- Ensaymada is a Filipino brioche, soft, sweet dough pastry covered with buttercream frosting then topped with lots of grated cheese.
Sofy Fluffy and Cheesy Ensaymada Ensaymada
Ingredients:
Yeast mixture:
2 and 1/4 tsp instant yeast
1/2 warm water
1 tbsp sugar
Wet Ingredients:
Yeast mixture
4 egg yolks
1 cup warm milk
6 tbsp unsalted butter ( add this after kneading the dough for 3-5 minutes)
Dry ingredients:
2.5 cups bread flour
1.5 all purpose flour
1/2 cup sugar
1/2 cup powdered milk
1 and 1/2 tsp salt
Knead the dough by stand mixer for 8-10 minutes or 15-20 minutes manually
Bake at 330F preheated oven for 16 minutes
Total yield: 19-20 at 60 grams each

Maraming salamat! Ginawa ko po ito kanina, masarap po at malambot! Nakalimutan ko lang po magspread ng butter bago budburan ng cheese sa loob. Yield: 22pcs. @ 50g/ea yung 6 or 7 PCs ginawa ko po cheese roll ang yummy din po😁

Hello! really love your recipe, ask ko lang if I can freeze the dough or put it the fridge to use later on? Would it be on first rise or when moulded?

you can put in the fridge to be used the next day after the first rise punch the dough then cover with cling wrap. i haven’t tried putting it in the freezer.

i used klim milk pede din nido or bear brand or any dry milk. you can you pure all purpose flour.
Is it ok if i add instant dry yeast directly to my flour/dry mixture? and omit half cup water & a tbsp sugar?any changes happen if doing this?Thanks
you may add the yeast directly to the flour mixture but dont omit the water. im also using instant yeast but i just prefer to bloom it first before adding it to the mixture.

instant yeast yun ginamit ko jan kaya derecho na sya sa flour

you may use po. just use half of what’s required then add/dilute half with water.
ano po pwede substitute sa powdered milk, wala kc powdered milk dito country na tinirtihan ko
you can skip the powdered milk if you dont have it.
What butter & cheese brand po ginamit nyo?
i used unsalted butter cabot brand bought
it from costco. for cheese i used eden.

Mas rich ang flavor pag egg yolks.

okay din naman po kung pure bread flour chewy pa rin. mas light lang ng konti kung mix with apf.

Tried it why super sticky po? Di naging elastic ang dough. I'm using dough mixer
there could be a lot of reasons why your dough was not elastic, it could be due to the humidity, hydration, types/brand of ingredients etc. so if you think you need to add more flour its your own call/judgment. Kaya madalas i knead it manually kc mas nafifeel ko yun dough alam ko na agad hawak ko pa lang inaadjust ko konti.
Thank you. Yup, i added flour and may improvement po. Turned out masarap and soft po yung dough. I'll give it another try, hope less struggle sa pag shape and knead next time. :)
