In addition to not flipping the chicken early, you need to let the stainless steel pan get hot. Not sort of warm. Hot. The heat causes the metal to expand slightly which fills in minuscule fissures and pores in the metal. Then add your fat (butter, oil, lard, etc.). Let that get warm and THEN add your protein. With practice, this will become nearly a non-stick pan experience every time.

We put the chicken piccata on a bed of spaghetti and soaked up all of that beautiful, tasty sauce. It was delish!💖 my husband says its one of the best dishes I've ever made!
...I have made this for years, and it's a favourite... good instructions, and would add, that if you set that chicken in the refrigerator ( on the plate ) for10 minutes, or in the freezer for 3-5 minutes,it will "seal" the coating and I always do this,no matter what it is that's been dredged.:)

The parmesean cheese with the flour is genuius. The recipe I initially followed had me freeze the breasts for 15 min which made cutting easier. Also, I accidentally added wayyyy to much pepper into my sauce, so I fixed it with a bit of cream cheese
What can be used as a substitute for butter? I do not eat butter at all. Interesting choice on the arrowroot powder - does this also spike up glycemic index like wheat or nah? Thanks.

There is a wild mushroom called 'chicken of the woods' (Laetiporus sulphureus*) which mimics the flavor and texture of chicken to perfection. If ever you can lay hands on it, do try it with this recipe. *There are a number of videos about it, and more information if you google it. You'll want to make friends in the foraging/mycological community for this one!
