I have been looking for steamed white rice cake and cannot find one which is soft and chewy texture. Please let me know what is your texture

老師請問個竹篩尺寸是多少?若用不銹鋼碟蒸要預先將個碟蒸熱才把粉漿倒進去嗎?用不同器皿去蒸時間是否一樣?謝謝老師!
竹篩直徑是29cm,高3.5cm。可以改用大平底不銹鋼碟,裏面搽少少生油,蒸25分鐘。
可5可唔5放泡打粉?
將部份膨脹劑改為泡打粉,可以減少酵母的用量,因為酵母量多會令色澤偏黃、發酵味較濃和有酸味。
