Gumpaste with Gelatin, When to use Gumpaste, advantage and storage Vlog 43 by Marckevinstyle

  • GUMPASTE OR SUGARPASTE WITH GELATIN
    Ingredients
    1 TBSP Corn Syrup
    3 TBSP Water (Cold Water)
    1 TBSP Gelatin Powder
    5-8 Grams Vegetable Shortening (I use Crisco or Puratos)
    2 Cups Sifted Confectioner/ Powder Sugar
    1/2 to 1 TBSP Tylose Powder or CMC Powder
    3/4 to 1 Cup Sifted Confectioner Sugar (for kneading purposes only, at times you wont be able to use all of this, the goal is to make the paste firm only, not sticky and have clay like consistency, humidity is also a factor)
    PROCEDURE
    1. on a microwavable container (if you dont have microwave you can do this on a stove using double broiler or direct heat, be careful not to burn or boil the gelatin) measure and combine corn syrup, 3 tbsp cold water and the gelatin powder, set aside to bloom first (meaning the gelatin absorbs the water) before you heat and melt the gelatin.
    2. Mix the 2 cups of sifted confectioner sugar with 1/2 tbsp tylose powder and mix well.
    3. after heating the gelatin (not boiling, should just be melted and clear) for 30 to 45 seconds, add the shortening and mix, to incorporate air and cool a little, but still warm, then pour into the sugar mix or dry ingredients.
    4. mix well and knead.
    5. Add additional confectioner sugar for kneading purposes only, take note that you wont use all of the additional for kneading purposes only =)
    Storage:
    Paste or dough form
    Airtight container placed inside the refrigerator or chiller, it last 3 months inside the ref and 6 months inside the chiller ( i prefer wrapping on plastic and putting on another airtight container or zip lock)
    If you want to use it take a small chunk of what you need for the project and let it thaw at room temp for 30 minutes to 1 hour, if youre in a hurry you can microwave it but for 3-5 seconds, on medium high, repeat until soft, then knead with shortening =)
    Dry form (made into flowers or figures)
    store in dry container protected from humidity and this will last for 1-2 years

    The gelatin was 10g in 1 pack. As your weighing scale tells. From 34 it went to 44 as you pour the gelatin. Just correct me if Im wrong. Watch again the video. 6:08 to 6:18

      Hi thank you for your comment, one tablespoon of gelatin is okay, or you can also use one pack of the gelatin from ferna or knox :)

      I believe its 30 grams per pack :) it's just that I forgot to tare it back to zero when I poured the gelatin powder hehehe human error lol :)

      Hi how are you, I suggest corn syrup because if you use glucose it will be rubber like in consistency it will not get that hard

      Yes you can although glucose is more sticky and firm than corn syrup, if you wish to use glucose add 1 tbsp of cold water on the recipe :)

    I tried this recipe and it works great for rolling out flowers and such, but doesn't work well for like sculpting animal shapes and such. It doesn't hold its shape but becomes a glob. Any suggestions?

    I'm going to try this. So far every gumpaste recipe I've tried crumbles and you see cracks in everything I make. Can't figure out what I did wrong with 3 different recipes. About to give up here. I will try this.

      I had the same problem too. It can be fixed. Take a good handful of the bits and add some butter. Small amounts until it joins and stretches. Don't use margarine or any other fat. It works. Good luck. 😊

    Hello, I was wondering if I can put gumpaste under a gelatin layer, do you know if the gumpaste will actually dissolve under a gelatin layer or stay hard?

      If it's wet it will definitely melt but if the gelatin hardens fast before the gumpaste melts then it's good.. I suggest the gumpaste should be hard and dry and have a little thicker petals or leaves

      Hi CMC and tylose are both gum powder I prefer using tylose :) it helps in binding and making your paste hard when dry

    Chef, if ipapatuyo ng husto after gumawa ng flower using this gumpaste, di ba sya matutunaw po if nasa chiller na sya naka design sa cake po? Salamat po

      Hi normally gumpaste should never be placed inside ref or chiller too long pag gawa na or dry na kasi it melts, pero in my experience pde naman sya, but if the condition is super humid, pls dont because it will really melt :) like when its raining or so, at times na humid I use MACO paste
