Dear Dimitra I just made the keftedes and I have to say that they are the BEST I have ever made. PERIOD. I always loved to eat them as a child every time my Yaya made them but I dread frying because of the extra calories (and of course cleaning up after). Your recipe packs all of the awesome flavors and aromas of the traditional Greek keftedes without all the extra work. I highly recommend to leave the mixture in the fridge for a few hours or overnight. The result is amazingly delicious 😋 😍 👌
I tried this last night. If you have a self cleaning oven, broiling meatballs is manageable outher than cleaning the cookie sheet. I find frying with a lidded sauce pan far easier to clean.

Hi Dimitra! Not to be a smart ass or know it all, but try lightly sautéing the garlic and onion before adding it to the meat. You’ll see a major difference. I’m Greek American and a chef ;) I worked in Greece for years at the Grande Britain in downtown Athens. we used that method to prepare the keftedes for the buffet. Filakia polla.

I don't know what it is with koftes, unless they are fried and the whole house stinks for a week - they are not koftes! 😆 Nice job done with grilling (broiling) them!

Hello Demetria, my late father used to use chopped Mint, oregano garlic onions and saltine crackers instead of breadcrumbs. He would cook them in a pan on the stove in oil olive oil of course. Miss him dearly and his meatballs he called him Greek meatballs. I love watching your videos, Stay safe, Greg

Did these and they were great, _however_ I've never used the broil setting before and wasn't sure whether to set it to high or low..! So I chose low and left them for 12-13 min. I would've liked to cook them for longer, but they were starting to make smoke and I didn't want to burn anything.

BTW I've had so many trial and error making tzaziki for years and now I know your recipe back and forth and its fantastic. Its always a hit in our house.

I always add chopped mint with the parsley. GREAT recipe, fantastic taste. I also put feta and keftedes on good french bread roll for a tasty sandwich with tzaziki or skordalia.....
I use lamb mince, mint, flat parsley, grated carrot, potato & onion, egg, breadcrumbs, season well let rest for an hour or 2, then roll them up, shallow fry them up , whilst using canned tomatoes in a separate pot bring to boil skim the skum, then add meatballs to sauce simmer away until cooked add a little more breadcrumbs to sauce to slightly thicken turn off & rest, serve with burnt buttered macaroni, and cheese of your choice my recipe is the BOMB…..
I plan to make these tonight, using ground lamb, and serve with your spinach pilaf and tzatziki. I initially was going to fix your updated spanakopita, but really don’t have space to store it - I live alone, and can’t possibly eat it at one sitting 😃
Delicious but the “no splatter” was misleading. Just finished wiping my oven down, after spraying it with “easy off”😢😂, unless it was because I used organic grass fed beef?
Made this method and recipe today. With all due respect, not the best recipe for "Greek keftédes". Missing the key ingredient that makes them "Greek", without it, they're basically a basic meatball. "MINT". Also, half ground beef, half ground pork is much better than just straight up beef. Also, lightly sautéing your diced onions, garlic and herbs goes a long way. Nothing personal, but as a Greek that has eaten ever kefte you can think of, these are hardly "Greek". I haven't tried any of the other recipes, but I give these meatballs, which is what they are, "C".

My mum used to use day old Vienna bread which had been soaked in water and liquid squeezed out instead of breadcrumbs, onion, lots of garlic and parsley and of course beef mince. The onions and garlic were never sautéed like people are suggesting in the comments but I guess when mothers are working, cleaning and taking care of children they don’t quite have time for the extra steps. But personally I like that zingy garlic flavour. Oh and no mint was in them either. Best meatballs I’ve ever eaten. The flavours in your recipe are very reminiscent of my childhood, great job Dimitra!

Some people add lemon juice or vinegar instead of milk but you are right it's milk that makes the meat so juicy

Great to use some butternut, sweet potatoes or cauliflower cooked and mashed instead of breadcrumbs. Just another depth of flavour. YUMMY
