CHICKEN PICCATA for an easy 20-min dinner recipe!

- Chicken piccata is an Italian-American favorite and one of the easiest weeknight dinner recipes to make at home. Thinly sliced juicy chicken breasts ("scallopine") are dredged in flour, seared with a golden crust, then simmered in a lemon butter sauce with a touch of capers and parsley. It's a beautiful and tasty dinner that comes together quickly!
In other words, chicken piccata is the perfect fusion of Italian cooking in America. Traditionally, piccata is an Italian dish consisting of thinly breaded veal (or other proteins) with a lemon butter wine sauce. But today we're using chicken, and I'd say we've perfected this dish that's dotted with garlic, capers, and fresh parsley. The more herbs and garlic, the better, right?

You didn't mention that this prep is lovely with veal or pork as well. There are sources for humanely raised veal.
What is a substitute for capers?
Maybe in the future you can look into having your own version of hellofresh

In addition to not flipping the chicken early, you need to let the stainless steel pan get hot. Not sort of warm. Hot. The heat causes the metal to expand slightly which fills in minuscule fissures and pores in the metal. Then add your fat (butter, oil, lard, etc.). Let that get warm and THEN add your protein. With practice, this will become nearly a non-stick pan experience every time.

Very nice, simple dish. Perfect for a warm summer evening, accompanied by some salad and baguette. A tip for cutting: If you have a cold cut or bread slicer, you can use it to cut perfect slices of any thickness if you freeze the chicken breasts beforehand. Also works with "carpaccio". About the corkscrew: It was once immortalized as a murder tool in an episode of "Columbo".👍👍

...I have made this for years, and it's a favourite... good instructions, and would add, that if you set that chicken in the refrigerator ( on the plate ) for10 minutes, or in the freezer for 3-5 minutes,it will "seal" the coating and I always do this,no matter what it is that's been dredged.:)

I make mine very similar but I actually take lemon slices and cut them in to very small wedges and cook that with the chicken in the sauce. Adds a nice texture and extra bit of lemon.

Such a good recipe. I have the same all clad pot but the chicken didn’t cook beautifully as urs. I did put the chicken in when the pan was hot

There is a wild mushroom called 'chicken of the woods' (Laetiporus sulphureus*) which mimics the flavor and texture of chicken to perfection. If ever you can lay hands on it, do try it with this recipe.
*There are a number of videos about it, and more information if you google it. You'll want to make friends in the foraging/mycological community for this one!

You sure can! It will probably be on the lighter side though as most of the sauce is for the chicken.
