    I steamed them. But my wrappers were not soft, i should have made them thinner. I'll try again next time. Thank you.

    thanks for all the nice recipes and ideas, Lucy! We made this, the jiaozi held together well in the pot, but the wrapping turned out to be chewy, a bit like mochi, but that's normal for gluten free food. Rolling them out was tough, but doable. My fam lived in China for a dozen years before a Celiac diagnosis, so we'll always compare these with the wheat jiaozi we remember, unfortunately. This recipe took over two hours from start to finish, so this may be the one time we make them. Still, we're happy we did it.

      The critical part of this recipe is to mix tapioca starch and rice flour very evenly before pouring boiled water in. A lady posted a comment in Chinese mentioning the same issue 3 weeks ago. After reviewing the process, she re-did it following my instructions and got successful results! The dough was amazing and handled easily, just like wheat flour.

      I added potato starch and lard, I also noticed the boiling time was different.

    Hello Lucy, greetings from Costa Rica. A while ago I have been watching some of your videos and they are very good, I love your recipes. My husband has a condition called psoriasis, so he can't eat anything that contains dairy, gluten, or nightshade fruits and vegetables. We love oriental foods, we love dumplings, bao buns, dim sun etc etc, but I have the problem that I can't use all the ingredients mentioned above. so i would like to know if i can replace the mashed potatoes with something else like sweet potato, since potato belongs to the nightshade group of vegetables. I would appreciate your help. Many blessings to you.

      Yes, you can use the sweet potato that I mentioned in the video and my cookbook to replace regular potatoes.

    Can we use corn starch instead of cooking the potato and making starch from it? Just wondering. I love how creative you are with making gf dough. Thank you.

      The purpose of using mashed potatoes is to improve the hard texture of rice flour . I don't think corn starch can replace it. You can try buckwheat flour.

    您好:今日嘗試了您的配方製作餃子,在麵皮的部份不知道出了什麼問題,在擀的過程一直破掉,好不容易包好,蒸出來的餃子放太近會黏在一起,且餃子皮呈半透明,請問這樣是正常的嗎?謝謝

      你好!放了土豆泥吗?米粉木薯粉加沸水前混合均匀了没?完全按照视频做不会有问题,面团很好擀,土豆要用粉质的。

      老師您好,感謝您的回覆,土豆泥及米粉木薯粉混合均勻的部分都有做到,但粉質的土豆這個我沒注意到品種,若是沒有粉質土豆,可否用土豆澱粉替代呢?另外因為我這邊買到的木薯粉是非常細的顆粒,上面標示為勾芡用,這個是否也會影響?謝謝您

      @@fiffyyang2613 土豆泥可以不用,木薯淀粉一定要是粉状的。每100g粉加70g沸水,一定要是刚煮沸的水,如果面团过干就适当补点水,太湿就补点米粉。

    Lucy老師! 真不敢相信現在才看到你的頻道,我試了這個配方的水餃實在是太好吃了,我兒子有嚴重的gluten allergy,很多時候都不知道整什麼給他吃才好,自己也嘗試了很多不一樣的配方,不過你這個配方真的是太好太好吃了,謝謝你,真的,衷心的感謝你分享給我們。我嘗試了水餃跟鍋貼, 水餃的味道跟麵粉非常相似,可是煎鍋貼的時候吃起來就會有黏黏的感覺。不知道是為什麼?

      谢谢你的反馈!做煎饺可以这样做,在平底锅里放少量油,待温度到达150℃时放入饺子,中火盖盖煎3分钟,此时饺子底部微黄,加水到锅里焖熟饺子,水要分几次加,一次不能多,总共煎10分钟,火可以调低一点,这样煎出来的饺子很干爽。

      我的书里有各种无麸质面食的做法,全是用的最简单的原料,味道跟小麦面食非常接近,值得收藏。

    今天试了 但是不知哪里出错, 面团一点也擀不开, 跟一个淀粉面团一样, 完全不能用, 求教, 为什么你的面团看起来会特别smooth , 又能擀成皮。 我的就跟淀粉和面一样 ,完全不能用

      你用了土豆泥吗?米粉和木薯粉混合均匀了没有?开水的量对了没有?这个面团很好揉的。

      @@lucymeishinobinderglutenfree 我又试了一下 成功,是我没有把木薯粉和米粉混合均匀。 这个面团太棒了, 我煮了一部分 蒸了一部分 , 我女儿说好吃。面皮又软又劲道, 包的时候跟普通面粉手感一样, 煮的更好吃一些。 太感谢了。
