Very interesting that I have never done the pumpkin like that! At the risk of being messier, I just oil the whole thing and throw it in the oven! Done it for years! I can get five batches (about a cup to cup and a half each) out of a big Jack O Lantern type . This looks really yummy!
I remember my mom collecting S&H Green Stamps & redeeming them for lots of goodies. Then they came out with Blue Chip stamps & my mother used them to redeem a beautiful China collection with 12 place settings plus serving bowls / platters, etc. I have since inherited this beautiful China collection.
I’ve never messed with making my own pumpkin purée because I wasn’t sure where to start… thank you for showing this and how simple it is. I’ll have to give it a try now!
This recipe brings back memories. My mom used to make pumpkin snack cake just like this recipe. It was a great snack when we came back from school. I used to cut the pumpkin like you had done on this video, but nowadays, I just throw the whole pumpkin in the oven at 350° until it is soft enough to pierce with a fork through the pumpkin easily and feels a bit mushy! 🙂

All I do with my squash(pumpkin potato etc) is wash well cut them enough that they fit on my sheet and bake. I scrape after it’s been cooked usually when it’s still a bit warm (helps the hands and comes away from the peel better) everything tastes the same and no one knows. It saves time and you usually get less food waste and you can still put everything in compost.

I remember going with my grandma and my mom to cash in green stamps at the green stamp store. I collected my own when I married and used them faithfully. It was like Christmas each time! We got a glass percolator, chenille bed spreads, wicker clothes hamper, and so many great things. I miss the green stamps! I wanted to ask about using Jack o lantern pumpkins for cooking. I know they don’t have the same flavor as pie pumpkins. Our local grocery had all their jack o lantern pumpkins for .99 each and all I could think of was all that food!! I bought all 15 of them, to bake, dehydrate, and powder to add to baking recipes, pancakes, smoothies. If I reconstitute some to make a purée from the powder, would it make a decent pie or cake? And would these pumpkins make decent pie or cake if I purée some of the baked pumpkin and freeze it in portions for recipes? Thank you so much for your help! I’ve learned so much from you! Yes you can! Just keep in mind that fresh milled flour sometimes needs a bit of added liquid. You might have to add a tablespoon or two of milk if the batter looks too thick. Love, Mary
I’m inquiring about your butter recipe 4 years ago. I am in the process of trying it now. How long does it take to turn into butter ? I’m using a kitchen maid mixer and at what speed. Thank you for any help
It really depends. You’ll want to start whipping the cream and as it forms a solid and when you see white liquid pooling in the bottom of the mixer it is probably done. If you continue to whip it, you’ll whip air into the butter and then you will have whipped butter. ❤️🤗❤️

I think it is often difficult to listen to your presentations because they are unnecessarily long - side stepping into needless chatter. Sometimes I feel you talk down to your listeners as if we have no knowledge or common sense - as if we are children. I do not intend to be mean - just giving some feedback.
I understand completely. For approximately the last 25 years, I have taught traditional cooking to complete beginners. It is not uncommon for me to have to teach my students how to turn on an oven. So if sometimes I sound very basic, please forgive me and understand from where I’m coming from. I would never want to talk down to people or insult someone’s intelligence. I am very much geared to the beginner, but the good news is there’s so many cooking channels on UA-cam that there are people who share recipes that are more geared to experienced cooks like yourself. Wasn’t sure if I understood, can one use einkorn flour instead of spelt? I have einkorn already and spelt has a high gluten content
Yes, you can use einkorn flour but you will have to reduce the butter a bit. Remove 1 tablespoon of butter from the 1/3 cup. Love, Mary

Yes, you can use whole grain spelt. Just pull back a little on the butter. Maybe remove 2 tablespoons worth from the original measurement.
