs to dry out slightly before frilling

Instead of using styrofoam, would it be a good idea to make a ball of gum paste and let it dry?
That can be a bit heavy and the wire may not support it well.

you can use either! I find glue helps adhere a bit easier but water works great too
