      I am Greek and only today I reasided that this is a Greek thing

      Just ask for ice coffee, you may get a freddo that way. Ice coffee is quite populair but may not be made the same way though. I know we had it like this on the coffee menu in the restaurants. Served as latte on the rocks in an Irish coffee glas, with or wthout whipped cream. It was very populair (and delicious).

    • @i.8885

      Greek here. The reason you mix the espresso with the ice before puring it is to cool it down quickly so it will stay cold once it goes in the glass. If you poured it straight on ice it would melt it and then become watery. Also it is to make some foam and for appearance.

    Ok quick question, how do you stop the milk from de-foaming? It happens to my drink 3 minutes after frothing. I use whole milk, the fat content is not less than 3%.
    *_Edit_** :*
    Thank you for the support, it’s has been a lovely six month might I add.
    I was told by a staff member of an international Italian cafe is that the secret for achieving a stable foam is to use UHT/ pasteurized 0% milk at 2~5°C (35~42°F). This milk doesn’t have fat that could break the microfoam’s surface tension, they also add a small amount of sugar to help if stabilize even more.
    I tried making cold microfoam with my Nespresso barista milk frother and it turned out good.

      I think the brand name is Artemis, or Johny. You can find a similar product here: www.oleonidas.gr/en/product/artemis/drink-mixer-mix-2010-abs. But you don't really need an expensive professional machine like that. You can use any mini milk frother that's out there, like the NanoFoamer. Those with the stainless steel whisk at the bottom produce the best results.

    • @i.8885
      @i.8885 Рік тому

      The more you mix it, the more foam it's going to have, but most cafés don't make it as foamy as him. They try to mix it just enough for it to get cold without melting the ice too much

      You're right. They do actually do that in most cafeterias, just like with Freddo Espresso. I'm guessing the guy in the video didn't mix it to avoid creating unnecessary brown foam, which would stain the milk foam, so he ends up with a nice, clean white foam, making a great contrast of black and white with the espresso. Personally, I solve this by gently shaking the coffee with ice instead of mixing it aggressively using the mixer, and then I strain all the brown foam that's left.

    • @samanthapark8029
      @samanthapark8029 4 роки тому +9

      The heat of the espresso shot slowly melts the ice and the mixer incorperates air. Anytime your incorperate air into liquid it becomes fluffy/foamy (think about whipping eggwhites). The addition of ice cools the espresso for an iced beverage, but also waters it down slightly which is why you only and a few cubes.
