Same is with wheat for example. Young seeds are sweet, softer and different taste and texture. In series, they actually show very green plant is used ('milk' stage), which is different than the one used in this video (ripe and dry). That's why the green color stayed in series (even though they might have cleaned all the outer shell, the green chlorophyll probably stayed in the seed mixture and carried over the green color)

To be fair, soy sauce is totally something they can make with their level of Technology, it's basically just wheat and soybeans in water and fermented. Mirin is a little bit more difficult because it requires distillation, but senku probably could have done it if you wanted to, distillation isn't super difficult and if you found wild rice or something he can make a fairly close approximation.

I see now that the real miracle of Senku was not the lucky coincidences he experienced but rather that he was able to consistently and quickly produce tons of this ramen.
I think the problem in making the noodles is blending the parsley with added water, a solution would be to use a mortar and pestle for the parsley without adding water. Then, you can add one to two egg yolks as needed. That might help make the noodles without adding extra ingredients. Another thing I think we could do is keep some extra ground foxtail millet to replace the flour you used on the cutting board while shaping the dough.
I've actually tried this myself! although my results were quite different, Instead of simmering the noodles in water I used a 1:2 ratio chicken to fish brine for the noodles after thickening the noodles and letting them rest, Although I left out the little beef-bone delicacy you have there; the noodles tasted better after letting them set. P.s the " parsley ice cream" actually worked better in this case
The more I watch people make ramen, the more I become convinced that the essence of the ramen is in the soup and the noodles are basically just garnish.
Remember: in the anime the primitive people that never got ramen loved it but Senku that already knew ramen hated it. I find interesting that Senku pronounces Lamen like we do in Brazil

This is the most faithful recreation I've seen. I wonder if Mochi-Awan foxtail millet would yield a different result as it purports to have a more "glutinous", chewy texture. Though that may be wishful thinking. Also, I wonder if the noodles could be made without flour if they were made more similarly to how one would make rice noodles from rice flour. Though that would still necessitate the use of starch.
The best advice I have for trying new things like that millet Ramen and not think it's gross is to just remind yourself that it's not the same thing as what you are used to and enjoy it for what it is rather than compare it's quality to what it isn't

The reason the dough wasn't working is that they weren't using the same foxtail millet- like not the same at all. The kind you can get at a store in NA and Europe is a totally different species from what they used, and not only is it a totally different species, but it is a different species that developed from a different *variety* of foxtail millet than the stuff in stores.

I might suggest a slight adjustment. As far as the binder to make the fox tail millet more workable, you could use nagaimo puree, which is a very strong binder that's used in Okonomiyaki. And food coloring for the green color without adding much extra liquid for the noodles.
If you don't want your noodles to stick to each other, cover the surface with rice flour. Rice flour absorbs all the moisture and the very thin layer on the noodles will get washed away when you boil it. I don't know if it's better than corn flour, since I never compared them. But it seems like bakers would make rice flour their first choice to prevent sticking. For us in Asia, we just use rice flour because that's what we have plenty of.
