Roasted Chicken for Meal Prep (easy & Delicious!)

Ingredients
1 whole chicken, spatchcocked
Balsamic glaze
4 scallions, thinly sliced
The Chicken Seasonings:
2 tablespoons olive oil
2 teaspoons salt or to taste
freshly cracked black pepper to taste
1 teaspoon sweet paprika
1 teaspoon ground coriander
1 teaspoon ground cumin
1-2 teaspoons crushed dried oregano
1-2 teaspoons garlic powder
Instructions
Preheat the oven to 425 °F, 220 °C.
Place the chicken on a baking tray, make a few slices on the breast and thighs and drizzle with oil. Add all of the seasonings (breast-side up). Flip over and season with salt and pepper and then flip it again so that it roasts breast-side up.
Roast the chicken on the center rack for about 55 minutes or until the internal temperature reaches 165 °F.
Allow the chicken to cool and then remove the skin. Shred the chicken meat and place it into a large bowl.
Add the scallions, juices from the pan, and 3-4 tablespoons Balsamic Glaze. Toss together and taste. Adjust seasoning if needed. Kali Orexi!

When I saw the paprika and coriander, it made me think of my combo.... when I was a kid, we used to go to a fried chicken place that was a local chain. It still exists, but I don't know if it's as good as it used to be, and I'm 10 states away. Anyway, I have been able to duplicate the flavor and color by using Goya seasoning with saffron and coriander. But I don't deep fry, and I don't think I could ever get the crispiness of their chicken, which was so lightly breaded, so I just have to continue dreaming of it. 😅

This looks great. I sometimes see whole chickens in the reduced section at the supermarket when they're on the sell-buy date and this would be great for that.

What is the board you have on your lower rack? What is its purpose?
It's actually a ceramic floor tile that I use as a pizza stone. It retains heat so it is wonderful for baking bread, pizza, and even keeps pie crusts crisp. I keep it in there all the time, even when the oven self-cleans :)
