I love and appreciate all of your videos! You answer so many questions I've had since I was diagnosed as gluten intolerant. I have one though. Do you always use rice flour to dust on foods and your board?
Most of the time I used tapioca flour. Rice flour was used in this recipe, because the combination of rice flour and oil can layer the pieces of dough after cooking.

I don’t use metric for my cooking. Dour er put both measurements up so we here in the states can easily understand this n making it is easier for us. Many thanks

没有试过冷冻饺子,但我会冷冻一些土豆泥、番薯泥,用保鲜膜包成一大片,用时微波部分解冻(不要感觉变热了),掰下来用,用多少掰多少,用不完的又放回冷冻室。这个春饼皮可以做春卷,另一个视频里已经做了,用了橙色番薯泥。

I haven't tested other flours. You can try corn or sorghum flour.

Making gluten-free flour-based foods requires accurate weighing. Small changes in moisture can make the dough difficult to work with.
I've found a kitchen scale easy to work with. I actually prefer it to using measuring cups, now.
