I’ve been a bar tender for years and my only experience in the world of coffee so far is making shots of espresso for espresso martinis. Tomorrow, however, I start training as a barista for the first time and I’m pretty excited so I wanted to get out there and see if I could learn anything online first. I have argued so many times with people that flat whites and lattes are different in terms of foam amount and always people disagree and say its just the cup type ( glass vs cup w/handle) but I feel VINDICATED now thankyou lol.
I get this when I make a cappuccino. Getting people say it's too much foam. I think what some people really want is a latte with chocolate powder half the time 🤣🤣🤣 I'm not sure that too many people understand the foam ratio

When I worked as a barista years ago the owner wanted us to do all cappuccinos as dry caps so that customers knew the difference between caps and lattes. Tbf it wasn't a specialty coffee place and our prices were low so most of our customers expected the drinks like that.
At the end of the day, you need to keep the boss and the customers happy. If you can have an opinion and make changes, great, but don't loose your job trying.
Why barista out here seems so cool and when I go to a cafe is like a job u do it to save some money and very annoying…. I worked myself as a barista and was pretty cool .. I smelled all day like coffee and I love it … is so amazing to work with coffee..is like a total different world… in love with coffee
We call the "piccolo" in my hometown Trieste, Italy, "capo in b" (capo = cappuccino, in b = bicchiere (in a glass)). I think it is the only place in Italy where a "cappuccino" is one shot with milk in a small cup. In the rest of italy, a cappuccino is one shot with milk in a medium cup.

A flat white has 2 shots in it and a bit larger on the serving size , prolly like a 20 ml increase in the glass. Other than that, well done sir... Also would be nice to distinhuish dry and wet cappuccino
We don’t do a dry or wet cappuccino here. Can you explain to me what that is? I agree that lattes tend to have more milk, around 30ml, served in a glass instead of cup. However that goes out the window in takeaway cups anyway. We also use the same amount of coffee in the cup for a latte to cappuccino here. Thanks for the comments. Jimmy
@@ArtistiCoffeeRoasters Dry = more foam in a cappuccino Wet = Less foam in a cappuccino Be sure to keep foam and milk ratios consistent throughout the pour. Most people prefer dry where I'm from so it's pretty simple, when making a wet it can get complicated. Sometimes I feel like the wet is just a mini latte (piccolo with less foam) instead of a cappuccino.

Great video, the time saved with specific devices is very evident and lends to your consistency. I ditched dairy milk years ago for oat milk and I find dairy drinks taste strange and very thick to me now.

If I could pitch in, I'd like to see the best way of making a decent or semi- decent espresso shot by using pressurized basket on a cheap, commercial machine. We are not all blessed with decently payed jobs and some of us live in a 3rd world countries, where barista equipment cost a fortune... Much appreciated.

I've been a barista for the last 9 years and over the years, I have heard some unusual requests. The worst one is a 20oz cappuccino (I blame Starbucks for that one...I blame them for a lot of things lol) We have a lady that always orders a 20oz cappuccino. She not only wants it bone dry but also wants it breve. Because of the high-fat content in the ½&½, it makes it extremely difficult to get that much foam for a 20oz. We have to steam at least 3 pitchers just to get enough to fill the cup. I feel that some people just like to make coffee more complicated than it should be. I do have a question though. We have another regular lady who is extremely picky and wants absolutely no foam. She complains every time and it's gotten to the point where she thinks the crema froth is foam and complains about that. It has gotten so bad, that we've talked about just microwaving her milk. Do you have any tips for "no foam" lattes? Great video btw!
Yes the no foam, take a moment to clarify with her a out Crema, if she drinks instant coffee she may be a little confused. Once she can see the Crema in a glass of espresso, if she says I don’t want that, then you need to politely explain it’s not possible. 👍🏻
@@ArtistiCoffeeRoasters Yes, we have tried to explain it to her. A few weeks ago, one of my baristas made her coffee and was extra careful not to get any foam in it. My barista said all she saw in the cup, was the froth from the crema. But the lady complained about the "foam", demanded a spoon and proceeded to spoon out what my barista says was just coffee. Short of letting her shots die and microwaving her milk, I don't know what else we can do, other than explain to her again the difference. Although I do like the way you referred to the cream as froth, rather than foam. Maybe if we try explaining it using that analogy instead, she would get it. Thank you for replying! :)
I'd say, let her move on to another cafe. I've had such bad coffee at places like Starbucks, maybe she just needs to go to a place where they don't do coffee well but give her what she wants. That's usually the case. She clearly isn't a coffee connoisseur.

Great, please introduce yourself. There are heaps of small cafes that you can start in. You might be aiming a little high and yes, you’ll need more experience. Coffee training courses like ours help too.
Questions on the long black: 1. The LB is supposed to be a lungo or an americano? 2. The guy who works for the coffee company we get the coffee beans from, came to show us the drinks and how to make them. For the americano, he told us, it's better to put a bit of cold water inside te hot water, so that when the coffee touches the water, it doesn't get that "burnt", kinda sour and overly bitter flavour. So, not BURNING hot water, but just hot water (not straight from the coffee machine). 3. And also, for the lungo, he tolds us (and almost every coffee shop is told to do that), to choose the setting/button on the coffee machine with the single long shot of espresso. So, actually, the coffee flows on the cup for a bit longer. What's your opinion on these? Great video! Thanks a lot!
It sounds like he is asking you to do a ristretto shot and then a little longer with the 2nd button. That’s fine. The cold water is not correct, well the Esprssso hitting the hot water will not make it sour or bitter, it’s already extracted so it can’t then be effected again by heat. But we would use cool water to chill a bit LB as it will then be ready to drink quicker, has Esprssso cools it then brings out the sweetness and full flavours of coffee. If it’s super hot the sour, acidity tastes are more prominent because you can only sip it at the front of your tongue not your whole mouth

Very good video for but I found the hardest part is the timing you know when the milk is ready and how to make the different milk for various types of coffee with the froth

Thank you for this informative video! I just bought a small coffee machine and I’m probably gonna practice with this before I start my coffee business. I have a question though, what if I don’t have a coffee grinder? How can I temporarily strategize? Hehe
So, I actually just opened a [food stand/chill out green area] in a city of Uganda and I have been serving moka pot coffees for 3 months. I've been wanting to improve the format but I thought an espresso machine in this part of the world was a bad idea. So I bought a good ol' french press and have been practicing some latte art with its frothed milk. This was very helpful to get some ideas for the menu aswell, thanks! And sorry for the rant, I'm just too excited rn.

In my experience, pulling ristretto gives a very different taste to espresso (because coffee is less extracted increasing acidity) meaning that if a customer orders a medium latte (double riz) it will taste different to a large (double espresso). How does your cafe work around this?
Yes your correct these do taste different, we look to try and make the best coffee based around the specific cup size, it’s near impossible to have varying sizes taste the same. So we just look to make each size the best possible
70ml espresso cup. 90ml piccolo cup. 170ml tulip for long black. 190ml cup for flat white & cap. 220ml for latte, HC & mocha. This is what we use and recommend but everyone has their own opinions on milk to coffee ratios.

Me too I am starting a job next week and I used to do baristas but haven’t done it for a long time so it helped calm my nerves I was so scared as I said I have experience and I have but just havent done it for ages so by watching this really helped me too

I work at a coffee shop and this taught me more than my work did hahahah - our only difference is that our Long Macs are in glasses!

In a previous cafe I worked in we would serve long blacks in double walled glasses, which looked quite nice

When I worked as a barista years ago the owner wanted us to do all cappuccinos as dry caps so that customers knew the difference between caps and lattes. Tbf it wasn't a specialty coffee place and our prices were low so most of our customers expected the drinks like that.
At the end of the day, you need to keep the boss and the customers happy. If you can have an opinion and make changes, great, but don't loose your job trying.
I start a trial shift tomorrow for a cafe and can do everything but use the machine properly thx this rlly helped !

Why barista out here seems so cool and when I go to a cafe is like a job u do it to save some money and very annoying…. I worked myself as a barista and was pretty cool .. I smelled all day like coffee and I love it … is so amazing to work with coffee..is like a total different world… in love with coffee
We call the "piccolo" in my hometown Trieste, Italy, "capo in b" (capo = cappuccino, in b = bicchiere (in a glass)). I think it is the only place in Italy where a "cappuccino" is one shot with milk in a small cup. In the rest of italy, a cappuccino is one shot with milk in a medium cup.

A flat white has 2 shots in it and a bit larger on the serving size , prolly like a 20 ml increase in the glass. Other than that, well done sir... Also would be nice to distinhuish dry and wet cappuccino
We don’t do a dry or wet cappuccino here. Can you explain to me what that is?
I agree that lattes tend to have more milk, around 30ml, served in a glass instead of cup. However that goes out the window in takeaway cups anyway. We also use the same amount of coffee in the cup for a latte to cappuccino here.

Be sure to keep foam and milk ratios consistent throughout the pour. Most people prefer dry where I'm from so it's pretty simple, when making a wet it can get complicated. Sometimes I feel like the wet is just a mini latte (piccolo with less foam) instead of a cappuccino.

Great video, the time saved with specific devices is very evident and lends to your consistency. I ditched dairy milk years ago for oat milk and I find dairy drinks taste strange and very thick to me now.

If I could pitch in, I'd like to see the best way of making a decent or semi- decent espresso shot by using pressurized basket on a cheap, commercial machine. We are not all blessed with decently payed jobs and some of us live in a 3rd world countries, where barista equipment cost a fortune... Much appreciated.

I've been a barista for the last 9 years and over the years, I have heard some unusual requests. The worst one is a 20oz cappuccino (I blame Starbucks for that one...I blame them for a lot of things lol) We have a lady that always orders a 20oz cappuccino. She not only wants it bone dry but also wants it breve. Because of the high-fat content in the ½&½, it makes it extremely difficult to get that much foam for a 20oz. We have to steam at least 3 pitchers just to get enough to fill the cup. I feel that some people just like to make coffee more complicated than it should be. I do have a question though. We have another regular lady who is extremely picky and wants absolutely no foam. She complains every time and it's gotten to the point where she thinks the crema froth is foam and complains about that. It has gotten so bad, that we've talked about just microwaving her milk. Do you have any tips for "no foam" lattes? Great video btw!
Yes the no foam, take a moment to clarify with her a out Crema, if she drinks instant coffee she may be a little confused. Once she can see the Crema in a glass of espresso, if she says I don’t want that, then you need to politely explain it’s not possible. 👍🏻
@@ArtistiCoffeeRoasters Yes, we have tried to explain it to her. A few weeks ago, one of my baristas made her coffee and was extra careful not to get any foam in it. My barista said all she saw in the cup, was the froth from the crema. But the lady complained about the "foam", demanded a spoon and proceeded to spoon out what my barista says was just coffee. Short of letting her shots die and microwaving her milk, I don't know what else we can do, other than explain to her again the difference. Although I do like the way you referred to the cream as froth, rather than foam. Maybe if we try explaining it using that analogy instead, she would get it. Thank you for replying! :)

I'd say, let her move on to another cafe. I've had such bad coffee at places like Starbucks, maybe she just needs to go to a place where they don't do coffee well but give her what she wants. That's usually the case. She clearly isn't a coffee connoisseur.

Questions on the long black:
1. The LB is supposed to be a lungo or an americano?
2. The guy who works for the coffee company we get the coffee beans from, came to show us the drinks and how to make them. For the americano, he told us, it's better to put a bit of cold water inside te hot water, so that when the coffee touches the water, it doesn't get that "burnt", kinda sour and overly bitter flavour. So, not BURNING hot water, but just hot water (not straight from the coffee machine).
3. And also, for the lungo, he tolds us (and almost every coffee shop is told to do that), to choose the setting/button on the coffee machine with the single long shot of espresso. So, actually, the coffee flows on the cup for a bit longer.
What's your opinion on these?

It sounds like he is asking you to do a ristretto shot and then a little longer with the 2nd button. That’s fine. The cold water is not correct, well the Esprssso hitting the hot water will not make it sour or bitter, it’s already extracted so it can’t then be effected again by heat. But we would use cool water to chill a bit LB as it will then be ready to drink quicker, has Esprssso cools it then brings out the sweetness and full flavours of coffee. If it’s super hot the sour, acidity tastes are more prominent because you can only sip it at the front of your tongue not your whole mouth

So, I actually just opened a [food stand/chill out green area] in a city of Uganda and I have been serving moka pot coffees for 3 months. I've been wanting to improve the format but I thought an espresso machine in this part of the world was a bad idea. So I bought a good ol' french press and have been practicing some latte art with its frothed milk. This was very helpful to get some ideas for the menu aswell, thanks! And sorry for the rant, I'm just too excited rn.

In my experience, pulling ristretto gives a very different taste to espresso (because coffee is less extracted increasing acidity) meaning that if a customer orders a medium latte (double riz) it will taste different to a large (double espresso). How does your cafe work around this?
Yes your correct these do taste different, we look to try and make the best coffee based around the specific cup size, it’s near impossible to have varying sizes taste the same. So we just look to make each size the best possible

70ml espresso cup.
90ml piccolo cup.
170ml tulip for long black.
190ml cup for flat white & cap.
220ml for latte, HC & mocha.
This is what we use and recommend but everyone has their own opinions on milk to coffee ratios.

where do you guys get your glass latte/piccolo cups from?
They are the Duralex Picardie range. 90ml for piccolo, 220ml for latte.
