Hi Sweet Mary. Here is my NO FAIL PIE CRUST RECIPE: 4 Cups flour, 1 3/4 Cups shortening (I use butter or lard COLD and cut in small chunks) 1 TBSP Sugar, 2 tsp Salt, 1 TBSP Vinegar, 1 Egg, 1/2 Cup very cold water. Instructions: Using a fork mix first 4 ingredients, DO NOT OVER MIX. If you over mix you will not end up with a flaky crust. In a separate bowl combine Vinegar, egg and COLD water. Mix it up then add it to your dry mixture. Do not over mix. I use my hands but stop when all is moistened. Divide into 3 balls. Can freeze the 3rd one. I triple this recipe to make 9 crusts that way I don't have the mess every time I want to make a pie. So easy. Enjoy. This recipe was given to me about 40 plus years ago from my now deceased mother in law.
Little House on the Prairie was my favorite collection of books when I was a child! I’m 62 years old now but few years ago I bought the entire collection to have forever. I had no idea that there was a cookbook.
Hi Mary, from the UK. My Mam used lard for her savoury pastry - she was born 1927. Butter and lard together for pastry is what I was taught at school. My Dad found pastry made with lard only, was less rich and didn't give him indigestion. Also she didn't bake blind. Instead she cooked on a tin plate placed on top of a baking sheet, to catch the heat of the oven on the underside of the pie and therefore cook the pastry - it was never soggy. Once it looked cooked through she placed it lower in the oven until she felt it was long enough to cook the base pastry. As it was a gas oven it was much cooler in the bottom of the oven. I lived in a Mennonite community . Pilgrim Fellowship. In Meadville PA. Home schooled in the 80s. Mom.canned and quilted. I owned the whole set of the Little House of The Prarie. 🙂
We have the Little House cookbook and we bought it “used” many years ago! When my daughter was young she loved to make Ma’s Butter Cookies. They are the best!
I don't recall my grandmother (born in the early 1890s) ever pre-baking her pie crusts; and they were never soggy. She did use lard though (and dotted her apple filling with butter). I've forgotten the brand name of the company, but the lard came in a white and green box. My dad used to fuss with her about cooking and baking with lard back in the 60s, when it as you said, "fell out of favor", but my grandmother lived to see 94+ healthy years.
I am so with you! My mom is 97 and the doctor who told her to stop eating butter and lard died in his 50s! Traditional fats are the way to go! Love, Mary❤️🤗❤️
You are such a wonderful teacher and I am learning so much. As soon as we are again able to have a real kitchen to work in, you are my go-to gal for starting a better way of feeding my family. ❤️ I don't care for pumpkin pie, but my mother always used lard in her pie crust, until probably the 1970s, when I think lard started getting a bad rap. She made the BEST pie crusts! She is 85 and still baking, but I imagine she still uses shortening. I think, thanks to you Mary, I may go back to using lard in my pie crusts. This is the same recipe and method of pastry, pie baking my mother used and taught me and it allways turned out perfect, even now today. A classic English pastry, pie recipe and method that has been carried through the generations, and passed on to the pioneers before they set sail.
I never blind bake my pie crusts except for lemon meringue and never have a soggy bottom crust. This looks like an easy delicious recipe for pumpkin pie.

My mom would only use lard in her pie crusts. She refused to use crisco shortening. Her brand which I have had difficulty finding lately is Burns Lard. And she made the best pastry and pies

Hi sweet Mary, Little House was one of my favorites. My best friend’s mother gave presentations at our local elementary schools in California. She grew up South Dakota. I think she is 89 now. All of the kids loved her.

Oh Mary this was wonderful! I just love it when you link cooking and literature. Be careful because now I’m expecting you to cook with an important piece of literature in mind for every holiday! Lol! I believe in Farmer Boy it describes the Ingalls harvesting ice and bringing it to an ice house on their property which was covered with sawdust and maybe something else so they could have it almost year round. And the pie you made was the prettiest pumpkin pie I’ve ever seen! Wow! I like the tricks with the crust. Thank you
Back when lard was 'evil', I was told - very emphatically - by my dad that I wasn't allowed to substitute margarine/shortening for lard when I made the crust recipe for pasties. He didn't care if it was healthier or not; he wanted the crust I got using lard. The recipe is very similar to pie crust (and I've used it for both). Now I wouldn't even consider using anything else. Although I might consider adding a touch of butter if it's for pies.

I have been a huge fan of the 'Little House' books since the mid 1960's and have a copy of this cookbook as well as other manuscripts relating to LIW's life. The mammoth pumpkin pie was mentioned "Little Town on the Prairie" as having been baked for a 'New England Supper' sponsored by the De Smet Congregational Church Ladies' Aid Society on Thanksgiving of 1881.

When I lived in Montana, there was a farm up the road from us and we would get our milk fresh from the cow in a glass gallon jug. The cream would float on top and you could skim it off to make butter or whipped cream. If you shook the cream and milk up, you had the rich milk for drinking or cooking. It was marvelous!

Hello, Laura Ingalls Wilder booksI, well have been reading and rereading them for decades. This is yet another of your recipes I will try. In one book Ma Ingalls makes a mock “apple” pie with a green pumpkin. Charles thought Caroline was very clever making an “apple” pie when she did not have any apples. I have the Little House series and several related books, some with recipes and crafts. But I did not know about this cookbook so I will look for it now. I always wanted to visit her historic home in Mansfield, Missouri and have not made it. But I recently learned Almanzo’s childhood home in Malone, NY is open part of the year. That is a location I may be able to visit. Thank you for the informative videos, I am learning a great deal from them.
That book has the best apple and pumpkin pie recipes- just sweet and spicy enough!The recipe for Laura's wedding cake is delicious,too- the last time I made it,I used vanilla and almond extracts instead of lemon.I made it in two loaf pans,and just served it plain.

Hi Mary, my grandmother here in Vermont spooned off a certain amount of cream from the buckets of milk that my grandfather brought in after every milking, and she left a good amount of cream in the bucket, which got shaken up into about 3 or 4 cups of the rest of the milk. That was what she called "rich milk", and it was for cooking things that required more than just whole milk. We were not allowed to drink that rich milk, because it was prized for cooking custards, cream sauces, and anywhere she needed a bit more fatty milk product. Maybe like we have half and half or coffee cream. It isn't heavy cream. But I don't know if all farm wives did what my grandma did! I always found the whole process of dealing with the milk products from the 3 Jerseys they had fascinating. Butter, cream, cheese, raw milk, sometimes even icecream!🌻
I've always used my hands to add butter/lard You do a nice job explaining for new bakers.. We use guernsey & jersey dairy products You did pronounce guernsey correctly

The texture between fresh pumpkin puree and canned is totally different in flavor and texture....it takes hours to prepare fresh pumpkin puree....here in southern indiana if they didnt have sugar they would have used molasses or honey....

Hi Jill, yes, the author talks about that and I believe shares the recipe.you’re right! Pa thought it was apples and was wondering where Ma got the apples! Something interesting that I learned was that in Europe people slice raw pumpkin… But one that is ripe… And make a pumpkin pie that way. Hi Mary, I decided to make the pie crust this evening following your printed recipe and directions. I discovered that you do not mention the water at all in the ingredients list or in the instructions. Since I have made crust before, I realized that was missing and thankfully was able to go back to your video to see how much. Hope this helps someone else.
Mary, I am in search for what my grandma called Christmas rice pudding I didn't like it as a kid but I think I might, now that my taste buds have changed It had green and red cherries and I'm not sure what else may be raisins or just candied fruit cake fruit. Omgosh! That looks amazing! I have the little house cookbook. I bought it over the summer when I bought the little house boxed set. I missed reading it during my childhood but decided to buy a bunch of the classics over the summer for homeschool lessons when we got to the western expansion for American History. I ended up going with ancient worl history instead this year. I felt like if we were going to understand what the mindset of the early Americans were we would need to start at the beginning and really tell His-story. Normally for thanks giving I just buy ready made gluten free pie crusts. Except every year its a hit and miss and I usually have to go to several different stores to find them. Then they stick to the pie tin terribly. This year I got the crazy idea to make my own gluten free pie crusts. We harvested a total of 5 pumpkins from our garden this year. I know it sounds pretty pathetic but we spent so much time battling the bunnies that our garden got off to a late start by the time they stopped eating the sprouts. Still 5 pumpkins is better than none. So I'm going to be making my own pumpkin purée this year too. Eek! I hope I'm not in over my head. I'm also going to attempt a banana cream pie from scratch as well for my banana loving minion. Hopefully the rest of my kids will love it too. I'm going to watch your homemade pumpkin pie spice video so I can make my own. I'm at the point where I am buying spices in bulk now so I can make my own spice mixes. Especially after using your golden milk recipe to get rid of a migraine that nothing else would. Now I have a cup of golden milk for breakfast every day. Anyways thanks foe this amazing video tutorial, I have some shopping to do now. I need to get a few things that I don't have in my kitchen that would be very helpful to have on hand. I triple this recipe to make 9 crusts that way I don't have the mess every time I want to make a pie. So easy. Enjoy. This recipe was given to me about 40 plus years ago from my now deceased mother in law.

Little House on the Prairie was my favorite collection of books when I was a child! I’m 62 years old now but few years ago I bought the entire collection to have forever. I had no idea that there was a cookbook.

Hi Mary, from the UK. My Mam used lard for her savoury pastry - she was born 1927.
Butter and lard together for pastry is what I was taught at school.
My Dad found pastry made with lard only, was less rich and didn't give him indigestion.
Also she didn't bake blind. Instead she cooked on a tin plate placed on top of a baking sheet, to catch the heat of the oven on the underside of the pie and therefore cook the pastry - it was never soggy. Once it looked cooked through she placed it lower in the oven until she felt it was long enough to cook the base pastry. As it was a gas oven it was much cooler in the bottom of the oven.

I don't recall my grandmother (born in the early 1890s) ever pre-baking her pie crusts; and they were never soggy. She did use lard though (and dotted her apple filling with butter). I've forgotten the brand name of the company, but the lard came in a white and green box. My dad used to fuss with her about cooking and baking with lard back in the 60s, when it as you said, "fell out of favor", but my grandmother lived to see 94+ healthy years.
I am so with you! My mom is 97 and the doctor who told her to stop eating butter and lard died in his 50s! Traditional fats are the way to go! Love, Mary❤️🤗❤️

I don't care for pumpkin pie, but my mother always used lard in her pie crust, until probably the 1970s, when I think lard started getting a bad rap. She made the BEST pie crusts! She is 85 and still baking, but I imagine she still uses shortening. I think, thanks to you Mary, I may go back to using lard in my pie crusts. I'll let you know how things progress! This is the same recipe and method of pastry, pie baking my mother used and taught me and it allways turned out perfect, even now today. A classic English pastry, pie recipe and method that has been carried through the generations, and passed on to the pioneers before they set sail.

My mom would only use lard in her pie crusts. She refused to use crisco shortening. Her brand which I have had difficulty finding lately is Burns Lard. And she made the best pastry and pies

Oh Mary this was wonderful! I just love it when you link cooking and literature. Be careful because now I’m expecting you to cook with an important piece of literature in mind for every holiday! Lol! I believe in Farmer Boy it describes the Ingalls harvesting ice and bringing it to an ice house on their property which was covered with sawdust and maybe something else so they could have it almost year round. Back when lard was 'evil', I was told - very emphatically - by my dad that I wasn't allowed to substitute margarine/shortening for lard when I made the crust recipe for pasties. He didn't care if it was healthier or not; he wanted the crust I got using lard. The recipe is very similar to pie crust (and I've used it for both). Now I wouldn't even consider using anything else. Although I might consider adding a touch of butter if it's for pies.

I have been a huge fan of the 'Little House' books since the mid 1960's and have a copy of this cookbook as well as other manuscripts relating to LIW's life. The mammoth pumpkin pie was mentioned "Little Town on the Prairie" as having been baked for a 'New England Supper' sponsored by the De Smet Congregational Church Ladies' Aid Society on Thanksgiving of 1881.

When I lived in Montana, there was a farm up the road from us and we would get our milk fresh from the cow in a glass gallon jug. The cream would float on top and you could skim it off to make butter or whipped cream. If you shook the cream and milk up, you had the rich milk for drinking or cooking. It was marvelous!

Hello, Laura Ingalls Wilder booksI, well have been reading and rereading them for decades. This is yet another of your recipes I will try. In one book Ma Ingalls makes a mock “apple” pie with a green pumpkin. Charles thought Caroline was very clever making an “apple” pie when she did not have any apples. I have the Little House series and several related books, some with recipes and crafts. But I did not know about this cookbook so I will look for it now. I always wanted to visit her historic home in Mansfield, Missouri and have not made it. But I recently learned Almanzo’s childhood home in Malone, NY is open part of the year. That is a location I may be able to visit. Thank you for the informative videos, I am learning a great deal from them.
That book has the best apple and pumpkin pie recipes- just sweet and spicy enough!The recipe for Laura's wedding cake is delicious,too- the last time I made it,I used vanilla and almond extracts instead of lemon.I made it in two loaf pans,and just served it plain.

Hi Mary, my grandmother here in Vermont spooned off a certain amount of cream from the buckets of milk that my grandfather brought in after every milking, and she left a good amount of cream in the bucket, which got shaken up into about 3 or 4 cups of the rest of the milk. That was what she called "rich milk", and it was for cooking things that required more than just whole milk. We were not allowed to drink that rich milk, because it was prized for cooking custards, cream sauces, and anywhere she needed a bit more fatty milk product. Maybe like we have half and half or coffee cream. It isn't heavy cream. But I don't know if all farm wives did what my grandma did! I always found the whole process of dealing with the milk products from the 3 Jerseys they had fascinating. Butter, cream, cheese, raw milk, sometimes even icecream!🌻

The texture between fresh pumpkin puree and canned is totally different in flavor and texture....it takes hours to prepare fresh pumpkin puree....here in southern indiana if they didnt have sugar they would have used molasses or honey....

Hi Jill, yes, the author talks about that and I believe shares the recipe.you’re right! Pa thought it was apples and was wondering where Ma got the apples! Something interesting that I learned was that in Europe people slice raw pumpkin… But one that is ripe… And make a pumpkin pie that way. Mary, I am in search for what my grandma called Christmas rice pudding I didn't like it as a kid but I think I might, now that my taste buds have changed It had green and red cherries and I'm not sure what else may be raisins or just candied fruit cake fruit. Omgosh! That looks amazing! I have the little house cookbook. I bought it over the summer when I bought the little house boxed set. I missed reading it during my childhood but decided to buy a bunch of the classics over the summer for homeschool lessons when we got to the western expansion for American History. I ended up going with ancient worl history instead this year. I felt like if we were going to understand what the mindset of the early Americans were we would need to start at the beginning and really tell His-story. Normally for thanks giving I just buy ready made gluten free pie crusts. Except every year its a hit and miss and I usually have to go to several different stores to find them. Then they stick to the pie tin terribly. This year I got the crazy idea to make my own gluten free pie crusts. We harvested a total of 5 pumpkins from our garden this year. I know it sounds pretty pathetic but we spent so much time battling the bunnies that our garden got off to a late start by the time they stopped eating the sprouts. Still 5 pumpkins is better than none. So I'm going to be making my own pumpkin purée this year too. Eek! I hope I'm not in over my head. I'm also going to attempt a banana cream pie from scratch as well for my banana loving minion. Hopefully the rest of my kids will love it too. I'm going to watch your homemade pumpkin pie spice video so I can make my own. I'm at the point where I am buying spices in bulk now so I can make my own spice mixes. Especially after using your golden milk recipe to get rid of a migraine that nothing else would. Now I have a cup of golden milk for breakfast every day. Anyways thanks foe this amazing video tutorial, I have some shopping to do now. I need to get a few things that I don't have in my kitchen that would be very helpful to have on hand.
