My father had a restaurant. He made lasagna the day before he served it. He used hard raw noodles. They were soft the next day the starch would hold it together. I have made lasagna that way ever since. (I make mine in 9x9 pans. We eat one & I freeze the other)
Love the idea of the pasta sheets!!! I've used cottage cheese and ricotta (not all at once--LOL). I prefer the ricotta, mixed with eggs and fresh parsley. .

Have you tried the "no cook" lasagna noodles? They are usually right next to the regular lasagna noodles. Although not in "sheets" like Paula used, they are so much more convenient than boiling regular lasagna noodles! 😋

I made this today for our untraditional Thanksgiving dinner and it was absolutely amazing and loved by everyone. The only modification was using smoked Gouda instead of Gruyère in the filling. The use of cream cheese takes it to another stratosphere of deliciousness!
You just have to use ricotta with beaten egg, grated cheese and chopped parsley in the layers with mozzarella and ground Italian sausage and crushed meatballs which are cooked in the sauce in each layer. Gotta cook real lasagna noodles to hold all these goodies. Yummmmmmmmmy. Love ya Paula 💝💝💝💝💝💝

You can put it together with the noodles right out of the box. I've done this for years with good results. Just make sure they are completely covered with sauce, and bake a few extra minutes 🙂
Made this recipe tonight but I noticed the website said 12oz of cottage cheese and she used 16 oz. I thought it looked like it was not as much. I guess I will see how it turns out. Pretty much followed to the letter but I used some Italian sausage in addition to ground beef. I also didn't have Paul Deen seasonings so I used seasoned salt instead. The sauce tasted quite good so I think that was ok. Now that I am re-watching, there are quite a few differences between website and the video here. I really think she should let it stand for 10 minutes and it would have been fine to edit the video if she didn't want the gap. I can't even imagine she could taste it straight out the oven. I could tell Eddy thought she was crazy when he refused to try the scalding hot lasagna.

Easy for everyone 👍 I use Italian cheese already shredded I know its best not to but not made in a block it has several different cheeses in it only WALMART great value brand makes it & I use cottage cheese I made lasagna for my sister & her kids my Mother was bed ridden using sausage couldn't find Italian flavord sausages so used regular & seasoned with Italian seasonings flacks my s I sister & kids & granddaughter loved it let it cook in slow cooker for 6 hrs.

I went to Publix today (30 miles away) to buy those Rama lasagna noodles because my daughter requested lasagna for her birthday supper tonight. When I got home from the grocery store, they had not put the noodles in with my groceries. I went through every bag several times thinking I had just overlooked them but NO!!! I had a box of the dried lasagna noodles so I boiled them. Oh well, maybe next time. I’m telling y’all this so y’all will make sure you have your noodles before you leave the store. And yes, we all make mistakes. Publix included. I am just happy they sell the refrigerator noodles. I loved all the comments and this recipe.
I've put it together with the dry noodles right out of the box for years with good results, just make sure the noodles are completely covered with sauce, may need to bake a few extra minutes....I usually bake for an hour covered. Then add the last topping of cheese and stick it back in, just long enough for the cheese to melt...saves a lot of wrestling with slippery noodles.
i use the no boil version in a box... i make mine in a square pan and it is 2 noodles per layer... comes out great every time. i also use sour cream instead of cottage cheese... sliced cheese is so easy too for layers and the top..

When I make spaghetti I always make a lot of extra sauce so I can make lasagna that we can either have later in the week or freeze it until we are ready for it.

Instead of leaving the grease in the meat, I drain it off and put it back in the pot on HIGH heat and let it char a bit. It makes the most wonderful flavor and the smell is fabulous too.

I live in the UK and we don't use cottage or ricotta cheese, or put eggs in it. The meat ragu and lasagne sheets are layered with bechamel sauce, and then on the top I just sprinkle grated parmesan cheese. This is more the Italian way of making it.

Bay leaves are just an amazing herb. It gives such flavor to things. I put them in my canned green beans from the garden along with olive oil, salt, and pepper.

Never used cream cheese but will try it. Good news for Michael, hearts of palm noodles by Heavenly Fan are a great substitute......just soak in milk, then rinse before adding to any dish. Gives you an extra vegetable
There are as many recipes for lasagna as there are for any popular dish. Lasagna was probably the first big thing I ever made and the recipe I used asked for cottage cheese so I get that. I draw the line on cheddar, swiss and cream, that's just to American for me. Mozzarella, parmesan, ricotta and perhaps fontina and provolone but the latter of those 2 I don't think I've ever used.
I never boil my lasagna noodles when I make lasagna. I put them in just like u do when u layer ur lasagna then cook it. They r just as tender when u eat is as if u cooked them beforehand.

Oh my goodness, I watched this video and as Jerry Clower used to say, “You flung a cravin’ on me!” I had to have some. My mom used to make this but her recipe said to cook the sauce for about 6 hours, which always made me avoid making it because I never had that kind of time. I was glad yours did not take that long. We just ate ours for supper and it was DEEEE-LICIOUS! My husband gave it two thumbs up! Thanks for sharing!

30+ years ago, I had a recipe that used dry, uncooked noodles with more of the tomato sauce. Then I no longer had that recipe, and I’ve never been able to cook it just right since then. So if someone has their own, pass it on ✨
I lived in South Africa for 40 odd years and we only got those dry lasagna sheets, about half the size that Paula is using. I made my sauce almost the same as Paula except I added some more water and basil, also tomato concentrate, which really gives a lovely intense tomato flavour. I layered the meat and pasta, but instead of cottage cheese, I used a white sauce, with grated cheddar cheese and about a teaspoon of mustard. I put layers of this on top of the pasta, then pasta, then meat again, then the white sauce on top of the meat. I topped with a fairly thick layer of grated cheese and baked it for around 45 min @ 350°F. I was given this recipe by a friend, who had an Italian mother, when I first got married in 1964. It was delicious and the pasta cooked beautifully with the extra liquid from the cheese sauce and the meat sauce. Perhaps this is similar to the recipe you were thinking of, with the dry pasta sheets.
1 jar of spaghetti sauce 6 dry lasagna noodles 16 oz ricotta 2 cups shredded mozzarella 1/2 cup Parmesan 1 egg 1/2 lb or so of frozen meatballs, thawed and smashed with a fork Preheat oven to 375F Spray 11x7 pan with cooking spray Combine ricotta, Parmesan and egg Spread 1 cup of spaghetti sauce on bottom of pan and sprinkle with 1/3 of the smashed meatballs Top with 3 dry lasagna noodles Spread with ricotta mixture Top with 1 cup mozzarella Drizzle with 1 cup spaghetti sauce and sprinkle 1/3 meatballs Top with last 3 lasagna noodles Spread remaining sauce and meatballs on top and cover with foil Bake for 50 minutes Uncover and top with remaining mozzarella Bake 10 more minutes, uncovered Tent with foil and let sit for 10-15 minutes so noodles have a chance to absorb any liquid I’ve never tried to freeze this, but I have put it together the night before and then cooked the next day.
I’m saddened. I was just at lady and sons I have to say it was beyond amazing I ate there twice. And I didn’t see the lasagna on the menu. I highly recommend it if you never eaten there. Go you won’t be disappointed.
You can put uncooked lasagna pasta in the pan, pit it all together and the pasta will cook in the sauce. It gives the pasta a nice flavor instead just a plain taste.

Paula you forgot to make your soffritto before adding your meat. However, that being said I made your recipe and did soffritto and cooked my sauce for 3 hours but added ground beef, ground pork, and ground lamb instead of just beef. I also substituted bachemel sauce instead of your sauce but everything else turned out great! Try it when you get a chance! Thanks Paula I love your recipes!

I went to Publix today (30 miles away) to buy those Rama lasagna noodles because my daughter requested lasagna for her birthday supper tonight. When I got home from the grocery store, they had not put the noodles in with my groceries. I went through every bag several times thinking I had just overlooked them but NO!!! I had a box of the dried lasagna noodles so I boiled them. Oh well, maybe next time. I’m telling y’all this so y’all will make sure you have your noodles before you leave the store. And yes, we all make mistakes. Publix included. I am just happy they sell the refrigerator noodles. I loved all the comments and this recipe.
I've put it together with the dry noodles right out of the box for years with good results, just make sure the noodles are completely covered with sauce, may need to bake a few extra minutes....I usually bake for an hour covered. Then add the last topping of cheese and stick it back in, just long enough for the cheese to melt...saves a lot of wrestling with slippery noodles.
i use the no boil version in a box... i make mine in a square pan and it is 2 noodles per layer... comes out great every time. i also use sour cream instead of cottage cheese... sliced cheese is so easy too for layers and the top..

When I make spaghetti I always make a lot of extra sauce so I can make lasagna that we can either have later in the week or freeze it until we are ready for it.

Instead of leaving the grease in the meat, I drain it off and put it back in the pot on HIGH heat and let it char a bit. It makes the most wonderful flavor and the smell is fabulous too.
I love the casualness and under-produced qualities of these videos, but why can't you wait for the cooked stuff to rest before tasting it? Over and over again I'm thinking, "No Paula! It's too hot to taste, let it rest!" It's not just a thought for this video only, but for all of them.

I live in the UK and we don't use cottage or ricotta cheese, or put eggs in it. The meat ragu and lasagne sheets are layered with bechamel sauce, and then on the top I just sprinkle grated parmesan cheese. This is more the Italian way of making it.
I can totally see bechamel sauce being used instead of ricotta in the UK. 👍🏻

Or is the recipe planned by the producers and they're throwing it on to her so she doesn't even know it? I don't think we should have to wonder those things.... Bay leaves are just an amazing herb. It gives such flavor to things. I put them in my canned green beans from the garden along with olive oil, salt, and pepper.

Never used cream cheese but will try it. Good news for Michael, hearts of palm noodles by Heavenly Fan are a great substitute......just soak in milk, then rinse before adding to any dish. Gives you an extra vegetable

There are as many recipes for lasagna as there are for any popular dish. Lasagna was probably the first big thing I ever made and the recipe I used asked for cottage cheese so I get that. I draw the line on cheddar, swiss and cream, that's just to American for me. Mozzarella, parmesan, ricotta and perhaps fontina and provolone but the latter of those 2 I don't think I've ever used.

I never boil my lasagna noodles when I make lasagna. I put them in just like u do when u layer ur lasagna then cook it. They r just as tender when u eat is as if u cooked them beforehand.

My secret ingredient for my lasagna is chili powder. It adds an amazing flavor to the sauce.

Oh my goodness, I watched this video and as Jerry Clower used to say, “You flung a cravin’ on me!” I had to have some. My mom used to make this but her recipe said to cook the sauce for about 6 hours, which always made me avoid making it because I never had that kind of time. I was glad yours did not take that long. We just ate ours for supper and it was DEEEE-LICIOUS! My husband gave it two thumbs up! Thanks for sharing!

30+ years ago, I had a recipe that used dry, uncooked noodles with more of the tomato sauce. Then I no longer had that recipe, and I’ve never been able to cook it just right since then. So if someone has their own, pass it on ✨
I lived in South Africa for 40 odd years and we only got those dry lasagna sheets, about half the size that Paula is using.
I made my sauce almost the same as Paula except
I added some more water and basil, also tomato concentrate, which really gives a lovely intense tomato flavour.
I layered the meat and pasta, but instead of cottage cheese, I used a white sauce, with grated cheddar cheese and about a teaspoon of mustard. I put layers of this on top of the pasta, then pasta, then meat again, then the white sauce on top of the meat. I topped with a fairly thick layer of grated cheese and baked it for around 45 min @ 350°F.
I was given this recipe by a friend, who had an Italian mother, when I first got married in 1964. It was delicious and the pasta cooked beautifully with the extra liquid from the cheese sauce and the meat sauce.
Perhaps this is similar to the recipe you were thinking of, with the dry pasta sheets.
1 jar of spaghetti sauce
6 dry lasagna noodles
16 oz ricotta
2 cups shredded mozzarella
1/2 cup Parmesan
1 egg
1/2 lb or so of frozen meatballs, thawed and smashed with a fork
Preheat oven to 375F
Spray 11x7 pan with cooking spray
Combine ricotta, Parmesan and egg
Spread 1 cup of spaghetti sauce on bottom of pan and sprinkle with 1/3 of the smashed meatballs
Top with 3 dry lasagna noodles
Spread with ricotta mixture
Top with 1 cup mozzarella
Drizzle with 1 cup spaghetti sauce and sprinkle 1/3 meatballs
Top with last 3 lasagna noodles
Spread remaining sauce and meatballs on top and cover with foil
Bake for 50 minutes
Uncover and top with remaining mozzarella
Bake 10 more minutes, uncovered
Tent with foil and let sit for 10-15 minutes so noodles have a chance to absorb any liquid
I’ve never tried to freeze this, but I have put it together the night before and then cooked the next day.

I’m saddened. I was just at lady and sons I have to say it was beyond amazing I ate there twice. And I didn’t see the lasagna on the menu. I highly recommend it if you never eaten there. Go you won’t be disappointed.
You can put uncooked lasagna pasta in the pan, pit it all together and the pasta will cook in the sauce. It gives the pasta a nice flavor instead just a plain taste.

Paula you forgot to make your soffritto before adding your meat. However, that being said I made your recipe and did soffritto and cooked my sauce for 3 hours but added ground beef, ground pork, and ground lamb instead of just beef. I also substituted bachemel sauce instead of your sauce but everything else turned out great! Try it when you get a chance! Thanks Paula I love your recipes!
